SAUTE THE VEGGIES: In a large saute pan or pot, heat the oil on medium high heat and saute the onions and green pepper together in the oil for 3-5 minutes. They should be soft and fragrant, but not charred or dry. Add TVP, jalapeno, and garlic. Sautee another 2-3 minutes, stirring often to combine well.

SIMMER IT: Add the blended tomato mixture and 3 cups of hot water to the TVP. Stir well. Then, turn the heat to medium-low and allow the mixture to simmer for about 15-20 minutes uncovered, stirring often to avoid burning. You can add more water if needed, but be sure not to let it get too “soupy”. You want a nice thick crumbly texture.

SERVE/STORE: Serve on a big roll with a side of potato wedges or BBQ potato chips! Store leftover Sloppy Joe mix in an air-tight container in the fridge for 5-7 days or the freezer for up to 8 weeks. 

Healthy Sloppy Joes - this classic messy sandwich gets a meatless makeover and a Mexican twist. Serve &#x27;em up with tortilla chips and salsa on the side and wash &#x27;em down with a pitcher of margaritas. It&#x27;s fiesta time!

Healthy Sloppy Joes

salsa ((or 1 1/4 cups), your favorite)

limes

coconut sugar (or brown sugar)

chili powder

cumin

smoked paprika

oregano

Salt/pepper (to taste)

olive oil

red onion (diced)

garlic

water (divided, for sauteing)

red bell pepper (diced)

jalapeño pepper (ribs and seeds removed, diced)

black beans

beans

corn kernels (fresh, frozen, or canned)

cilantro (or to taste)

burger buns (gluten free if desired)

Guacamole

jalapeño (sliced)

Whisk all the ingredients for the Mexican BBQ Sauce in a medium bowl until well combined. Set aside.

Heat the oil in a large skillet over medium-high heat and sauté the red onion for 3 to 4 min until softened. Add the garlic and sauté another minute.

Add the red bell pepper and jalapeño and sauté 3 to 4 minutes.

Pour the Mexican BBQ Sauce into the pan and simmer for about 10 minutes.

Add the pinto beans, black beans, and corn and stir to combine. Simmer another 5 minutes to heat through.

Taste and adjust seasonings as necessary or add salt/pepper to your liking.

Add the chopped cilantro and stir.

Serve hot on burger buns with guacamole and extra jalapeño slices, if desired.

The recipe arrived in my "inbox" at 5 am I had them made by 6 am. I took them to work  and treated  my co workers to lunch, they were yum yum YUMMY!!!  I did not have pinto beans so substituted kidney beans. The salsa I used had mango thertfore I did not add the sugar. Served in a soft tortilla wrap with lettuce and guacamole instead of a slider bun. Served as a taco salad on bed of romaine for lunch the second day. Will definitely add this recipe to my lunch/dinner "rotation"
