This Creamy Mashed Cauliflower recipe will make you forget that mashed potatoes even exist! A comforting, buttery and garlicky mashed cauliflower recipe that is VERY easy to make and it’s done in just 15 minutes! It&#x27;s low in carbs but BIG on flavor.

Creamy Mashed Cauliflower

cauliflower florets, (about 1 head cauliflower)

butter, (divided)

garlic, (roughly chopped)

buttermilk

parmesan cheese

salt

pepper

chopped fresh parsley, (for garnish)

IF ROASTING THE CAULIFLOWER: Preheat oven to 450˚F. Toss the cauliflower florets with a tablespoon of olive oil; spread on a rimmed baking sheet and roast for 20 minutes, or until tender.

IF BOILING THE CAULIFLOWER: Fill a large frying pan with 1/4 inch water; add 1/2 teaspoon salt and bring to a boil. Add cauliflower florets; cover the pan and cook for 10 minutes, or until tender and soft. DRAIN WELL and set aside for 3 minutes to steam-dry.

In a large frying pan (use the same pan that you used for the cauliflower, just wipe it down) melt 1/2 tablespoon butter.

Add garlic and cook for 30 seconds, or until fragrant. Remove from heat.

Stir steamed (or roasted) cauliflower florets to the pan with the garlic.

Add remaining butter and buttermilk.

Grab the immersion blender and blend to a desired consistency.

Stir in parmesan cheese, Italian seasoning, salt and pepper. Taste for seasonings and adjust accordingly. Add more butter or buttermilk to make it creamier.

Transfer to a serving bowl and garnish with parsley.

Serve.

Cheesy, garlicky, flavor loaded mashed cauliflower prepared in the Instant Pot! This is the perfect, most delicious low-carb swap for mashed potatoes!

Instant Pot Loaded Mashed Cauliflower

water, (you can also use chicken broth)

garlic

butter

sour cream

dry mustard powder, ((optional))

chili powder, (or to taste (optional))

salt and fresh ground pepper, (to taste)

fat free shredded cheddar cheese

Parmesan cheese

green onions, (sliced, for garnish)

Preheat oven to 375F.

Pour broth in the insert of your Instant Pot.

Place steamer basket inside the Instant Pot.

Transfer prepared cauliflower to the basket inside the Instant Pot.

Close the lid and set the valve to sealing.

Set on manual setting and cook on high pressure for 3 minutes.

Use the quick release function to release the pressure.

Drain out all of the liquid and transfer the cauliflower to a food processor or blender.

Add garlic, butter, sour cream, dry mustard, chili powder, salt, and pepper to the blender; process until blended and creamy. I recommend using the pulse function because you have more control over how creamy or chunky you want your mashed cauliflower.

Transfer the cauliflower mixture to a baking dish.

Top with cheeses and prepared bacon; bake for 5 minutes, or until cheese is melted.

Sprinkle green onions over the top.

This mashed cauliflower recipe is a delicious alternative to mashed potatoes. It&#x27;d be great for Thanksgiving, but note that it serves 3 to 4. If you&#x27;re feeding a crowd, scale the recipe up accordingly. Depending on the size of your food processor, you&#x27;ll likely need to work in batches.

Garlic Mashed Cauliflower

cauliflower (2 pounds, chopped)

butter butter

Dijon mustard

sea salt

black pepper

Chives (for garnish, optional)

Bring a large pot of salted water to a boil. Add the cauliflower and boil until knife-tender, about 10 minutes. Drain and transfer to a food processor.

Puree the cauliflower with the butter, garlic, mustard, salt, and pepper. Season to taste and garnish with chives, if desired.

Mashed cauliflower is a healthy, low-carb alternative to mashed potatoes. It&#39;s similarly creamy, and the sauteed garlic and fresh herbs in this recipe make it seriously tasty. Watch the video below to see how I make it in my kitchen!

Mashed Cauliflower

cauliflower

extra virgin olive oil

kosher salt and black pepper (to taste)

Prep the cauliflower. Trim the leaves off the cauliflower and cut off the florets. Rinse the florets under water.

Steam the cauliflower. Heat 1 inch of water in a pot on medium heat and bring to a boil. Place a steamer insert in the pot and add the cauliflower florets. Steam for 6 to 8 minutes.

Cook the garlic. While the cauliflower is steaming, heat the olive oil in a small pan on medium heat. Add the minced garlic and cook for 30 seconds, then remove from the heat.

Add everything to the pot. Remove the steamed cauliflower from the pot, drain the water, and add the cauliflower back in. Then, add the olive oil, garlic, chopped herbs, and any optional ingredients.

Mash. Use a potato masher or stick blender to mash the cauliflower.

Serve. Season with salt and pepper, garnish with fresh herbs and serve immediately.
