Use rye flour to make an easy sourdough starter with a deep molasses flavour. Once active, you can use it to make any type of sourdough bread

Rye sourdough starter

wholemeal rye flour

Day 1: To begin your starter, mix 50g flour with 50g tepid water in a jar or, better still, a plastic container. Make sure all the flour is incorporated and leave, covered with a tea towel, at room temperature for 24 hrs.

Day 2: Mix 25g flour with 25g tepid water and stir into yesterday’s mixture. Make sure all the flour is incorporated and leave, covered with a tea towel, at room temperature for 24 hrs.

Day 3: Today you might see a few small bubbles forming and the mixture should smell grassy and a little acidic. Mix 25g flour with 25g tepid water and stir into yesterday’s mixture. Make sure all the flour is incorporated and leave, covered with a tea towel, at room temperature for 24 hrs.

Day 4: More bubbles should have appeared today and the mixture should smell of yeasty beer. Mix 25g flour with 25g tepid water and stir into yesterday’s mixture. Make sure all the flour is incorporated and leave, covered with a tea towel, at room temperature for 24 hrs.

Day 5: Fermentation should have set in now and the mixture might be ready to use. If a teaspoon of the starter floats in warm water, it’s ready. If not, mix 25g flour with 25g tepid water and stir into yesterday’s mixture. Make sure all the flour is incorporated and leave covered, with a tea towel, at room temperature for 24 hrs.

Day 6: The mix should be really bubbly and be giving off a strong smell of alcohol. Test in the same way as yesterday. If it’s not ready, continue mixing 25g flour with 25g tepid water into the mixture daily until it becomes active. If your jar is becoming full, spoon half the mix out of the jar and continue. You now have rye starter, which is a malty flavoured base to sourdough bread. Keep it in the fridge (it will stay dormant) and 12 hrs before you want to use it, spoon half of it off and feed it with 100g flour and 100g water. Leave it at room temperature and it should become active again. The longer the starter has been dormant, the more times it will need to be refreshed – the process of pouring off half the starter and replacing it with new flour and water – to reactivate. Use the starter to make rye sourdough bread.

This beer pizza dough comes together in less than 30 minutes and makes a soft, airy crust that stands up to any combination of toppings.

In a large bowl, stir together the flour, baking powder, and salt with a wooden spoon, whisk, or dough whisk. Pour in the beer and continue mixing until a sticky dough forms and begins to pull away from the sides of the bowl.

Dust a work surface generously with flour. Scoop the dough onto your work surface and knead it until it is smooth and elastic and no longer sticks to your hands, sprinkling with more flour as needed. Divide the dough into 2 equal pieces and form each one into a ball. Cover the dough balls with plastic wrap or a large upside-down bowl. Let rest for at least 15 minutes or up to 2 hours before using.

Roll or stretch the dough as you would any other pizza dough, transfer it to an oiled baking sheet or floured pizza peel (if using a baking stone/steel), and top it with whatever toppings you like.

If you're using a baking sheet, bake the pizza at 500°F for 10 to 12 minutes or until the crust is golden. If using a baking stone/steel, place the stone or steel in the bottom third of the oven, preheat to 500°F or as hot as your oven can get, and then turn on the broiler. Shimmy the pizza from the peel to the stone and broil the pizza for 5 to 7 minutes, until the crust and toppings have begun to blister.

Crispy skin Malaysian roti canai flatbread with soft texture on the inside. No yeast needed. Stuffed with loads of cheese and sprinkles of spring onion. Perfect to enjoy as is, or dipped in lentil curry!

Cheese Roti Canai

bread flour ((520 g))

water ((310 ml), room temperature)

tbsp butter ((45 g), melted)

egg (, room temperature)

tbsp honey

lb shredded mozzarella ((900 g))

spring onion ((200 g))

Add all ingredients in a bowl of a standing mixer. Knead for 10 minutes and then rest for 5 minutes. Cover the bowl with a kitchen cloth. Continue to knead for another 10 minutes.

Lightly grease your hands and a container with some oil. Divide the dough into 10 pieces (3.2 oz or 90 grams each). Make into balls and place in the container. Cover tightly with a cling film and leave to rest for minimum 4 hours at room temperature. Place in the fridge if you want to keep them longer than that.

The Dough

Heat a pan with just a bit of oil, on medium heat.

Lightly grease your working surface and rolling pin with some oil. Place a ball on working surface and press into a small square with your fingers. Using a rolling pin, roll it into a bigger square that's almost twice the size of your palm.

Now with your fingers, lift one side of dough and gently pull it. Repeat to rest of the sides, and you'll end up with more or less 12 inch (30 cm) square. Sprinkle a handful of cheese on the center, followed by some spring onion.

Fold the sides like an envelope. Cook for 3-4 minutes on each side or until golden brown. Keep warm in a kitchen cloth while you continue with the rest.

This no yeast, super simple beer bread will no doubt become your favourite bread to go along side your winter meals! It's full of flavour, crisp on the outside and chewy and soft on the inside. Omg I've just made these with my husband. We added mixed herbs and paprika to the mix.
First time making them, so easy and delicious we had them with roasted red pepper dip and hummus. Thankyou for the recipe. Can't wait to make more

So easy and they turned out amazing! I didn’t roll the first one thin enough so it was a bit dense and chewy but still delicious. I will be making these all the time now!

Perfect recipe...I added some rosemary and olive olive while cooking. Delicious

They came perfect! Thank you for the recipe

OMGoodness! Amazing but addictive! Great for Gyros or any filling! Obsessed…thank u!

Bagels are great, but they are not easy to make. You need to proof the dough and blanche the bagels before baking them. And believe me, it can go wrong in many ways. This recipe requires NO YEAST so no proofing time, and you don't need to blanch, just mix and bake. Here is how its done.

Bagels without yeast

Cups All Purpose Flour

Cups Greek Yoghurt (Any fat percentage works)

Tsp Baking Powder

Salt

Large Egg (For Egg wash)

Cup Sesame Seeds (Or other toppings)

In a large mixing bowl, combine the flour, baking powder and Salt. Give them a quick whisk and go to the next step.

https://myurbantreats.com/wp-content/uploads/2021/05/Mix-Dry-Ingredients.mp4

Mix Dry Ingredients

Add the Greek Yoghurt to the bowl, use a fork or spatula and roughly combine the ingredients. When the dough becomes sticky and rough you have to start kneading by hand.

Flour your working surface, pour the dough on the floured surface, sparkle some more flour over the dough and start kneading. NOTE: The dough will be sticky throughout the whole process. Keep flouring when it gets sticky just to work with it easier. When the dough has a smooth surface we are ready for shaping.

Divide the dough in to 8 equal pieces, slightly flour and roll in to individual dough balls.

To shape the bagel, poke a hole with your finger through the dough ball, now using both hands put one finger through each side of the hole and start rolling and slightly pulling apart. You can add a second finger when the hole is big enough. Make the hole big enough as the dough will rise. Now shape any uneven parts of the bagel, place on a lined baking tray. Space adequately ( I do 5 bagels in a large tray)

bagel-shaping

Dough Preparation

In a small bowl, crack the egg and add 2 tablespoons of water. Whisk well and then brush each bagel. Sprinkle your sesame seeds or topping over the egg washed bagel. An alternative method would be brushing the bagel with egg wash and then carefully dunking it in a dish filled with sesame seeds. This will give you a more full and even cover so choose depend on how you want them covered.

bagel-topping

Add Topping

Last but not least, bake the bagel at 175 C or 340 F until golden brown. For me this takes about 12 minutes but every oven is a bit different so keep an eye on the colour of the bagel. Set on a cooling rack and enjoy once they have cooled to room temperature.

Looking for the best bagel recipe? Today I'll be showing you how to make bagels. But, they are without yeast! I have loved bagels for as long as I can remember. Actually, one of my favorite sandwich combinations is a bagel with cream cheese, smoked salmon some lettuce, and fresh spring onion (yummy). But since we moved to the countryside, bagels are not easy to come by. So I had to find a fast and easy way to make delicious bagels for my smoked salmon sandwiches. Yeast-based bagels are great but they take time to proof and I don't always have a lot of time during the day. So bagels without yeast are the perfect solution for me.

Two batches, two different results

I was going to double the recipe but stopped once I read the reviews. So I made a single batch and put it into the pan. Made the next single batch which was sticky. It didn't want to roll, it was a disaster. Was wondering if it was because I made the first a few minutes earlier when it wasn't so hot outside but I do have AC. Don't know the cause of the vast difference. I baked them in the same pan and the first batch survived. The second one spread all over into a mess. Okay fast forward and threw the messy half out. Well I was not impressed with the texture. This was a combination of cake meets biscuit which I was concerned about not having egg in it. Anyways, it's not great and it's not horrible. Just wouldn't call them a cinnamon roll and expect it to be like that.

So easy to make!

I love how easy this is to make! My family loved it!
