Mini Meatloaf Muffins

onion

carrot (about 1/3 cup), finely diced or grated

garlic cloves,

salt

black pepper

chicken stock (sub: beef broth)

Worcestershire sauce

tomato paste

beef

parsley,

egg,

bread crumbs (Gluten-Free Option: Sub almond meal

all-natural ketchup (for topping)

Preheat oven to 450° F. Generously spray a 12-cup muffin tin with cooking spray.

Heat oil in a medium sauce pan over medium-high heat. Saute the onion and carrot until vegetables are softened, about 3-4 minutes. Add the garlic for another 30-60 seconds. Remove from the heat. Stir in the salt, pepper, chicken stock, Worcestershire sauce, and tomato paste and allow the mixture to cool.

In a large bowl, use your hands to combine the cooled veggie mixture, ground beef, parsley, egg, and bread crumbs. Do not over mix. 

Use a spoon or ice cream scoop to fill each muffin tin hole to the top. Gently press to fit into muffin tin mold.

Top each mini meat loaf with a spoonful of ketchup and spread it around with the back of the spoon. (Freezing instructions for Method #1 begin here.)

Bake about 20-25 minutes. Cut open a muffin to test that the middle is cooked through (no more pink or registers 165°F internally). Sprinkle with a little chopped parsley at the end, as garnish. (Freezing instructions for Method #2 begin here.)

Preheat oven to 350 degrees F.

In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.

Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.

 In the meantime, in a small bowl mix together all of the ingredients for the sauce.  

Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.

Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.

Serve with mashed potatoes and any extra sauce.

Meatloaf is one of those comfort foods we all grew up eating, and loving as a kid. These healthier Petite Turkey Meatloaves will not disappoint!

Petite Turkey Meatloaves

olive oil

99% turkey

oatmeal

ketchup + 2 tbsp

tsp worcesterchire sauce

marjoram

Preheat the oven to 350°.

Saute olive oil and onion on low until translucent.

In a medium bowl mix turkey, onion, oatmeal, egg, ketchup, salt and marjoram.

Divide into four equal loafs and place each loaf into a non stick mini loaf pan or shape into small loafs on an un-greased nonstick baking pan.

In a small cup mix remaining 2 tbsp ketchup with worcesterchire sauce and brush onto each loaf to give it a nice glaze.

Bake uncovered for about 40 minutes at 350°.

After baking let it sit for 5 minutes serving.

This mini meatloaf is topped with a delicious meatloaf glaze and is full of amazing flavor.  The perfect size for two people and a quick and easy dinner solution.

Mini Meatloaf for Two

lb. hamburger (90/10 blend)

Tbsp minced onion (dried)

garlic

tsp salt

tsp pepper

egg (or 1 Tbsp mayo)

breadcrumbs

Italian seasoning

Tbsp steak sauce

Tbsp ketchup

Worcestershire Sauce

Tbsp brown sugar

Tbsp balsamic vinegar

In a bowl, combine meat, minced onion, garlic, Italian seasoning, salt, pepper and egg or 1 Tbsp of mayo and mix to combine.

Add in breadcrumbs along with other seasonings including steak sauce, ketchup and Worcestershire sauce.

Form meatloaf into two small loaves and place in baking dish.

Bake meatloaf at 350 degrees F. for 25 minutes.

While the meatloaf is baking combine ketchup, brown sugar and balsamic vinegar to make the glaze.

After 25 minutes, remove meatloaf from oven and spoon glaze over top and sides of meatloaf.

Then increase the oven temperature to 400 degrees F and bake for another 5- 10 minutes or until the meatloaf reaches an internal temperature of 160 degrees F and the glaze has set up.

I am older and live alone. All my life I cooked in quantity with sons, grandsons and extended family. But now finding myself alone, not knowing how to cook for one. I tried this meatloaf, OMG it is wonderful. I followed the recipe exactly as it is. Held together perfectly, seasonings were spot on. I even baked it in my air fryer. I am going to freeze the second loaf for later.  Great job, perfect meatloaf.

2nd time making this recipe, and I will make it the same from here on our! By far my Favorite meatloaf recipe I have tried. I just use onion powder instead of the dried onion bc that's what I had on hand, as well as subed the egg for the mayo and I like it so much better than using egg! Also for the glaze I didn't have balsamic vinegar so I just used 1/2 tbsp yellow mustard instead. Still turned out perfectly.

So good in a pinch. Company appears and I manage to please everyone with a taste of this meat loaf.

I don’t like meatloaf but made it for the wife.  Didn’t have minced onion so I used “everything bagel” topping.

Bake for 20-24 minutes, or until an instant read meat thermometer inserted into the center reads 160 degrees F.

Let cool for 2 minutes in the muffin pan, then use a knife (if needed) to transfer to a plate. Serve warm.

Prepare Vegetables

Arrange all vegetables on one side of the prepared baking sheet in a single layer.

Prepare Meatloaf

Shape the mixture into 4 mini rectangular meatloaves and place them on the other side of the baking sheet.

Bake

Prepare the Glaze

During the last 5 minutes of baking, brush the glaze over the meatloaves.
