Baked pancake dippers are the perfect breakfast solution! Served with triple berry yogurt sauce so you can dip and devour each bite.

Pancake Dippers with Berry Sauce

flaxseed

oats

baking powder

⅛ teaspoon kosher salt (kosher)

cinnamon (ground)

½ cup greek yogurt (plain non-fat, divided)

milk

vanilla extract

strawberries

raspberries

blueberries

In a small bowl add 1 tablespoon of ground flaxseed and 3 tablespoons water. Stir and allow to sit for 5 minutes, meanwhile, make the pancake batter.

Add old-fashioned rolled oats, baking powder, baking soda, salt and cinnamon to a blender. 

Process on high for 20 seconds, or until a flour appearance is achieved.

Add flaxseed mixture, ¼ cup yogurt, ½ cup milk, and vanilla to the oatmeal mixture, blend until smooth. Add more milk if needed 1 tablespoon at a time to thin the batter. The batter will be thick but scoopable. Transfer to a medium-sized bowl.

Mince ½ cup of strawberries into tiny pieces and add to the batter bowl.

Mash ½ cup of raspberries and break into smaller pieces, add to the batter bowl. Stir to combine.

Pre-heat oven to 325°F.

Spray a 24 mini cupcake pan with baking spray.

Add 1 tablespoon of batter into each cup. Place 1 blueberry into the center of each cup, pressing into the batter to cover. 

Sprinkle a small amount of crushed oats over the top of each pancake. I used my fingers to break the oats.

Bake for 10 to 15 minutes, or until the pancake is set and firm on top.

Allow it to cool in the pan for 5 minutes before unmolding. In the meanwhile make the dipping sauce.

Blend ¼ cup strawberries, ¼ cup raspberries, ¼ cup blueberries, and ¼ cup yogurt until a puree is achieved, about 15 seconds. Add to a small bowl.

Remove pancakes from pan add serve with berry cream dip.

Healthy Pancake Cereal

1% milk (buttermilk or almond milk)

unbleached all purpose or whole wheat flour

banana

eggs

vanilla

salt

cooking spray

mixed berries (for topping)

banana (sliced)

whipped cream and colored sprinkles (for topping)

Add milk, flour, 1 of the bananas, eggs, oil, vanilla, baking powder and salt  to a blender and pulse until smooth and throughly mixed.

Pour pancake batter into a condiment squeeze bottle. (Or use a ziplock bag and cut a tiny whole in the corner as well.)

Heat pan to medium high heat and spray with oil.

Squeeze little small pancake dots the size of a nickel and cook until top is dry and forms bubbles.

Toss the pancakes with a spatula and cook for a few more minutes.

Occasionally toss the pancakes around to help cook more evenly until slightly browned.

Transfer to 4 bowls and add sliced bananas, fresh berries and your favorite toppings (I like to drizzle honey).

Pancake Cereal

Fluffy American-style pancakes are a blank canvas for toppings like blueberries and bacon – great for breakfast in bed. Why not get the kids to help?

Fluffy pancakes

If serving with pancetta, heat oven to 200C/180C fan/gas 6. Line a baking tray with baking parchment and lay on the pancetta in a single layer. Put another piece of parchment on top, followed by a second baking tray, and bake for 12-15 mins until crisp.

To make the pancakes, get a little helper to weigh out and tip the flour, baking powder and sugar into a large bowl with a small pinch of salt. Crack in the eggs and whisk until smooth. Add the maple syrup and milk while whisking.

Heat a splash of oil and a small knob of butter in a non-stick frying pan until sizzling. Add spoonfuls of batter to make pancakes the size you like, we made 20cm pancakes for a serving size of one per person, or if you are very hungry, two per person. Cook until bubbles start to form on the surface, then flip and cook the other side. Eat straight away or keep warm in a low oven while you cook another batch. Serve pancakes with pancetta or blueberries, drizzled with extra maple syrup.

Soak hulled mung beans in a bowl of water for 2 hours or overnight.

Mix all the pancake ingredients in a bowl into a smooth and runny yellow batter.

In a skillet, cook mung beans with oil, minced garlic, and a splash of water for 10 minutes. Then, stir in sliced spring onions.

Grease a griddle pan or bun tray with oil and pour in two tablespoons of pancake batter. Then, top with half cherry tomato and a sprinkle of beans.

If using the griddle pan, cook the pancakes covered over high heat for 10 minutes. If using the muffin tray, bake at 180°C (355°F) for 20 minutes.

This recipe for blueberry mini pancake balls is inspired by Aebleskiver Danish pancakes and is a fun (and delicious) alternative to American pancakes. Plus, this recipe is gluten-free, refined sugar-free, and packed with blueberry flavor!

Aebleskiver Danish Pancakes (Blueberry Mini Pancake Balls)

Process the rolled oats in a food processor until you obtain a slightly chunky oat flour.

Add the rest of the batter ingredients and process until it is thoroughly mixed/incorporated.

Step 1: Prepare the pancake batter

Heat the pan with a little oil. I used a Dutch mini pancake pan for this; you can also get an aebleskiver pan, which has deeper wells, or use a normal skillet if that&#039;s all you have.

Spoon about 1 tablespoon of batter per pancake well and allow it to cook for around two minutes until the bottom is golden, then flip the pancake over and continue to cook for 1-2 minutes.If you&#039;re using a normal skillet then use a tablespoon measuring spoon to form each pancake, leaving a little space between each one for any spreading.Traditionally, a crochet hook/knitting needle is used to flip the pancake balls - however, several tools will work, including a skewer, sharp knife, or even toothpick.

Step 2: Cook the pancake balls

Depending on what you want to serve these pancake balls with, you can prepare them now. I decided to use some heated blueberries, just placing them in the pancake pan wells to heat, gently brush with a little oil, and within a minute or two, the blueberries will be warmed, sizzling, and a little saucy (no sugar required).

(Optional) Step 3: To prepare the heated blueberries

Store: store any leftover blueberry oat pancakes in an airtight container in the refrigerator for between 3-4 days.Freeze: allow the pancake balls to cool entirely before transferring to a freezer-safe container and freezing for up to 1 month. Thaw before reheating.To reheat: pop the pancake balls in the oven at 350ºF/175ºC for a few minutes to heat through. You could also microwave them.

Mini Pancakes (Silver Dollar Pancakes)

plant milk (180 ml)

apple cider vinegar (15 ml)

maple syrup (30 ml) (1)

all-purpose flour (120 g)

coconut oil

Whisk together the milk and apple cider vinegar. Set aside to curdle for 10 minutes.

Sift the flour and baking powder into a mixing bowl and stir through the salt.

Stir the maple syrup and vanilla extract into the curdled milk and whisk the wet ingredients into the flour mix.

Transfer the mix into a squeezy bottle.

Lightly grease a non-stick pan over medium heat with a little coconut oil and allow for the pan to preheat.

Shape your mini pancakes into the pan with the squeezy bottle, then flip the pancakes after 1 minute or when the edges begin to firm up.

Remove the mini pancakes from the pan once they are golden on both sides.

In a large bowl, sift together the flour, baking powder, salt, and sugar.

Make a well in the center and pour in the milk, egg and melted butter. Whisk by hand until smooth.

Heat a lightly oiled griddle or frying pan over medium-high heat.

Scoop the batter onto the griddle, about 1/4 cup for each pancake.

Brown on both sides for just a few minutes.

Serve hot or pack for later in a lunch box.
