Preheat oven to 350 degrees F.

Warm corn tortillas on a hot skillet for a few seconds in each side.&nbsp;&nbsp;

Pour 1/4 cup of the enchilada sauce into the bottom of a 9x13'' pan. Fill each corn tortilla with a handful of cheese (reserving about 1/2 cup for sprinkling over the top, at the end).&nbsp;

Roll tightly, and place seam side down in the pan. Pour remaining enchilada sauce over the top. Top with remaining 1/2 cup of cheese.

Bake for 20-25 minutes or until hot and bubbly. Remove from oven and top with shredded cabbage, cotija cheese, tomatoes, and sour cream.&nbsp;

Serve with a side of Mexican Rice

Late Summer Vegetable Enchilada Pie – A saucy, lasagna-like Mexican-American casserole layered with vegetables, tortillas, sauce and cheese. Perfect if you're feeding a crowd or to make ahead for the month, once cool you can refrigerate or freeze it in portions.

Late Summer Vegetable Enchilada Pie

water

28 oz can whole tomatoes

tsp kosher salt

black pepper (to taste)

olive oil

onion (finely chopped)

garlic

jalapenos (seeded and finely chopped)

tsp cumin

lb zucchini (diced 1/4-inch (4 cups))

canned black or pinto beans (drained and slightly smashed with fork)

lime juice

chopped cilantro (plus more for garnish)

corn tortillas

reduced fat Mexican blend cheese

Ancho Sauce: In a large deep skillet toast the anchos over medium-high heat turning often, about 2 minutes. When cool remove stems and seeds. Transfer to a blender with hot water and let it get soft. When cool add tomatoes and blend until smooth. Season with salt and pepper.

Filling: In the skillet heat oil over medium heat, add the onion and cook until soft, 5 minutes. Add the garlic and jalapeno and cook until fragrant, 1 minute. Add the zucchini and cook until tender yet firm, 4 to 5 minutes. Add the corn, beans, lime juice and cumin and cook 2 minutes. Add 1/2 cup cilantro and stir.

Preheat oven to 375°F.  Grease a 9 x 13-inch baking dish.

Spread 1/2 cup sauce on bottom of casserole, arrange 4 tortillas on a single layer (cutting them in half to fit). Spoon half the veggie filling over the tortillas, and top with half of the remaining sauce and 1 1/2 cups cheese. Repeat with the remaining tortillas, veggies, sauce and cheese. Cover with foil and bake 30 minutes, until the filling is bubbling. Let cool 10 minutes before cutting, then serve.

Enchiladas Verdes de Pollo (or Chicken Enchiladas Verdes) is an easy and tasty weeknight meal. Made with minimal effort but loaded with flavor.

Enchiladas Verdes

lbs tomatillos ((about 16 tomatillos))

serrano peppers ((stem removed))

onion (rough chopped)

water ((enough

cilantro

salt

canola oil

chicken

crema mexicana (as desired)

queso fresco ((or cotija))

onion (as desired)

cilantro (as desired)

Remove the husks from the tomatillos and rinse.

Place the tomatillos, garlic, serranos, and onion in a stockpot.

If looking to make a milder sauce, remove the seeds from the chile peppers.

Pour water into the stock pot.

Enough to cover the tomatillos.

Cover and bring to a boil.

Simmer for 7-10 minutes.

Discard water.

Remove the ingredients from the stock pot and into the blender.

Add salt and cilantro to the blender.

Blend until smooth.

Heat up oil in the same stock pot used to cook the salsa.

Pour in the salsa verde and cook for 10 minutes.

Stir occasionally.

Set aside until ready to use.

For the Salsa:

Heat up oil in a frying pan.

Fry the tortillas. 1 minute on each side.

Place on a paper towel to drain any excess oil.

Repeat with all the tortillas.

To assemble, place a tortilla in a baking dish and using your best judgement add about 2 tbsps shredded chicken.

Roll up the tortilla.

Make sure the seam side is down.

Repeat until with the remaining tortillas.

Heat up oven to 375 degrees F.

Cover the tortillas with aluminum foil and place in the oven.

Bake for 15 minutes.

Keep in a warm oven until ready to serve.

Pour a generous amount of the salsa verde on the plate.

Add the chicken enchiladas to a plate.

Pour more sauce on top.

Add the desired toppings - crema mexicana, queso fresco, cilantro, and onion.

Serve and eat right away!

chicken breasts (1 lb.), boneless and skinless, diced into 1/2-inch cubes

fresh cilantro, finely chopped (for serving)

sour cream (for serving)

Heat oil in a large skillet for 2 minutes over medium high heat until sizzling hot. Add onion and sauté until tender, about 2 minutes.

Add diced chicken and stir well to cook evenly until fully cooked through, about 6-8 minutes.

Add jalapeño, salt, pepper and 2 tablespoons enchilada sauce. Stir well until evenly combined. Set it aside.

Prepare the Chicken:

Add and evenly spread 2 tablespoons enchilada sauce on the bottom of a 9x13 baking pan. 

Evenly spread 1-2 tablespoons enchilada sauce on each tortilla wrap.

Sprinkle 1/4 cup shredded cheese across the centre, and add 2 tablespoons of the chicken mixture on top.

Carefully roll up each tortilla wrap with chicken filling and arrange them in the baking pan with the seam side down.

Pour and spread the remaining sauce evenly over top, and sprinkle the remaining cheese on top. 

Assemble the Enchiladas:

Bake at 350°F for 15-20 minutes until the melted cheese turns golden brown. Let rest for 5 minutes.

Serve warm with cilantro and sour cream, if desired.

The recipe is great except it definitely needs more sauce!

Used thighs instead of breasts, seasoned those with salt, pepper, garlic powder, cumin and chili powder. Cut the recipe down because there's only two of us, and upped the sauce to suit our saucy desires. Store bought sauce and tortillas, but babe never minds. I should have made more filling, but my wrap game is terrible and I hesitated, causing them to be slightly underfilled, but this isn't a recipe issue, it's a me issue. The heat in the enchilada itself was just enough, and this very well may become my go to (after lazy enchiladas, of course, which is a few steps shorter than this). Nice.

Loaded Chicken Enchiladas are made with shredded chicken, rice, beans, corn, bell pepper, and onion mixed in a creamy sauce and topped with cheese and homemade red enchilada sauce.

Loaded Chicken Enchiladas

chicken (, shredded (about 3 breasts

rice ((see note*))

corn (, drained)

black beans (,

green bell pepper (, chopped)

onion (, chopped)

garlic (, minced)

jalapeño peppers ((or diced green chilies))

cream of chicken soup ((see note**))

cream cheese (, softened)

shredded cheese ((mozzarella

flour tortillas ((not burrito size))

red enchilada sauce ((or 4 cups store bought))

Preheat oven to 400 degrees F.

Add a few spoonfuls of enchilada sauce to the bottom of TWO 9x13 inch pans.

Add all ingredients except for the tortillas and enchilada sauce to a very large bowl. Stir everything until evenly combined.

Spoon 1/2 cup of filling mixture into a line on the edge of a tortilla. Sprinkle a small handful of shredded cheese on top of the filling.&nbsp;

Roll the tortilla tightly and place it seam side down into prepared pan. Each pan should be able to fit 7-8 enchiladas.

Pour sauce over the top of the enchiladas, dividing it between both pans. Sprinkle any remaining cheese on top.

Bake at 400 degrees for 15-20 minutes, or until cheese is melted and bubbly.

Serve with 5-minute homemade salsa, or pico de gallo.
