Marinated Cheese and Olives

sharp cheddar cheese, cubed

Havarti cheese, cubed

bell pepper, sliced

black olives

green olives

olive oil

white distilled vinegar

Italian herbs

Add all of the ingredients to a mixing...

Add all of the ingredients to a mixing bowl and stir well to coat.

Cover and refrigerate for 2 hours. Let set...

Cover and refrigerate for 2 hours. Let set at room temperature for 15 minutes before serving.

Marinated olives are a stunning appetizer or side! Flavored with garlic and lemon, they're a great finger food for cheese boards or parties.

Classic Marinated Olives

kosher salt

Drain the olives. Peel and thinly slice the garlic. Cut 4 strips from the lemon peel, then squeeze out 1 tablespoon of the juice.

In a 1 quart jar or covered container, combine all ingredients and shake gently to combine.

Marinate for 2 to 4 hours at room temperature, shaking occasionally. Serve immediately, garnishing with additional rosemary sprigs if desired. Stores refrigerated for several weeks; allow to come to room temperature prior to serving.

A super easy marinated olive recipe that makes an excellent appetizer. And if you have leftovers, stir it into pasta - game changer.

Marinated Olives and Feta

olives (lightly crushed)

lemon (zested)

extra virgin olive oil

shallot (sliced)

thyme

red pepper flakes

feta (broken into large pieces (about 10 ounces))

Place the olives in a bowl with the lemon zest.

In a small saucepan over medium high heat, combine the olive oil, whole garlic cloves, crushed red pepper flakes, sliced shallot and thyme. Cook until the garlic starts to sizzle, about 1-2 minutes, then reduce heat to low and continue to cook for 20 minutes. Remove pan from heat, add the crushed olives and lemon zest and let steep for 1 hour. Pour oil over the feta at least 20 minutes before serving. (can be combined to marinate for up to 48 hours)

Serve with grilled thinly sliced bread for an appetizer

Drain the olives in a colander and rinse in cool water. Set aside to drain.

In a medium skillet, add the oil, smashed garlic cloves, half of the fresh herbs (reserve the rest for packing with the olives), lemon zest, red chile flakes, and black peppercorns. Bring to medium heat and cook for 3-4 minutes, swirling the herbs in the oil, until the garlic is fragrant and the herbs sizzle. Remove from the heat, season with the kosher salt, and set aside.

In a quart jar with a fitted lid, layer the olives with the garlic, and cooked and reserved fresh herbs. Pour the flavored oil over the olives. Cover and refrigerate for at least 30 minutes. The olives taste better the longer they sit in the flavored oil, up to 3 days before serving.

Easy Marinated Olives &amp; Cheese Ring Appetizer

white wine vinegar

tsp sugar ((omit if low-carb))

tsp celery salt

tsp basil

tsp red chili flakes

oz cream cheese block

mozzarella cheese block

oz Monterey Jack cheese block

oz pitted Kalamata olives, drained (Pearls® Specialties)

oz garlic stuffed green olives (Pearls® Specialties)

Mix&nbsp;white wine vinegar,&nbsp;olive oil,&nbsp;sugar,&nbsp;celery salt,&nbsp;basil, and&nbsp;red chili flakes in a small bowl. Set aside.

Cut cream cheese block in half lengthwise. Cut into 1/4 inch slices.

Cut mozzarella and Monterey Jack cheese into 1/4 inch slices.

On a platter, arrange cheese slices upright in a ring with one slice of mozzarella, one slice of Monterey Jack, and one slice of cream cheese until you form a complete circle.

Mix drained olives together and add to the center of the circle.

Drizzle dressing mix over the entire dish making sure to cover olives and cheese.

Cover and marinated one hour or more. Serve.

I prepared this for a fall gathering yesterday and it is super easy to  make and delicious. I could not find Pearl olives in my local stores. But the other brand worked just fine. Every olive and cheese was consumed.

I love olives.  I love cheese so this is a winner to me!  I would happily sit down on Friday night with this, some crusty bread and be one happy lady! XO

MARINATED OLIVES & CHEESE RING APPETIZER

These Marinated Olives and Feta are a delicious appetizer or a great addition to any salad or pasta! They're salty, savory, tangy, and a little spicy.

tsp crushed red pepper flakes

kalamata olives

feta cheese, washed, drained, (use block feta)

Add olive oil, red wine vinegar, dried thyme, dried oregano, dried parsley, and red pepper flakes to a medium bowl.

Whisk everything together until well-mixed and emulsified.

Crumble the feta into bite-sized chunks on top.

Mix everything together gently to coat with the marinade, careful not to break the feta apart too much.

Enjoy immediately or store in an airtight container in the fridge for up to 3-4 days.

These are delicious just as an appetizer on bread or with crackers but I most often use them in salads to add a little more flavor than plain feta would!

whole milk ricotta cheese

baguette, sliced

Cut vegetables, like cucumbers, red bell peppers, and/or radishes

Preheat oven

Preheat the oven to 400°F and line a baking sheet with parchment paper.

Marinate olives

In a large jar, place the Castelvetrano and kalamata olives, lemon and orange zest, lemon and orange juice, The Spice House Tuscan Harvest, and parsley. Stir to combine, then add olive oil to cover.

Whip ricotta

In a food processor, place the ricotta, lemon juice, olive oil, The Spice House Tuscan Harvest, and salt. Process until combined.

Toast baguette

Spread the baguette slices on the baking sheet. Drizzle with olive oil and sprinkle with The Spice House Tuscan Harvest. Bake for 10 to 12 minutes, or until golden and toasted.

Assemble and serve

To serve, spread the ricotta on a plate and spoon the olives on top. Top with more lemon zest, orange zest, The Spice House Tuscan Harvest, parsley, and The Spice House Aleppo Peppers. Season to taste and serve with the crostini and vegetables.
