Soul-Warming Hungarian Mushroom Soup

salted butter

white onions, chopped

lb. mushrooms, sliced (use crimini, button, etc.)

dill weed

EACH: dried thyme AND dried mushroom powder (optional)

EACH: sweet paprika AND lemon juice

garlic, grated

chicken stock (or vegetable)

soy sauce

all-purpose flour

half and half (or whole milk)

SAUTE: In a dutch oven or soup pot, saute the onions and mushrooms in the butter over medium heat for 5 minutes. Then, season with dill, thyme, and paprika and allow the mushrooms and onions to continue cooking for an additional 7-10 minutes, stirring often. Sprinkle the grated garlic and mushroom powder 30 seconds before the mushrooms are done.

WHISK: Then, slowly pour in the chicken stock, soy sauce, and lemon juice and scrape the bottom of the pot to loosen anything that might be stuck on. Allow the soup to gain a simmer and then let cook and reduce for 5 minutes. While the soup is reducing, whisk together the milk and flour in a small bowl until smooth (you can also just shake it all in a mason jar.) Then pour the mixture into the soup and continue to cook the soup for 8-10 minutes, or until the soup thickens, stirring as required.

FINISH: Remove the soup from heat. Stir the soup while you add in the sour cream slowly and allow for it to mix. Sprinkle with parsley to finish and serve warm with grilled bread rubbed with a clove of cut garlic!

Umami Seasoning

mushrooms

onion (or onion powder)

mustard powder

salt

red pepper flakes

black pepper

thyme

Add the dried mushrooms to a high-powered blender, spice grinder or food processor and blend for 5-10 seconds, or until it turns into a fine powder.

Add the granulated onion, mustard powder, salt, red pepper flakes, black pepper and thyme to a bowl with the mushroom powder.

Stir to combine all of the ingredients.

Cover and store in an airtight container in the pantry for up to 6 months.

Make your own mushroom seasoning! Use it to add a deeper flavor to soups, broth, stir-fries, or marinades!

How to Make Mushroom Seasoning

Add the ingredients to a blender. Place the dried shiitakes and salt into the bowl of a high-speed blender.

Blend. Blend for 30-40 seconds or until you get a very fine powder. Be aware that the mushroom powder is very fine and light, a bit like powdered sugar. So, after blending, I highly recommend waiting for a couple of minutes before opening the blender lid for the powder to settle a bit.

Transfer to a container. Finally, transfer the mushroom seasoning to a clean glass container or jar.

Use in broth, soups, marinades, or dips to add an umami flavor!

This mushroom powder can be stored for up to 12 months in an airtight container at room temperature. Do not refrigerate it, otherwise it might clump and grow mold because of the humidity.

I had some dried Oyster Mushrooms and added them too. It's so good on it's own, I haven't added the salt. I'm going to make some spice mixes with it and salt will go in those. It's a lovely Gold color.

This is awesome-and super easy. Just made a batch to keep on hand for the next dish!

query: I have a recipe calling for 4 dried shitakes and all I have is my powder... How can I use the powder as a substitute? I know to reduce the salt but how much powder is equal to 4 dried shitakes?

For flavor only, you can take a mushroom oil.

However, even champignons are recommended to be cooked as just any mushrooms ever.

Hi. theoretically the mushroom powders along with their qualities should not be used if not fermented, not cooked or not hot water extracted. Otherwise, their use seems to be senseless due to the chitin wall that makes them indigestible.

I would like to hear more apropos of this side of the issue.
