Coffee Cake In A Cup-- the perfect remedy for a sugar craving when you don't want to spend a lot of time or heat up the oven.&nbsp;

{2 minute} Coffee Cake in a Cup

butter

Tablespoons sugar

Tablespoons applesauce

vanilla extract (few drops)

All Purpose flour

baking powder

salt

flour

brown sugar

cinnamon

In a mug soften 1 tbsp of butter in microwave, about 5 seconds. You don’t want it melted, just soft. Stir in 2 tbsp of sugar and mix until well incorporated. Stir in applesauce, vanilla (just a tiny bit, we’re talking drops), flour, baking powder, and pinch of salt; stirring until just combined. Use the back of your spoon to smooth it out in the bottom of the mug.

Want struesel? Of course you do! In a separate, small bowl, combine 1 tbsp of butter, 2 tbsp of flour, 1 tbsp of brown sugar, and ¼ tsp cinnamon. Use your fingers to to pinch the butter and mix it in with the other ingredients. When it starts to look like lumpy sand (appetizing, eh?) and all ingredients are combined, pour on top of cake batter in mug.

Cook in the microwave for 50-80 seconds depending on your microwave. At 1 minute, my microwave cooks it perfectly. It will look just barely set on top. You don’t want to overcook it and things tend to get ugly fast in the microwave. I suggest cooking it 50 seconds, and then in 10 second intervals checking after each interval until done. Eat white it’s still warm. Once it cools off, it tends to loose some of it’s magic!

Funfetti Mug Cake

all-purpose flour (0.03)

Tbsp sugar (0.02)

tsp baking powder (0.02)

tsp rainbow sprinkles (0.10)

Tbsp milk (0.08)

Tbsp butter (melted) (0.09)

tsp vanilla extract (0.07)

Add the flour, sugar, baking powder, and sprinkles to a microwave safe mug (8oz. or larger). Stir until everything is well combined.

Add the milk, melted butter, and vanilla extract to the mug. Stir until a soft batter forms, making sure to scrape all the flour out of the corners of the mug.

Microwave the mug cake for about 60 seconds, or until it has puffed to about 2-3 times the volume. Cook time will vary with the wattage of your microwave (I used a 1000 watt microwave and 60-70 seconds was perfect).

Allow the mug cake to cool for a few minutes and then top with your preferred frosting option, or enjoy unfrosted.

Moist Chocolate Cake in a Cup

(45 ml) unbleached all-purpose flour

(30 ml) brown sugar

(10 ml) cocoa powder

(1 ml) baking powder

(45 ml) milk

(15 ml) canola oil

vanilla extract

semisweet chocolate chips (5 ml / 1 teaspoon)

In a 250 ml (1 cup)-capacity coffee cup, combine the flour, sugar, cocoa powder, and baking powder. Add the milk, oil, and vanilla.

With a fork, gently stir until the batter no longer has lumps. Sprinkle with the chocolate chips.

Cook the cake in the microwave for 45 seconds. Let cool for 5 minutes to allow for the cake to finish cooking.

Made thus today.  Was a bit too sweet  for my taste, so  I made another with just 1 and a half tbsp of sugar, added a bit of salt and a pinch of espresso  powder . It was perfect. Will  definitely this again.

This is a great recipe! I substituted canna butter for the oil and added a few granules of instant coffee ~ yum!

This Mug Cake was delicious! To most people, it might seem like it is still a little raw but that is definitely not the case. I did change up the recipe a bit, like by doing a little less than a cap full of vegetable oil instead of Canola Oil, and I added three drops of vanilla extract, but other than that it is a really great mug cake. I have been looking for a delicious mug cake for a while now and I am glad I found it!

Beautiful. Have tried a few recipes out there and this really works beautifully. To suit my chocoholic nature, I personalised it as follows: I a
+ added 1/2 tsp of instant coffee granules for flavour
+ added pinch of salt
- removed 1/2 tbsp of the sugar as it was a bit too sweet to me
+  added 4 big (5mm cube) chunks of dark chocolate in the centre of the cake, at the bottom. They melted to perfection, no burning, making each spoonful moist and SO CHOCOLATEY!

Microwave Cheesecake

Start by melting 2 tablespoons butter in the microwave. Split the butter in between the two cheesecake bowls or mugs. Roll the butter around to help coat the sides of the container.

Now add in your graham cracker crumbs. I just eye-balled it and split the crumbs between the two. Once it is all mixed you will pack down the graham cracker crust.

In a new bowl add your cream cheese, sugar and vanilla.

Microwave on 50% POWER for 30-45 second intervals, stirring between each time. It will start to make the cream cheese mixture nice and thick.

Once you are done cooking, split the cream cheese mixture in between the two bowls. Cover with a lid or aluminum foil and place in the freezer for 1 hour.

Top your microwave cheesecakes with fresh fruit like I did, chocolate chips, etc. Then grab a spoon and dive in!

Refrigerate your cheesecakes until you are ready to serve, and don't allow them to sit out for more than 2 hours at a time.
