Mushroom gnocchi is a deliciously rich &amp; creamy dish, perfect for an easy meatless meal!

Creamy Mushroom Gnocchi

gnocchi (17.6 oz (or 1 recipe homemade gnocchi))

butter

onion (diced)

garlic (minced)

mushrooms (sliced)

dry white wine

chicken broth

cornstarch

heavy cream

⅛ teaspoon dried thyme leaves (or 2 sprigs fresh thyme)

parmesan cheese (fresh grated

parsley

Heat butter in a large skillet over medium heat. Add onion and garlic and cook until softened, about 3 minutes.

Stir in mushrooms and cook for an additional 5 minutes or until mushrooms are tender.

Add white wine and simmer until it has almost evaporated.

Mix chicken broth with the cornstarch. Add chicken broth, cream, and thyme to the pan with the mushrooms. Simmer for 5 minutes or until reduced by half and slightly thickened.

While sauce is simmering, cook gnocchi according to package directions. Drain well but do not rinse.

Add parmesan cheese to the sauce stir. Add gnocchi and simmer 1 minute. Remove from heat and rest 2-3 minutes before serving.

Garnish with parsley and additional parmesan cheese if desired.

Mushroom Gnocchi with Blue Cheese Sauce

olive oil

white button mushrooms (quartered)

portobello mushroom caps (6 ounces, chopped)

salt and black pepper

thinly sliced shallot or red onion

garlic (thinly sliced)

thyme (or 1 teaspoon dried)

dry white wine (vegetable stock

store-bought potato gnocchi

blue cheese*

Parmesan cheese

Italian parsley

Put the oil and the mushrooms in a large (12-inch) nonstick skillet over medium-high heat.

Cook undisturbed until the mushrooms begin to release their liquid, then add 1/2 teaspoon salt and black pepper to taste, stirring the mushrooms around the pan. Continue cooking until they're softened and begin to take on some color, about 5 minutes.

Stir in the shallot, garlic and thyme and cook for a minute or until the garlic is fragrant.

Add the gnocchi and fry for one minute, stirring to coat with the oil.

Add the wine, stock or water to the pan and let it bubble for 15 seconds. Pour in the cream and bring to a simmer. Lower the heat to medium, cover and cook 5 minutes.

Remove from the heat and add the cheeses and parsley. Taste for seasoning and add more salt and pepper to taste. Serve hot.

Sheet Pan Asparagus Mushroom Gnocchi Recipe

Preheat the oven to 450 degrees F.

On a sheet pan, toss the gnocchi, mushrooms and garlic with 2 tablespoons olive oil, salt and pepper. Spread into a single layer. Place the lemon halves cut-side down on the sheet pan. Roast for 15 minutes

Scatter the asparagus on the pan and continue roasting for 8-10 minutes until the mushrooms are browned, the gnocchi is cooked through and the asparagus is bright green.

Carefully squeeze the garlic cloves out of their skins into a large bowl. Use tongs to squeeze in the juice from the lemon. Whisk in 1 tablespoon olive oil and mash everything together with a fork. Spoon the gnocchi, mushrooms and asparagus into the bowl, gently stirring to combine.

Fold in parsley and Parmesan before serving.

Sent this to my husband( who rarely cooks)  to make for dinner and it was amazing! So simple but delicious!

The roasted lemon and garlic make this a divine dish!
I added some roasted red pepper.

This was delicious and so simple ! We served it with grilled sliced steak !  Elegant ,simple dinner !

It doesn't get better than a 30-minute meal that only requires 10 ingredients. And that describes this sheet pan asparagus mushroom gnocchi. The vegetables involve minimal prep, and the recipe calls for packaged gnocchi, one of my favorite pantry staples for easy dinners. It also has roasted garlic and lemon.
