Mini lentil tacos are a fun dinner or great Mexican appetizer for parties. The mini taco shells are filled with a delicious easy lentil taco meat. Vegan.

Mini Lentil Tacos

flour tortillas

cooking oil

tbsp oil

onion (finely chopped)

soy sauce

oregano

½ tsp sweet smoked paprika

¼ tsp chilli powder

(14 ounces 400 grams) green lentils (drained and rinsed)

carrot

Sliced red cabbage

Parsley

Method

Preheat the oven to 180C.

Use a circular cookie cutter to cut as many small rounds out of the tortillas as you can fit.

Use a brush (or cooking oil spray) to lightly grease the underside of a muffin tray. Place the tortilla rounds between the cups of the upturned tray to form taco shapes, then bake in the oven for 5 minutes or until they begin to turn golden. Allow them to cool in the tray and they will firm up a bit.

Heat the oil in a frying pan, then add the onion (save a little to garnish if desired) and cook for a few minutes until soft but not browned.&nbsp;

Add the soy sauce, oregano, paprika and lentils and stir well. Cook over a medium heat for 5 minutes, stirring often.

Meanwhile, make the filling.

Fill the taco shells with the filling, then top with veggies and parsley as desired.

Kids loved it! My small picky eater ate 4!!!! He asked me to keep making them bc it was his favorite.

Loved these! I made them meatless with Morningstar meatless crumbles, and I used a Mexican cheese blend. Also mixed the “meat” with diced tomatoes and green chiles. Homemade guacamole to finish it off. Tex Mex snap peas as a side.

20-24 street taco corn tortillas

Brush or spray both sides with olive oil.

Add a heaping tablespoon of the shredded chicken mixture to the tortillas and top with a heaping tablespoon of shredded cheese. You may need a second baking sheet depending on the size of yours.

Bake tacos for 2 minutes or until the cheese melts. Remove from oven and carefully fold each tortilla in half, gently pressing them together in the shape of a taco.

Bake for another 12-15 minutes or until the corn tortillas are crispy on the outside.

Serve with sour cream, salsa, and cilantro. Enjoy!

These are the best! So quick and easy! I tried with the mini tortillas and the regular size and both were good.

Absolutely loved this! The  only thing I did was towards the end it wasn’t crisping up so, I put it on broil and watched it so wouldn’t burn.

These one-bite mini tacos are fantastic finger food, and you’ll love the nifty trick for making the miniature taco shells - just use an upside-down muffin tin!Fill with anything chopped small enough to fit - try Jalapeño chicken, spicy salmon, Thai chicken salad or even old school taco beef! In the spirit of summer here in Australia (and an attempt to be grown-up cocktail party canapé worthy), I&#39;ve gone for prawn cocktail with a classic Marie Rose sauce.

Prawn cocktail mini tacos (shrimp)

corn tortillas flour

220 grams/7 oz cooked prawns/shrimp, peeled ((ie 500 grams/1

mayonnaise (, preferably whole egg, or Kewpie (Note 3))

tbsp ketchup ((or Aussie tomato sauce))

Worcestershire sauce

garlic garlic

tbsp cornichons ((or dill pickle), finely chopped)

tbsp chives (, finely sliced (or parsley))

Cut 17 x 6cm/2.4&quot; rounds, microwave to soften, oil and salt, press into upside muffin tin. Bake 12 minutes, cool in tin. Fill!

Abbreviated recipe:

Preheat the oven to 180°C/350°F (160°C fan-forced). Get a standard 12 hole muffin tin.

Cut circles from the tortillas using a 6cm / 2.4&quot; cutter. (Note 6 on using offcuts)

Warm - Spread half on a dinner plate and microwave for 30 seconds on high (makes them pliable). Spray the warm tortillas lightly with oil, sprinkle with half the salt.

Wedge - Turn the muffin tin upside down. Wedge the tortillas salt side down between the muffin tin holes - they fold into taco shapes! Repeat with remaining rounds.

Spray the surface of the tortillas lightly with oil (no salt).

Bake for 12 minutes, or until quite golden and crispy. Cool in the muffin tin so they set. (Stays crisp 2 days!)

Crispy mini taco shells:

Dice the prawns into small 5mm / 0.2&quot; cubes (for large, cut in half horizontally, lengthwise then chop - see video).

Mix the Marie Rose sauce in a bowl. Then stir the prawns through, just before assembling.

Prawn cocktail filling:

Fill taco shells with prawn cocktail filling, sprinkle with chives. To keep them upright, place on a bed of rock salt or dried beans for serving.

Pass around, bask in praise, be coy when people ask how you made those marvellous mini taco shells!

Assembling:

Am writing this just as Djokovic has retired.  Shock-horror I know you will understand!  So - am at least happy to look down on these and so wish I had a plate of your very clever prawn tacos in front of me!  I also buy 'Mission' and use 'Cobram' oil . . . you make a way better Marie Rose :) !  Shall copy and pass on the recipe . . .
