Banh mi (Vietnamese baguette)

½ carrot, peeled into ribbons

¼ cucumber, peeled into ribbons

½ red onion,

½ lime

½ tsp sweet chilli sauce

tsp fish sauce

Put the carrot, cucumber and red onion in a mixing bowl. Add the lime juice, sweet chilli sauce, fish sauce and a good pinch of salt and grind of black pepper. Toss well to coat the vegetables, then chill for 15 minutes, tossing halfway through.

Meanwhile, cut the baguette almost all the way through, then  pull out and discard (or keep for breadcrumbs) most of the spongy layer of bread inside. Spread one side of the baguette with the mayonnaise and the other side  with char siu/hoisin sauce.

Squeeze the marinade from the veg (discard the marinade) and pile the veg into the baguette. Thinly slice the meat (leave prawns whole if using those), then arrange on top and sprinkle over the coriander. Wrap and chill until ready to eat.

Quick & spicy nasi goreng

Heat the oil in a wok over a high heat. Add the onion and cook for 3-4 mins until softened and slightly caramelised. Add the garlic and stir for 1 min.

Toss in the carrot and cabbage, then cook for 1-2 mins. Add the rice and stir to warm through. Pour in the fish sauce, soy sauce and some seasoning. Make a well in the centre of the wok and crack in the egg. Fry until the white is nearly set.

Serve the rice in a large bowl, topped with the fried egg and drizzled with chilli sauce.

In your microwavable mug, mix together the egg, milk, syrup, cinnamon and salt until all combined

Cut off the sides of the bread (crusts) and slice your bread into square bit sized pieces

Add the bread to the mug and press them down so they are submerged within the liquid and the bread soaks in the egg mixture

Add the chocolate chips to the mug and give a little stir to incorporate them in the mixture

Sprinkle the optional cinnamon sugar on top

Microwave for a total of 2 minutes stopping every 30 seconds (count to ten and start again - this is so it doesn't explode in your microwave)

Let cool for about 1-2 minutes

Sprinkle powdered sugar on top

Cook the noodles with the sachet of flavouring provided (or use stock instead of the sachet, if you have it). Add the spring onions and pak choi for the final min.

Meanwhile, simmer the egg for 6 mins from boiling, run it under cold water to stop it cooking, then peel it. Toast the sesame seeds in a frying pan.

Tip the noodles and greens into a deep bowl, halve the boiled egg and place on top. Sprinkle with sesame seeds, then drizzle with the sauce or sesame oil provided with the noodles, and chilli sauce, if using.

Heat the oil in a large frying pan over a medium heat. Cut the tortilla in half, then into strips about 1cm wide. Fry in the pan, turning once, for 3-4 minutes until golden and crisp. Set aside on kitchen paper to drain.

Make a salsa by mixing the red peppers, sweetcorn, onion, most of the coriander and the lime juice in a bowl, then season with salt and pepper. In a separate small bowl, stir the lime zest and paprika into the soured cream.

Empty the pouch of pulses into a serving bowl and mix in half the salsa and half the tortilla strips. Top with the sliced avocado and the rest of the salsa and tortilla strips, then drizzle over the spiced soured cream and scatter with the remaining coriander.

Heat oven to 220C/200C fan/ gas 6. Prick the potato all over with a fork and bake for 1 hr until it is golden outside and soft inside. Mix 1 tsp olive oil with the garlic salt. Cut a deep cross into the top of the jacket, drizzle the garlic oil into the cross and rub it all over the outside. Return to the oven and bake for 15 mins more until the edges are golden and crispy.

Meanwhile, crumble the feta into a bowl, add the yogurt and whisk together until creamy. Stir in the red pepper with a good grind of black pepper and spoon the whipped feta into the jacket. Sprinkle with the sumac, drizzle over the remaining 1 tsp olive oil and scatter a few torn basil leaves on top, if you like.

Slice the green part of the green onions and ham and set aside.

Crack 4 eggs into a mixing bowl, add the salt, and mix together.

Use a pastry brush to brush oil in a thin layer onto a frying pan. Turn it up to medium-high heat.

Put a whole rice wrapper directly into the pan, followed by the green onions and chopped ham.

Carefully spoon in the egg mixture to cover the rice paper.

Use a pastry brush to brush oil on the sides of the frying pan.

After 2 minutes, it is ready to be served.

Creamy beans & greens on toast

Step 1

Heat the oil in a frying pan, then add the
garlic and spinach (or other greens). Sauté over
a medium heat until wilted. Mix in the beans. 

Step 2

Stir in the cacio e pepe paste so the beans
and greens are well coated. Heat for
1-2 minutes, until piping hot throughout

Step 3

Toast the bread, drizzle with olive oil, then
pile the creamy beans and greens on top.
Squeeze a little lemon juice over the dish, then
season. Sprinkle with the pul biber or fresh chilli
(if using) to finish.

Kimchi Tofu Soup (Meal-for-one Recipe)

Use a pair of scissors (or a knife) to cut 150g kimchi into bite-size pieces. Set aside.

Cut 200g soft tofu into 2 inch cubes. Cut a small wedge of onion. Chop off the seafood mushrooms&#39; roots and discard. Peel and slice a clove of garlic. Chop some green onions, fresh peppers, and cilantros, set aside.

Preparation

In a small stone bowl (or saucepan), heat sesame oil over medium high heat for 1 minute.

Add onion and garlic, stir with chopsticks for about 1 minute until fragrant. Add kimchi, stir for 1 minute until hot.

Reduce the heat to medium low, add soybean paste, stir until well mixed. Add tofu and mushrooms, pour in chicken stock or water to immerse the tofu.

Sprinkle Korean chili powder over the soup. Gently stir until the color of the soup looks even. Turn heat to medium high to bring the soup to a boil.

Turn heat to medium high to bring the soup to a boil. Then reduce the heat to medium low and simmer the stew for 5 minutes. Add an egg to the stew, simmer for about 3 minutes until the egg is soft boiled (runny yolk, set white).

Garnish the kimchi tofu stew with chopped green onions, cilantros, and fresh peppers.
