This Mexican Street Corn Flatbread takes all your favorite flavors of Elote Corn and combines them in a handheld flatbread pizza appetizer! Tender corn, tangy cream sauce, and salty crumbled cotija are piled high on a crispy flatbread for a snack your whole family will love!

Mexican Street Corn Flatbread Pizza

flatbreads (store bought naan or homemade flatbread)

sour cream

mayonnaise

garlic,

lime

cayenne pepper

(15 oz.) can corn, drained

shredded pepper jack cheese

cotija

chili powder, optional

cilantro

lime wedges

Combine sour cream, mayo, garlic, zest and juice of 1 lime, a pinch of cayenne pepper and a couple large pinches of Kosher salt.

Place flatbreads on a baking sheet. Divide sauce between the two flatbreads, spreading it in an even layer, reserving 2-3 tablespoons of sauce for topping the flatbreads after they've baked.

Divide shredded cheese evenly between the flatbreads, spreading it in an even layer.

Divide corn evenly between the flatbreads.

Sprinkle with chili powder and another couple pinches of salt.

Bake for 14-16 minutes. Then broil for 1-2 minutes.

Drizzle with remaining sauce, garnish with fresh chopped cilantro and serve!

This Mexican pizza recipe is layers of taco meat and beans sandwiched between two crispy shells and topped with plenty of melted cheese and toppings. SO much better than Taco Bell!

tostada shells

beef (I use 90% lean)

taco seasoning

vegetable oil

salt and pepper

refried beans

red enchilada sauce

cheese

tomatoes

green onions

black olives

Heat the oil in a large pan over medium high heat. Add the ground beef to the pan, season with taco seasoning and salt and pepper to taste.

Cook, stirring occasionally, until meat is cooked through, 4-5 minutes.

While the beef is cooking, warm the refried beans.&nbsp;

Preheat the broiler.

Place 4 tostada shells on a sheet pan. Spread 1/4 cup of refried beans over each tostada, then top each one with 1/3 cup meat.

Place a second tostada on top of the meat.&nbsp;

Spread 1 tablespoon of enchilada sauce on top of the Mexican pizzas, then top each one with 1/4 cup of cheese.

Broil for 2-3 minutes or until cheese is melted. Top with tomatoes, green onions and olives, then serve immediately.

This Taco Bell Mexican Pizza recipe is made with fried tortillas, refried beans, seasoned ground beef, enchilada sauce, and melted cheese!

Taco Bell Mexican Pizza (+Video)

can refried beans

enchilada sauce

Preheat oven to 400F. In a large skillet, brown and and crumble the ground beef.

Drain excess grease. Place cooked beef back in skillet and ddd taco seasoning packet and water and stir. Bring to a boil then reduce heat and simmer until thickened.

In a large skillet, heat up oil over medium heat. Add tortillas (one at a time) and cook for 3-4 minutes (flipping frequently) until crisp. Continue with the rest of the tortillas. Set aside.

Meanwhile, heat up the refried beans in a microwaveable-safe bowl. This will make it easier to spread the beans onto the tortilla shells.

On each tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.

Place another tortilla on top. Slather about two tablespoons of the enchilada sauce on top. Then place some shredded cheese on top of the sauce. Continue assembling the rest of the pizzas.

Place the pizzas on a large nonstick baking sheet and bake for about 8-10 minutes until cheese is melted. Serve with your favoriet toppings!

How to make: COPYCAT TACO BELL MEXICAN PIZZA

How to makd Tlayudas! This healthy, lightened-up, version is vegan and GF adaptable! Feel free to add walnut chorizo,  chicken carnitas or turkey chorizo! Made with a crispy tortilla, topped with refried beans, cheese (optional) cabbage slaw, avocado and cilantro.

Tlayudas Recipe 

whole-grain tortillas (or sub GF tortillas) 8-10 inches wide, or larger.

radishes -thinly sliced (optional)

onion

salt, plus more taste

½ an english cucumber- sliced

jalapeno- finely chopped- optional

scallions

¼-½ cup cilantro- chopped

olive oil

refried black beans beans

Optional: Chicken carnitas , walnut Chorizo,

Oaxacan String cheese, Crumbled Queso Fresco Cheese, melty cheese

Optional sauces- Chipotle Mayo

Garnish with sliced avocado, cilantro, lime wedges, scallions, fresh summer tomatoes, hot sauce,

avocado (perfectly ripe)

Toast tortillas dry, directly on the oven racks ( no sheet pan) until crisp, about 20 minutes. This is key- they need to be very crispy and dry, not bendy. You can make these ahead.

Combine the cabbage, carrots, radish, onion, and toss in a large bowl with the salt. ( This will seem like a LOT at first, but will it will release liquid and shrink down.)

Add the cucumber, jalapeño, scallions and cilantro, Toss well, then add olive oil and lime juice and a little zest. Let it rest on the counter &#8211; or make this ahead and refrigerate.

If making the avocado sauce&#8211; make this now- placing everything in a food processor and blending until smooth. Taste, adjust salt and spice level adding more jalapeño if needed. Place in a bowl.

When ready to assemble, heat the refried beans, adding ¼-½ cup water (to loosen them) and using a fork, whip in a pinch of salt, cumin and coriander to season to taste.

If using chicken or chorizo, heat them up now and if using cheese, turn on the broiler.

To assemble, carefully lather up some beans on the tortilla ( like you pizza sauce on a pizza). At this point you could add chicken and cheese (and melt)- or leave off and keep it vegan. Top the warmed base with a generous mound of cool slaw. Spoon over avocado sauce(or sliced avocado) or Chipotle Mayo.

Garnish with cilantro sprigs, hot sauce, lime wedge, pickled onions or shallots. Serve immediately (with knife and fork) while the beans are warm and the tortillas are still crisp.

One of my favorites of your recipes! The avocado cilantro sauce is delish and really makes the dish!  Here in Texas we eat ALOT of mexican food, but it's not always the healthiest.  This recipe is beautiful and healthy!  BTW I love the poem and would love to know the author.

Omg! This simple yet delicious meal was incredible, I'm going to say it's probably the most delicious vegan meal I've ever had! Better than you would get at most restaurants and so easy to make at home. This is the first recipe from your site I've tried and I can't wait to explore the rest! We made this without any olive oil and just had to add a litre extra water to the avo sauce, would probably also recommend 2 cans of refried beans if you are feeding 4, maybe that's just because we couldn't stop eating! 😋😘

Another great recipe and my favourite so far.  So full of flavour.  I made it completely vegan but could easily accommodate the meat eaters.  Thank you for teaching me so much about layering flavours and textures, it makes veganism so much more interesting.

Gourmet Taco Bell Mexican Pizza Recipe

chuck

(15 ½-ounce) can pinto beans, drained and rinsed

taco-sized flour tortillas

Oaxaca cheese

pickled red onion

Add the salt, cumin, oregano, pepper, onion, and garlic to the slow cooker and stir to combine.

Add the lime juice, vinegar, chipotle peppers, beef broth, bay leaves, and cloves, and stir to combine.

Cover and cook on low heat for 8 hours or until the beef is fork-tender.

Using a slotted spoon, remove the beef from the slow cooker, and set aside on a large platter.

Remove 2 cups and 4 tablespoons (separated) of the pan drippings from the slow cooker and set aside.

Using a fork, pull the beef into bite-sized shreds.

Return the pulled beef to the slow cooker pot, stir to combine with the remaining pan drippings, and program the cooker to the warm setting for 20 minutes.

To make the pizza sauce, place the 2 cups of the reserved pan drippings in a medium saucepan. Bring to a simmer over medium heat.

Once simmering, add the tomato paste, and whisk to combine.

Simmer the sauce for 5 minutes, or until the sauce has thickened (about the consistency of enchilada sauce). Remove from the heat and set aside.

To make the mashed pinto beans, heat olive oil in a large skillet over medium heat.
