The BEST Lentil Salad infused with Moroccan Spices, this healthy vegan lentil salad can be made ahead and keeps for 4 days, perfect for healthy midweek lunches!

Moroccan Lentil Salad

red onion

lentils

celery, chopped

dried apricots, chopped

almonds, chopped or slivered, toasted

cilantro

orange

honey

olive oil

red wine vinegar, vinegar

garlic cloves, finely minced (use a garlic press)

salt, more to taste

pepper

cumin

cinnamon

cloves

pinch or two chili flakes (optional, but good)

Cook lentils according to package directions (see notes, feel free to do ahead)

If sensitive to onions, chop and place in a bowlful of cold, salted water.

Place lentils, celery, apricots, almonds, drained onions, herbs and orange zest in a large bowl. Squeeze with the orange juice.

Mix dressing ingredients into the bowl. If using honey, mix dressing ingredients separately (easier). Toss with salad ingredients.  

Taste, adjust salt and add chili flakes if you like. I usually add a little more salt after this sits a while.

This recipe is delicious. I used very little oil and kept everything else the same. Will be a regular meal for sure. Would this recipe freeze well?

This authentic Moroccan lentil salad is rich and full of flavor. Made with tomatoes, typical Moroccan spices, and delicious, high-quality organic olive oil. It's the perfect dinner or side dish.

Classic Moroccan Lentil Salad

tbsp O-Live & Co. Organic Olive Oil

garlic,

yellow onion, grated

paprika

tsp red pepper flakes (optional)

tsp salt

tsp pepper

roma tomatoes, grated

lentils,

water

tomato paste

In a saucepan, heat the olive oil over medium heat. Toss in minced garlic and saute until fragrant. 

Add in grated onion and all of the spices. Simmer for 5 minutes before tossing in grated tomatoes, lentils and water. Bring to a gentle simmer, cover partially with a lid. 

Continue to simmer on medium low for 25-30 minutes or until lentils are cooked through, adding water if the lentils start to look dry.  

Once lentils are cooked through, add tomato paste and stir well until evenly incorporated, adding water if needed. Taste to see if the lentils need any additional seasoning and serve with fresh parsley, paprika and flake salt.
