Indian Masala Chai Recipe (Spiced Milk Tea)

Water

Milk (Whole milk

Ginger (freshly grated (about 3 ounces))

tsp Tea leaves

Sugar

Green Cardamom (Elaichi)

Cloves (Laung)

Cinnamon (Dalchini)

Black Peppercorns

Heat water in a pot on medium-high heat.

While water is heating, crush spices using a mortar and pestle or a coffee/spice grinder. Add the crushed spices to the water. (The spices can be replaced with 1/2 tsp of prepared Chai Masala)

Grate the ginger directly into the pot of water. Reduce heat to medium and bring the water to a boil.

Add the tea leaves and let it boil for a minute. You can also add sugar at this time or add it in the cup when serving.

Add milk and stir it in.

Bring the tea to a boil. The tea can overflow easily, so keep a close eye.

Once the tea comes to a boil. Turn off the gas and cover with a lid for one minute.

Strain the tea in a cup and enjoy!

Indian masala chai is one of the most enjoyed beverages in India. Masala meaning a mixture of spices is simmered along with milk and tea leaves or powder. Then it is lightly sweetened with sugar. This recipe will give you masala tea that you would get in any standard Indian restaurant.

green cardamoms ((5 for stronger flavor) (elaichi))

Pour water to a pot and add the tea. Bring this to a boil.

Meanwhile crush cloves, cardamom &amp; cinnamon stick in a hand pestle or spice blender to a powder. 

Add it to boiling water along with crushed ginger.

Boil for about 2 to 3 minutes on a low to medium flame. 

When the flavors are infused well pour milk and bring it to a boil.

Then simmer until the tea darkens &amp; turns thick for about 5 mins. I usually simmer the entire tea until it reduces approximately to 1 ¾ cups.

The flavor of milk should vanish when the masala tea is ready. Filter to serving cups.

Serve masala chai hot or warm with any breakfast, snack or biscuits.

Method 1 - How to make instant masala chai

Clean all the spices and add to a blender jar. Powder finely.

Store it in an airtight glass jar.

Use about ½ tsp or more to make 2 servings of tea. For stronger tea you can use about ¾ tsp.

In a mortar, crush the ginger and transfer it to a plate. Set it aside.

Next, add mint leaves and crushed them slightly, and transfer it to a plate. Set it aside.

With the mortar and pestle crush the green cardamoms, cinnamon sticks, peppercorns, and cloves. (You can also use the coffee/spice grinder for this.)

Chai masala is ready, keep it aside.

How to make Chai Masala:

Heat 2.5 cups water in a saucepan.

Add crushed ginger, crushed mint and let it boil for 1 minute.

Add the crushed chai masala and stir well.

Let it boil for 2-3 minutes. Keep stirring occasionally to infuse the masala flavors.

Now add tea leaves (or tea youtube_video_cover_images) and let it boil over medium heat for 4-5 minutes.

Add in the 2.5 cups milk and let it boil for 5 minutes over medium-low heat or until the tea has a nice rich color.

After that add sugar and stir well.

Let it boil for 2-3 minutes over high heat.

Strain the tea into cups/mugs. Serve piping hot masala chai with cookies, pakora, or any of your favorite snacks.

Lightly crush cardamom pods, whole cloves, star anise and peppercorns, and place in a small pot with 1 cup of water. Add ginger, cinnamon and black tea.  I like to muddle the ginger a bit right in the pot.

Bring to a boil. Turn off heat (don&#8217;t boil the tea, it will get bitter) and let it steep at least 10 minutes&#8230;. or for several hours. The longer, the more flavor!

Add your choice of milk. Bring to a simmer once more, turn off the heat.

Stir in your choice of sweetener, taste, adding more sweetener to taste. If it tastes bitter, you need more sweetener.  Strain into a chai glass or mug.

Authentic Masala Chai

Enjoy a quick cup of masala chai or a chai latte using homemade Chai Concentrate. The tea is brewed in small batches and infused with fragrant chai spices.

tsp black tea leaves

In a mortar and pestle, crush the knob of ginger into chunks to release the juices and expose more surface area. Add the cinnamon sticks, star anise, cloves, roses, cardamom pods, black peppercorns, and ginger into the mortar and pestle and lightly crush them so they release their oils. Lastly, use a microplane to grate a bit of nutmeg.

Transfer all of the spices from the mortar and pestle to a medium sized pot. On medium heat, dry roast the spices for a minute, or until they&#39;re fragrant.

Pour the water in with the spices and bring it to a light rolling boil for 3-5 minutes, or until fragrant.

At this point, add in the black tea leaves and mix really well. Simmer the spices with the black tea for 5 minutes. Be careful not to boil it for too long, otherwise it will be very bitter.

Remove the pot from heat and pour in the sugar. Stir until the sugar has fully dissolved.

Allow the spices and tea to steep in the hot water for at least 15 minutes. Then, strain the chai concentrate into a sanitized pitcher with a lid. Store in the fridge for up to five days.

Use a 1:1 ratio of concentrate to milk. The concentrate can be served steamed, heated, or chilled.

There&#039;s nothing as good as the perfect cup of Masala Chai whether it&#039;s in the middle of summer or for cozying up in the winter. Black tea is simmered with warming and fragrant spices and is best served with Parle-G biscuits or cake rusk for dipping.

Add the spices to a mortar and crush them lightly into smaller pieces.

In a small pot, bring the water to a boil on medium to high heat and add the black tea and spices. Simmer for two minutes and bring the heat down to medium and pour in the milk.

Method one - Double Boil:Bring the chai to a boil, so that it starts aerating and bubbling to the top. Remove from heat until the bubbles come down. Bring it up again to a boil and remove from heat a second time until the bubbles go back down.Method two - Pulling ChaiAlternatively, use a small cup with a handle to take some of the chai and &quot;pull&quot; it. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times.

Simmer the chai until desired consistency and color. Remove from heat.

Strain the chai with a sieve into glasses or mugs. Mix in the sugar and serve.

Heat a small/medium (1-2 qt) saucepan over high heat. Add water, cinnamon stick, cloves, cardamom pods, black peppercorns, fennel seeds (if using), and ginger. (See Note 2) Bring to a boil and add the tea bags or leaves.

Reduce the heat to medium/medium-low and simmer gently for 7-10 minutes, depending on how strong you’d like the tea and spices. It will turn a deep burgundy color and reduce slightly.

Add milk and sugar and stir to mix. Raise the heat to high. Once the milk comes to a boil, lower the heat to medium and allow it to simmer for another 5 minutes.

When ready to serve, raise the heat to high and allow it to come to a rolling boil for a minute or so, depending on how &#39;cooked&#39; you like the milk. (See Note 3) If you’d like, use a ladle to aerate the chai to deepen the flavor and make it creamier.

Pour into cups through a strainer and add more sweetener, if needed.

How to prepare Masala Chai

Masala Chai or Indian Masala Tea is an Indian spiced tea made with whole spices, water, black tea and milk. A perfect drink for your breakfast or evening time.

Take cinnamon, green cardamoms, cloves and peeled ginger in a mortar-pestle.

Crush coarsely and set aside.

In a sauce pan or a small pan with a handle, heat water.

Let the water come to a boil and then add the crushed spices.

Boil the spices along with the water for 2 to 3 minutes.

Add sugar as per taste. I usually add 4 teaspoons of raw sugar. You can add more or less.

Now add 2 teaspoons of assam tea powder. Boil for a minute. This boiling time depends on how strong you want your tea. If you prefer a strong intense tea, then boil for a few more minutes.

Add milk. After adding milk boil for 2 to 3 minutes.

If using chilled milk, then boil with tea for 2 to 3 minutes. If using hot milk, then add the milk and switch off the heat.

Pour the tea through a tea strainer directly in the cup.

Serve masala chai hot with some Indian snacks or cookies or biscuits.

Add tea leaves. As soon as the water boils, add the tea leaves to it. Let the tea continue to boil for another minute so the tea infuses thoroughly and becomes quite dark.

Add the creamer. Turn off the heat as soon as you add the creamer. Place the lid over the tea to let the tea and the spices continue to infuse for another 3-4 minutes.

To make the masala chai we start by brewing the tea powder in water, milk and spices. Let this come to a boil and reduce the heat. Allow to simmer for a few minutes until you can smell the chai. Take off the heat and allow to cool.

Preheat the oven to 180℃, line a 9 inch round with baking paper and set aside. In a large mixing bowl add the melted butter/browned butter, sugar, grated ginger and mix with a whisk.

Add the eggs and mix until smooth. Add the chai (either strained or with the tea powder - I like to add half the tea powder mixture into the cake) and whisk until smooth.

Add the flour, almond flour, baking powder, baking soda, salt and stir together. Pour the cake batter into the prepared tin and bake for 38-40 mins.
