Detox Moroccan Lentil Soup

Heat the oil in a large stockpot or dutch oven. Add onions, celery, carrot, potato and garlic and saute for about 5 minutes until everything softens slightly. Season with salt, pepper and the spices and cook about 2 minutes.

Add lentils and saute 1 - 2 minutes, then add the broth, water and tomato paste. Stir to combine and until the tomato paste has dissolved. Bring the soup to a boil, cover and reduce to simmer for 30 minutes.

Remove from heat and stir in almond milk, lemon juice, and spinach, and stir until the spinach has wilted. Serve immediately and top with your desired toppings.

For garnishes, I like to do a dollop of coconut yogurt, some fresh parsley, pepper flakes, cracked pepper and jalapeno slices. A little spicy, a little creamy and so good!

Slow Cooker Moroccan Chickpea Stew

tbsp extra virgin olive oil (light)

garlic

tbsp poblano pepper (chopped)

28 oz can petite diced tomatoes

15 chick peas, drained

low sodium (99% fat free chicken broth*)

paprika

coriander

bay leaves

tsp crushed red pepper flakes

salt

Spray a large nonstick skillet with cooking spray and over medium high heat cook ground turkey for 10-12 minutes.

Break up the ground meat and mix so meat cooks evenly; place in the slow cooker.

To the skillet add the olive oil, onions, pepper, carrots, and celery and sauté until soft, about 8 minutes.

Add garlic and sauté for another 2 minutes.

Transfer to slow cooker along with diced tomatoes, chick peas, spices, broth and gently mix well.

Cover and cook on LOW heat 6 to 8 hours.

Remove bay leaves and serve; garnish with fresh herbs.

Butternut Squash, Chickpea &amp; Lentil Moroccan Stew

Heat the oil in a large pot over medium-high heat. Add the onion and garlic; cook a few minutes or until the onion becomes softened.

Next stir in cumin, cinnamon, turmeric, cayenne; cook for 30 seconds to a minute until spices are fragrant.&nbsp;

Add tomatoes, broth, chickpeas, butternut squash, lentils, and salt and pepper. Bring to a boil, then cover, reduce heat to low and simmer for about 20 minutes or until butternut squash is tender and lentils are fully cooked.

Stir in lemon juice and sprinkle with cilantro and basil, if desired. Serve with a dollop of yogurt if you aren't vegan. Makes 4 servings - about 2 cups each.

This Moroccan chickpea stew is hearty and satisfying: packed with healthy vegetables and a savory blend of spices!

Moroccan Chickpea Stew

dry quinoa

sweet potatoes (about 1 ¾ pounds)

paprika and ground cumin

ground coriander, ground turmeric, and ground ginger

tomatoes

can chickpeas, drained (or 1 1/2 cups cooked)

baby spinach (or chopped spinach)

cilantro,

Make the quinoa using the stovetop method or Instant Pot method. When it&#8217;s done, sprinkle with a little kosher salt to taste. 

Dice the onion and mince the garlic. Chop the sweet potatoes into bite-sized pieces.

In a large pot, heat the olive oil. Sauté the onion for about 5 minutes. Add the minced garlic and sauté about 1 minute.

Stir in the paprika, cumin, coriander, turmeric, ginger, cinnamon, kosher salt, black pepper, andcayenne pepper. Stir about 30 seconds, then add diced tomatoes and broth.

Bring to a boil, then add sweet potatoes and drained and rinsed chickpeas. Simmer 25 to 30 minutes until the potatoes are tender. Stir in the spinach in the last 2 minutes.

Serve over the quinoa, garnished with chopped cilantro, fresh squeezed lemon juice, and a dollop of Greek yogurt.

Heat the olive oil in a large flameproof casserole over a medium heat. Add the meat, onion and spices with 1½ tsp salt. Leave for 5-10 mins to lightly brown the meat, stirring occasionally. Add the rest of the ingredients except the lentils, cornflour, coriander and lemon wedges. Add 1 litre of boiling water, bring to the boil, cover with a lid and reduce the heat to low. Leave to simmer for 1 hr.

Add the lentils to the casserole, cover with a lid and cook for a further 20 mins. When the chickpeas, meat and lentils are cooked, mix the cornflour in a small bowl with 3 tbsp water, and stir until smooth. Stir the cornflour mixture into the casserole. Simmer for 5 mins until the harira thickens and takes on a velvety texture.

Scatter over the coriander, then serve hot with lemon wedges on the side for squeezing over.

This delicious Moroccan-inspired stew looks as good as it tastes. It's a wonderful way to warm up cold season dinners, with sweet sugar pumpkin or butternut squash in an aromatic broth.

Moroccan-Style Vegetable Stew

Heat the oil in a soup pot. Add the onions and sauté over moderate heat until golden.

Add the potatoes, pumpkin or squash, carrots, tomatoes, and just enough water to cover. Bring to a simmer, then add the seasonings and simmer gently, covered, for approximately 45 minutes, or until the vegetables are tender.

Add the chickpeas, then season to taste with salt and pepper. Simmer over low heat for 15 minutes longer.

Meanwhile, place the couscous in an ovenproof bowl. Cover with 2 cups boiling water, then cover the bowl and let stand for 10 minutes. Fluff with a fork.

To serve, place a small amount of the couscous in each soup bowl, then ladle the stew over it. Garnish each serving with parsley, if desired.

Moroccan chickpea tajine style veggie stew, ready in 30 minutes and made with plenty of on hand pantry ingredients. Vegan and gluten free.

Add the oil to a soup pot over medium-low heat. Once the oil is warmed add the onions and cook for 5-8 minutes or until they begin to soften.

Add the garlic and spices and stir to combine.

Next stir in the can of tomatoes, carrots, squash, apricots, and vegetable broth.

Cover and bring to a simmer over low heat for 20 minutes or until the vegetables are tender.

After the vegetables are cooked, add the chickpeas and salt and let the mixture simmer, this time without the lid, for 10 more minutes or until some of the extra liquid evaporates. Taste and add more salt if needed.

Serve over quinoa, couscous, or any cooked grain you&#039;d like, and garnish with some cilantro and a squeeze of lemon.

First, peel and dice the onion and mince the garlic. Meanwhile, heat the olive oil in a large, heavy-based saucepan over medium heat.

Once hot, add the onion and sauté until soft (4-5 minutes). Meanwhile, peel and slice the carrots and dice the potatoes and sweet potato into ½-inch cubes.

Stir in the garlic and all the dry spices and sauté until fragrant (1-2 minutes).

Add the diced tomatoes and vegetable broth and stir well. Then add the potatoes, sweet potato, carrots, and dried lentils and stir again.

Bring to a boil, then immediately reduce to medium-low and simmer for 20 minutes.

Add the chickpeas and tomato paste and continue to simmer for 5-10 minutes or until the potatoes are tender. If using, add the chopped dried apricots now.

Try it and adjust any of the seasonings to taste.For a thicker stew, add more tomato paste OR combine ½ tbsp cornstarch with 1 tbsp water into a slurry and stir into the stew, increasing the heat and stirring constantly. However, the stew will thicken naturally over time.

Transfer to bowls, optionally garnish with fresh parsley or cilantro, and enjoy!

Excellent. I did not have coriander, but had the rest. I used cayenne instead of red pepper flakes as that is easier on my palate. I served along side jasmine rice and arugula as well as naan bread. Used dates I chopped instead of apricots since that’s what I had.
