Use a vegetable peeler to peel the yellow squash into ribbons. Add the squash to a large bowl.

Add 1 teaspoon salt, 1 teaspoon pepper, the garlic powder, onion powder, and 1 teaspoon oregano, and toss well until the squash is coated. Set aside.

Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and cook for 5 minutes, until fragrant.

Add the ground chicken, the remaining teaspoon salt, remaining teaspoon pepper, remaining teaspoon oregano, and the thyme, and cook until chicken is lightly golden brown.

Add the crushed tomatoes, stirring to break up, and cook for 15 minutes, or until the sauce has reduced. Remove from the heat and set aside.

In a medium bowl, combine the ricotta, Parmesan, and eggs and whisk until smooth.

Grease a 9x13-inch (22x33 cm) casserole dish with cooking spray.

Spread about ¼ of the ground chicken and tomato mixture in the bottom of the dish. Top with about ¼ of the squash noodles and ⅓ of the cheese mixture. Repeat with the remaining ingredients, finishing with a layer of noodles

Bake for 30 minutes, or until the cheese is browned and melted.

OK, what's the verdict: Which makes a better bun?

Heat grill to medium-high. In a large bowl, combine ground beef and Worcestershire and season with salt and pepper. Form into 4 patties.

Grill patties, pineapple, and red onion until charred, 3 minutes per side. Top burger patties with pepper jack and cover grill to let melt, 1 minute.

Top bottom pineapple buns with lettuce, burger patties, bacon, and grilled onions, then top with pineapple bun.

If on keto... it is not very keto friendly so watch out. Slices of pineapple can range from 7 to 22grams depending on the diameter and thickness of the slice. So be careful all with this!

Lutein and astazanthin plus a lot of the important mineral nutrients in the green onions that are double what is found in red, yellow or white onions. This includes iron, magnesium,  potassium, calcium, Vitamin C, as well as all the other nutrients in the green onions that are missing in the other onions or far less content in the red, white and yellow cooking onions.  Everything we add to our recipes either contribute nutrition or don't so I am interested in making my health better with green onions.     .

tbsp extra virgin olive oil

lb medium sized shrimp

lime juice

cilantro leaves, washed and chopped

tsp salt

Heat the olive oil in a large skillet over medium high heat. Stir in the garlic, sautéing it for about 30 seconds. Add the shrimp, stirring to coat, and cook 2-3 minutes per side- or until the shrimp's cooked through.

Transfer the cooked shrimp to a bowl. Add in the remaining ingredients, tossing the shrimp to coat evenly.&nbsp;

Serve the shrimp immediately, or cover the bowl with cling wrap, refrigerate, and serve chilled.

Quick and easy protein packed Thai Basil Tofu (Tofu Pad Krapow), made with just few ingredients  and packed with tremendous flavors.

Thai Basil Tofu (Tofu Pad Krapow)

oz High Protein Organic Super Firm Tofu (I get mine from Trader Joes)

Salt

¼ tsp Black Pepper

tbsp Corn Starch

tbsp Avocado Oil (any choice of cooking oil)

Garlic

Thai Basil

tbsp Light Soy Sauce

tbsp Dark Soy Sauce

tbsp Vegetarian Oyster Sauce

tbsp Organic Raw Cane Sugar (or palm sugar)

Water

Remove any water from tofu and pat dry it. Crumble it in small pieces, do not mush it.

Coat crumbled tofu with ¼ tsp salt, ¼ tsp black pepper powder and 2 tbsp of corn starch. If baking, lay it flat on a greased baking pan and spray oil on top.

Bake it on 425℉ for 25 min. Toss tofu couple of times during baking step so that it is baked evenly from everywhere. Once done, keep it aside.

If pan frying, cook tofu crumbles in a greased pan until all the moisture is gone and tofu starts to firm up with deeper color. Once done, keep it aside.

Bake Tofu (or simply pan fry)

Once tofu is baked/cooked, heat up 2 tbsp of oil in wok.

Once hot, add in chopped thai red chili and garlic along with finely chopped red onions/shallots. Saute on medium heat for a minute or more, until raw smell of garlic is gone. DO NOT BURN IT.

Once sauteed, add in baked tofu, mix well and cook for a minute or two on medium heat.

Mix all the sauces mentioned above in a separate bowl, pour it over tofu in the wok. Take 2 tbsp of water in the same bowl you mixed sauces in to wash off remaining sauces and add it to the wok. Mix really well.

Once sauce is mixed, cook for a minute on medium heat. Then add in chopped thai basil (or add in whole if you like). Mix well and cook for a minute or two until the basil is wilted.
