This simple to make Mediterranean dip is the perfect appetizer to whip up when you're sort on time.  Great for parties or just a get together at the house.

Mediterranean Dip

feta

cream cheese

kalamata olives

artichokes

Drain and squeeze all the juice from the olives

Add the marinated artichokes, olives, feta cheese, and softened cream cheese to a food processor and blend really well

Cover and refrigerate for at least an hour before serving. Serve with toasted bread or pita chips

Mediterranean White Bean Dip

beans

plain Greek yogurt

parsley

lemon juice (from about 1 lemon)

red pepper flakes

salt

black pepper

oregano

garlic (minced)

olive oil

Marinated artichoke hearts

Black olives (pitted and sliced)

Sun-dried tomatoes in oil (drained

Cherry tomatoes (halved)

Green bell pepper or red bell pepper (diced)

Feta cheese (crumbled)

parsley (chopped)

To a food processor, add beans, Greek yogurt, lemon, parsley, crushed red pepper flakes, salt, black pepper, oregano garlic and olive oil. Process until smooth, about 2 to 3 minutes (stopping to scrape sides of processor, as necessary, with a rubber spatula).

Transfer dip to a serving bowl and garnish to taste (if desired) with any of the garnish ideas or enjoy as is. Serve with chips or veggies. Enjoy!Note: Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days. Dip will firm up a tad in the fridge and will soften when removed for about 10 minutes.

The delicious classic Greek dip made with creamy Greek yogurt, fresh cucumber, garlic, olive oil, and lemon juice.

How to Make Authentic Greek Tzatziki

(2 cups) Greek yogurt

peeled,

kosher salt

garlic, finely minced

lemon juice

dill

Peel the cucumber and slice it in half lengthwise.

Use a spoon to scrape out the seeds, then grate the cucumber using a box grater.

Place the shredded cucumber in a clean tea towel or cheesecloth and squeeze out as much liquid as possible. This prevents a watery tzatziki.

In a medium mixing bowl, stir together the drained Greek yogurt, shredded cucumber, salt, minced garlic, olive oil, and lemon.

Cover the bowl and refrigerate for at least 30 minutes before serving.

Top with dill, and optionally additional olive oil when serving.

Serve as a dip for pita bread, grilled meats, or fresh vegetables.

Store leftover tzatziki in an airtight container in the refrigerator for up to 5 days.

I love this "sauce"! I tried it in several versions, but this original, with Greek style yogurt is definitely the best for me. Here in Croatia we have a habit of making a version ov tzatziki which uses sour cream instead of yogurt and onions instead of garlic.

I prepare mine the same way. Lived in Thessa, Santorini and Crete in the early 1990s, and had learnt to prepare numerous Greek dishes. Though I am Italian &amp; French, I love Meze.

Another Greek person here, confirming that this is a very authentic recipe. Tzatziki is eaten with almost anything in Greece, no meal is really complete without it.

I mean this is pretty much spot on for the perfect tzatziki. My mother made it this exact way, and it is delicious. I grew up on Rhodos, and this is my favorite thing to eat.
