Instant Pot Mujadara

brown lentils (do not split lentils) see notes

Place lentils in a bowl and cover with hot tap water (or boiling water), letting them soak until time to add to the instant pot.

Set Instant Pot to Saute function. Saute shallots in the oil, 4-5 minutes, stirring constantly,  until tender and fragrant and slightly caramelized. Remove half, saving for the topping. Add the garlic and saute until fragrant, about 1-2 minutes. Add all the spices, salt, lemon zest and water. Stir. Drain the lentils and add them along with the rinsed rice to the instant pot.  Give a good stir.

Cover the instant pot and set to Normal Pressure, High for 11 minutes. Let naturally release for at least 10 minutes.

In the meantime, prep any garnishes you like.

To serve, gently fluff the Mujadara with a fork (do not over mix, or it will get mushy ).  Divide among bowls, drizzle with olive oil, add tomatoes, avocado, caramelized shallots, sprouts, a spoonful of yogurt or zhoug yogurt, or tahini sauce &#8211; and fresh parsley or mint.

Feel free to serve with other seasonal veggies ( roasted root veggies, shredded cabbage or carrots, etc).

Mujadara is a Middle Eastern lentil rice dish served with flavorful caramelized onions that were fried in olive oil. This simple dish is naturally vegan, made with just pantry ingredients so it&#039;s incredibly frugal, and it&#039;s ready in just 30 minutes!

Mujadara

(200 grams) brown or green lentils (dried)

baharat (optional)

bay leaves

water

(175 grams) long rice

olive oil

salt

black pepper

Soak the rice in water, and wash the lentils.

Add the lentils to a pot, cover with water (for 1 cup of lentils, add 3 cups of water). Season with ground cumin and baharat if using, and throw in a couple of bay leaves.

Cover the pot with a lid, bring to boil and simmer for 5-15 minutes. The time varies depending on what kind of lentils you&#039;re using, so you have to keep checking every 5 minutes until the lentils are almost cooked but still firm.

When the lentils are looking fine, add the rinsed and drained rice, and add more water just to cover the rice (I can&#039;t give you the exact measurement as it depends on how much of the water evaporated as you cooked the lentils, so use your best judgment - I needed to add just ½ cup of water).

Season with salt, and pepper. Cover with the lid, bring to a boil, then reduce the heat to the lowest possible and cook for 10-12 minutes.

In the meantime, caramelize the onions (see instructions below).

Remove the lid, and check if all of the water has evaporated, and that the rice is cooked. If it needs to cook further, add a splash of water and cook for longer.

When the mujadara is done, remove the lid, give it a quick stir then stir in half of the caramelized onions. Keep the rest of the onions for serving.

To a skillet or a non-stick pan, add 3 tablespoons of olive oil. Heat it on medium heat, then add the onions. Fry them for 10-15 minutes or until the onions have lost their structure, got a caramel color, and started crisping up slightly.

You have to be super patient, and not step away from the stove. Keep stirring regularly so that the onion slices are cooked evenly.

To caramelize the onions

Rinse the lentils, and add them to the Instant Pot stainless steel insert with 2 cups of water, season with ground cumin and baharat if using, and throw in a couple of bay leaves. Secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 2 minutes at high pressure, when cooking time ends quickly release the steam.

Remove the lid and add the rinsed and drained rice, olive oil, salt, and pepper. Add water just to cover the rice and lentils (not more!).

Secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 4 minutes at high pressure. The Instant Pot will take around 6-7 minutes to come to pressure and start cooking.

When the cooking program ends, allow the steam to be naturally released for 15 minutes, then release the rest of the steam manually. Carefully remove the lid, fluff with a fork and mix in the caramelized onions.

In a large pot, sauté the diced red onion and minced garlic in 1 tablespoon of olive oil until translucent, about 5 minutes.

Add the water, green lentils, and salt to the large pot. Bring to a boil.

Cover with lid and simmer for 10 minutes.

To make the caramelized onions, heat a tablespoon of olive oil over low heat and add the onion slices, stirring occasionally until completely soft, dark brown, and caramelized.

NOTE: This will take about 30 minutes. The onions should become very dark and tacky when finished. Stir often to avoid burning.

Add the rice, cumin, cinnamon, and bayleaf to the lentils. Stir.

Cook covered for about 15 minutes, or until rice is cooked.

Serve lentils and rice topped with the caramelized onions, chopped fresh parsley, lemon wedges, and Greek yogurt if desired.

This is a household staple. We make it without oil by sautéing onions with water!

Yum! I just made this and am enjoying right now with your tahini sauce. I used a red onion instead of shallots and increased the lentils by 1/2 c (and water too) to finish up my bag. I'll definitely be coming back to this recipe again!

Instant Pot Mujadara Recipe Lentils and Rice

Instant Pot Mujadara (Mujaddara) - A signature Middle Eastern dish made with lentils and rice and garnished with crispy fried onions! It is gluten-free, vegan and one of the most comforting one pot meal! It is one of the favorite Vegetarian side dishes and it is a protein-rich filling meal.

Basmati Rice

Coriander seeds

Cumin seeds

Salt

Water

Wash and Soak the Brown/green lentil at least 5 hours or overnight in hot water.

Wash and Soak Basmati rice for 30 minutes.

Coarsely grind the Coriander seeds, cumin seeds, garlic, and green chilies either in mortar and pastel or in a mixer grinder. Keep this masala paste aside.

Turn on the Saute mode, add diced onion, crushed Masala paste, soaked lentil, soaked rice, water and salt.

Cover the Instant pot with locking lid, vent valve on sealing position set the timer for 6 minutes under high pressure.

Once 6 minutes is done, let the pressure release naturally for 10 minutes and then quick release the remaining pressure.

Open the lid, add fried onions and cilantro. Fluff the rice with a fork.

That's it! Instant pot Mujadara is ready to devour!

Enjoy it with Yogurt and some salad on the side. Goes well with Tzatziki sauce too.

The main flavor comes from the fried onions. Fried onion gives a beautiful depth in color and in taste.
Though the recipe is Middle Eastern, you don't need to take an extra trip to Middle Eastern store to get the ingredients. 
The ingredients are very simple and easily available from your pantry or can be found at any local supermarket.
Instant Pot Mujaddara recipe is made with Rice, Lentil, couple of spices and onions. I made this one-pot vegan meal with white basmati rice.
But you can make it with Brown rice, quinoa or even with wild rice.

Emma Galloway's Tomato Pilaf with Black Lentils & Caramelised Onion

black (beluga) lentils,

tomatoes (I like to use cherry), finely chopped

white basmati rice, rinsed & drained well

fine salt, to taste

Place lentils into a small saucepan, cover with water and bring to the boil. Reduce heat and simmer for 15–20 minutes, or until just tender. Drain and set aside.

Heat a large heavy-based frying pan over medium heat. Add oil and garlic and cook for 30 seconds, before adding chopped tomato. Cook, stirring often, for 3–4 minutes, or until soft and juicy. Add rice and stir then add water and a good pinch of salt.

Bring to the boil, cover with a lid, reduce heat to low and cook for 15 minutes. Remove from the heat and set aside with the lid on for a further 10 minutes.

To make the caramelised onions, as soon as your rice is happily cooking away, heat oil in a large heavy-based frying pan over medium-high heat. Add onions and cook, stirring often, for 20–25 minutes or until deeply golden, taking care in the final 5–10 minutes to ensure the bottom doesn't catch and burn. Season with salt. These can be prepared in advance and will store in a glass jar in the fridge for up to 3 days.

When the rice is cooked, remove the lid, stir through lentils, adjust seasoning if needed and serve topped with caramelised onions and chopped coriander.

This Mujadara is super easy to make with simple ingredients that you might already have on hand. It is full of flavor, packed with the right texture and naturally vegan.

Mujadara: Lentils and Rice with Crispy Onions

black lentils,

water, divided

yellow onions, diced (4 cups)

tsp kosher salt, more to taste

Parsley or parsley flakes

Place the lentils in a small saucepan with 2 cups of the water. Bring the water to a boil over high heat, and then reduce the heat and simmer, cover until the lentils are par-boiled (10-12 minutes). Remove from the heat, drain the lentils and set them aside.

In a large saute pan with a lid, heat the oil over medium-high heat. Add the diced onions and cook until the onions are dark golden brown, darker than typical caramelized onions (about 40 minutes), sprinkle the onions with a teaspoon of salt as they cook.

Carefully pour the remaining 2 cups of water, bring the water to a boil over high heat, and then reduce the heat to low and simmer for 2 minutes. Stir the rice and par-cooked lentils into the onion mixture. Cover and bring back to a boil. Stir in a healthy pinch of salt and the black pepper. Reduce the heat to low, cover, and cook until the liquid has been absorbed and the rice and lentils are both cooked through (about 20 minutes). Remove from the heat and season with salt and pepper to taste. Serve the Mujadara hot or at room temperature with a drizzle of extra virgin olive oil and parsley garnish, if you like.

If you are adding the the fried onions, heat the oil over medium-high heat (to 375 degrees F) in a saucepan. When a small piece of onion bubbles vigorously, the oil is ready. Fry the onions in batches until they are golden brown. Transfer the onions to a paper towel-lined plate or try, and then arrange them on top of the Mjuadara.

Add a side of salad like fattoush, if you like. Enjoy!

We loved the mujadara!  I think the crispy onions added quite a bit of flavor.  I garnished the dish with pomegranate arils for color and flavor and used a bit of sumac with the Greek yogurt. Thanks for a great recipe.
