The vegan version of creamy tomato pasta recipe that took the internet by storm

Marry Me Pasta

oz whole wheat linguine

olive oil (optional)

onion

garlic (minced)

cherry tomatoes

Italian seasoning

tsp red chili flakes

salt

¼ tsp black pepper

yeast

tomato paste

vegetable broth

coconut milk

vegan cheese (shredded, optional)

pasta water

Cook pasta according to package directions, reserving at least 1/2 cup of pasta water before draining.

Add the onion to a pan with 1 to 2 tablespoons of olive oil or water, until translucent, approximately 2 minutes.

Add the garlic, spices and tomato paste, and stir until fragrant, approximately 2 minutes. Add the cherry tomatoes and vegetable broth. Cover, and allow to cook for 3 minutes, until the tomatoes have bursted. 

Add the coconut milk and vegan cheese if using. Stir until a creamy sauce is formed. 

Add cooked pasta and fresh basil. Stir until the pasta is coated in the sauce, and add the reserved pasta water if needed. Serve immediately.

Slow Cooker Marry Me Chicken

Chicken Breasts, skinless (sliced into cutlets (or 10 chicken thighs))

Chicken Stock ((360 milliliters))

Heavy Cream ((240 milliliters))

Sun-Dried Tomatoes ((50 grams))

tbsp Tomato Puree

tbsp All Purpose Flour ((Plain flour))

tsp Black Pepper

tsp Oregano

Paprika

½ tsp Chilli Powder ((optional))

Salt ((to taste))

Basil (chopped for garnish)

Parmesan Cheese (grated, for garnish)

Cherry tomatoes (for garnish)

Pasta (to serve)

Prepare the Tomato-Flour Paste

In a small bowl, whisk together the tomato puree and flour until you achieve a smooth consistency.

Combine Ingredients in Slow Cooker

Pour the chicken stock, heavy cream, black pepper, oregano, paprika, and chili powder into the slow cooker. Add the tomato-flour paste you prepared earlier. Whisk everything together until well combined.

Add Garlic and Sun-Dried Tomatoes

Gently stir in the sliced garlic and diced sun-dried tomatoes.

Add the Chicken

Place the chicken breast cutlets into the slow cooker, ensuring they are fully submerged in the sauce. Optional: For added flavour, you can sear the chicken in a pan until golden brown before adding it to the slow cooker.

Cook

Cover the slow cooker and set it to High for 2-3 hours or Low for 4-6 hours.

Garnish

Once the chicken is cooked through and tender, garnish it with grated Parmesan cheese, freshly chopped basil, and sliced cherry tomatoes. Adjust seasoning if needed.

Serve and Enjoy

Plate the chicken over your choice of pasta or boiled potatoes. Pair with a glass of wine and share with someone special!

Cook the pasta according to package instructions. Drain the pasta and set aside while you prepare the chicken and sauce.

Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes until the chicken is no longer pink and cooked through.

Transfer the cooked chicken to a plate, and set it aside while you make the sauce.

Chicken Pasta

Return to the same skillet, then add the butter. Once it is melted, sauté the garlic for 30 seconds until it&#39;s fragrant. Add in the flour and stir to make a paste.

Whisk in the chicken broth, heavy cream, and parmesan cheese.

Stir in the drained sun-dried tomatoes, paprika, and Italian seasoning. Season with more salt and pepper if needed.

Simmer the sauce for a few minutes for it to thicken.

Return the chicken to the skillet along with the cooked pasta. Stir to coat the chicken and pasta in the sauce.

Garnish with chopped basil leaves and additional parmesan cheese.

How can anyone just make a single batch of this? I triple the recipe each time! It’s well-received at every potluck. I’ve tried adding asparagus for an extra crunch—yum! My go-to for large groups.

Just made this for dinner tonight and it was awesome! Everyone loved it and it was super easy. I forgot to add the flour after the butter melted so I just added it slowly to the other liquid ingredients and it turned out fine. I did let it simmer awhile to thicken. Will definitely make this again.

This was absolutely delicious. Flavors all blended together perfectly. I did use full fat Greek yogurt in place of heavy cream, and turned out perfect. Thank you so much for sharing this recipe. A family favorite for sure.

Just made this dish and I have to say it is now My Favorite Pasta Dish!  My picky husband even loved it.  The sauce exploded with flavor and it was so easy to make.  I did use left over rotisserie chicken breasts, and I added fresh spinach to the sauce before adding the pasta.  I didn't have fresh basil.  I used my favorite spices.  I think the sun-dried tomatoes add so much flavor to the cream sauce.  Thank you Ms Alyssa for sharing this Keeper/Winner!  I won't want to go out for Italian Pasta any longer bc this recipe is The Best!!!

Sooooo goood. First time leaving a review for a recipe. Definitely deserved. Me personally I like a little less sun dried tomatoes. So only a quarter cup. But goodness I ate so much and got so full after a long day of intense work. I couldn’t stop lol. Had air fried garlic toast as a side paired perfectly!

Used rotisserie chicken and was delicious! Sundried tomatoes gives this a really great flavor , and I don’t really like them . Thank you - was easy too!

I think I loved it more because I used Rotini pasta ( I really don't like the texture of penne) I also used boneless/skinless thighs (its what I had, besides they have more flavor than breasts) it was really delicious! Oh and I used "slap ya mama" seasoning on my chicken

Marry Me Shrimp Pasta

extra large shrimp (peeled/deveined)

tbsp smoked paprika

tsp black pepper

tbsp sun-dried tomato oil (from the sun-dried tomato jar)

tbsp Cento tomato paste

Cento sun-dried tomatoes (diced)

sweet smoked paprika

tsp salt

tbsp Gluten free 1:1 flour

spinach

tbsp butter

tbsp minced garlic

parmesan cheese

basil (chopped for garnish)

oz gluten free penne

Boil

Boil the pasta according to the package directions for al dente while you cook the shrimp.

Season

Toss the shrimp with the paprika, Italian seasoning, salt, and pepper in a medium bowl until they&#39;re evenly coated.

Heat the sun-dried tomato oil in a large skillet over medium heat. Then, cook the shrimp for two minutes on both sides until they are pink, opaque, and C-shaped. If they&#39;re O-shaped, you&#39;ve cooked them too long.

Cool

For the Shrimp

Saute

Melt the butter in the same pan over medium-low heat. Then, add the garlic, onion, sun-dried tomatoes, tomato paste, Italian seasoning, paprika, salt, and dried basil. Cook the mixture for about two minutes until fragrant.

Make the Sauce

Add the flour to the aromatics and stir well. Then, add the broth, heavy cream, and spinach. Stir and cook until the sauce thickens and the spinach starts to wilt - about 5 minutes. Then, add the parmesan cheese and stir until melted.

Carefully mix the pasta into the sauce. Then, add the shrimp and gently stir again. Garnish with fresh basil, and enjoy.

Oregano

Thyme

Reduced-Fat Red Pesto

Single Cream

Spaghetti

Basil

Parmesan

Salt

Black Pepper

Finely dice the onion, crush the garlic cloves and slice the sundried tomatoes into bite-sized pieces. 

Pour a glug of oil from the sundried tomato jar into a large pan over a medium heat. Add the meatballs and fry for about 10 mins or until the meatballs are nicely browned and cooked through. Transfer the meatballs to a plate and set aside.

Meanwhile, set a large saucepan of boiling water over a high heat then add the stock cube and stir to dissolve.

Return the empty meatball pan to the hob and reduce the heat to low-medium. Add another splash of the sundried tomato oil then add the onion and garlic and fry for about 7 mins until softened.

Drop your spaghetti into the boiling water and cook following packet instructions.

Add the sundried tomatoes, oregano, thyme, pesto, salt and pepper to the pan with the onion and garlic. Toss the meatballs back in and stir to coat then pour in the cream and a couple of ladles of pasta water. Stir and bring to a gentle simmer.

Drain the cooked spaghetti then add to the pan with the sauce, along with ½ the chopped basil and a splash of the pasta cooking water. Mix well to combine.

To serve, divide the spaghetti between bowls and top with the remaining basil and some grated Parmesan.
