Mexican Bean Salad (Low Calorie, High Protein)

black beans (dried)

corn (canned, drained)

cherry tomatoes (halved)

onion

red bell pepper (chopped)

cilantro (chopped)

jalapeño (finely chopped)

lime (for freshly squeezed juice)

lime

olive oil

tbsp white wine vinegar

tsp chili powder

tsp cumin

tsp ground garlic

tsp sea salt

kidney beans

black beans

cannellini beans

red onion

bell pepper

grape tomatoes

corn

avocado

cilantro

hot sauce

maple syrup

lime juice

cumin

mexican chili powder

Drain and rinse all of the beans until the water runs clear. 

add to bowl

chop vegetables

Chop the onion, bell peppers, tomatoes, and defrost the corn if necessary and add to the bowl.

Whisk all of the dressing ingredients together and pour on top of the salad.
