This spicy Korean cucumber salad has a refreshing crunch in every bite, coated with a delicious sauce that&#039;s garlicky, savory, and tangy with a touch of sweetness. This quick &amp; easy side dish comes together in a single bowl and makes for the perfect dish to add to your dinner table. 

Easy Korean Cucumber Salad (Oi Muchim)

(260 grams) medium cucumber (or 3 small cucumbers)

onion

garlic (minced)

soy sauce

tbsp rice vinegar (or white vinegar)

tbsp Gochugaru (or to taste)

tbsp sugar

tbsp sesame oil

sesame seeds

Thinly slice the cucumber to about 1/4 inch thickness.

Add the cucumber to a large mixing bowl, followed by the rest of the ingredients.

Toss well with your hands or a pair of tongs until the cucumbers are evenly coated and the sauce is absorbed, for about 2-3 minutes. Serve immediately and enjoy!

Chilled soba noodle salad with marinated cucumbers, sesame and avocado

milliliters (6 tsp) sugar

tsp tamari or soy sauce

avocado, peeled, seed removed, diced

sesame oil

spring onions, finely sliced

Using a mandoline or knife, thinly slice the cucumbers into rounds. Place them in a bowl and sprinkle over 1/2 teaspoon of salt. Using your hands, lightly massage the salt into cucumbers and leave to sit for 5 minutes.

Bring a large pot of salted water to the boil. While you wait for it to boil, add ice cubes to a bowl of water (this is called an ice bath). 

When the water is boiling,add the soba noodles and cook according to packet instructions, about 6-7 minutes. Drain the noodles, and refresh under cold running water. Drop them into the ice bath and leave them to chill while you prepare the remainder of the salad.

Prepare your seasoning sauce by combining the rice vinegar, sugar, 1/2 teaspoon of salt and tamari. Stir until the sugar has dissolved. Squeeze the cucumbers to extract as much liquid as possible. Discard the liquid. Place the cucumbers in a bowl and pour over the seasoning sauce. Add the sesame seeds and stir to combine. Set aside to marinate for 5 minutes.

Drain the noodles and place them into a large serving plate or bowl. Add the cucumbers along with the seasoning sauce, avocado, sesame oil and, using tongs or your hands, toss well to combine. To serve, top with spring onions and scatter with more sesame seeds.

In a separate small bowl, combine rice vinegar, apple cider vinegar. Stir to combine. 

Pour vinegar mixture over cucumbers. Add sesame seeds, dill, salt and red pepper flakes (if using); toss to combine.

Let marinate a minimum of 30 minutes or up to 2-3 days in the refrigerator.

Lightly peel cucumber, leaving some green streaks for visual interest. Slice the cucumber and onion as thinly as possible with a mandoline slicer (recommended) or kitchen knife.

Add cucumber and onion to a medium bowl and sprinkle with salt. Toss to combine. Let marinate for about 20 minutes, tossing occasionally, and then drain any accumulated liquid (do not rinse).

Pour vinegar and water over cucumbers and add sugar. Stir to combine. You can enjoy in as little as 5-10 minutes, but let it marinate an additional hour for best results.

Store refrigerated, submerged in vinegar mixture, for up to a week. Enjoy as a side dish or on a sandwich!

Just like my Mom and Grandma used to make. I used apple cider vinegar and it added a bit more tang. The sugar is the secret ingredient!
