A super easy foolproof recipe for homemade caramels! They're soft and chewy and perfectly buttery with a rich caramel flavor. These make one of the best homemade gifts and no one will know how easy it was for your to make them!

Microwave Caramels

(120 milliliters) light corn syrup

(100 grams) granulated sugar

(100 grams) packed light-brown sugar

(120 milliliters) sweetened condensed milk

salt

tsp vanilla extract

Maldon sea salt or fleur de sel ((optional))

Butter an 8 by 8-inch baking dish. Place butter in a large microwave safe bowl (not anything plastic, something micro safe glass or ceramic), heat in microwave until melted.

To bowl with butter, add corn syrup, granulated sugar, brown sugar, sweetened condensed milk and salt and whisk mixture very well.&nbsp;

Return to microwave and cook mixture on HIGH power for 6 to 7 minutes**.

Using hot pads, carefully remove bowl from microwave. Add in vanilla extract and mix well.&nbsp;&nbsp;

Pour mixture into prepared baking dish, sprinkle top lightly with Maldon sea salt or fleur de sel if using.&nbsp;

Place in refrigerator until set, about 20 - 30 minutes. Cut into rectangular pieces (I cut into rows slightly less than 1/2-inch then cut each row into three) and wrap in cut rectangles of wax paper.

Microwave caramel recipe

salted butter

sugar

corn syrup

sweetened condensed milk

vanilla extract

sea salt

pecans (, optional)

Line an 8×8″ pan with parchment paper. Run a stick of butter over the top to prevent the caramels from sticking. Set aside.

Melt the butter in a large 8-cup microwave-safe bowl. Add the sugar, corn syrup and sweetened condensed milk and stir until smooth. Place in the microwave and cook for six minutes, stirring half way in between.

To test if the caramel is ready, place a spoon into the caramel and then dip into a cup of cold ice water. If it resembles a soft ball (the texture you’d want your caramels to be), then it’s ready. If it’s still too soft, cook for an additional 30 seconds to 1 minute. You don’t want to overcook or they will be too hard. Then remove from microwave and stir in vanilla and a pinch of sea salt. Add pecans if desired.

Pour caramel into prepared pan and allow to set. Sprinkle with sea salt if desired. You may place in the refrigerator for 20 minutes to cool them quicker.

Cut with a plastic knife and then wrap in wax paper to prevent the caramels from sticking. Enjoy! :)
