The quintessential Louisiana classic with andouille sausage, chicken, shrimp and oysters.

Chicken Sausage &amp; Seafood Gumbo

all purpose flour

red bell pepper (diced)

yellow bell pepper (diced)

green bell pepper (diced)

garlic (from about 3-4 large cloves)

onion

celery (diced)

cajun seasoning (recipe below)

andouille sausage

chicken

chicken stock

seafood stock (optional) ((or additional chicken stock))

okra

shrimp

oysters

parsley

smoked paprika

kosher salt ((Diamond Crystal))

garlic powder

black pepper

cayenne pepper

oregano

thyme

bay leaves

scallions

white rice

hot sauce (preferably Crystal)

Place a dutch oven or heavy bottomed stockpot over medium high heat. Add the oil and heat until very hot, oil will start to shimmer and have a moiré effect. With a wooden spoon, stir in the flour and cook, stirring constantly until the color of the roux is a deep golden brown.

Add the onion, celery,  red, yellow and green bell pepper and garlic to the roux and cook for 3-4 minutes until the vegetables are softened slightly and tender.

Stir in the cajun seasoning and cook for one minute until fragrant.

Add the chicken and sausage and cook for an additional 4-5 minutes until the sausage is fragrant and chicken is cooked on the outside.

Add stock one cup at a time, mixing after each addition, so that its well blended and bring to a boil. Reduce heat to a simmer and cook with the lid slightly askew on the pot for 1 hour.

Stir in the okra and simmer for half an hour with the lid askew on the pot, for steam to escape.

Stir in the shrimp and oysters with their liquor and cook for 5 minutes, just until the seafood is cooked through, but not over-cooked. Remove from heat. Stir in the parsley.

Ladle the gumbo into a bowl and garnish with white rice, scallions, parsley and hot sauce to taste.

Olive Salad 

olives

kalamata olives, pitted

Italian Giardiniera

pepperoncini

pickled onion

capers

garlic

lemon juice

olive oil

Drain all jarred ingredients and add to a large food processor or blender.

Add all remaining ingredients and pulse until mixture is finely chopped.

Store in airtight container and refrigerate for a minimum of 8 hours before serving (best served the following day).

Authentic Muffaletta Sandwich with Homemade Olive Salad

(8-inch) rustic round loaf of bread

(150 g) half mild, half hot genoa salami, sliced

(200 g) mortadella, sliced

(100 g) coppa, sliced

(120 g) provolone, sliced

(250 ml) black olives, chopped

(250 ml) green olives, chopped

celery,

½ shallot, finely chopped

garlic, finely minced

pepperoncini peppers, chopped with seeds in

giardiniera pickles, chopped

extra virgin olive oil

red wine vinegar

pepperoncini pickling liquid

black pepper,

Make olive salad.

Chop and mix the olive salad ingredients. Adjust seasoning with more vinegar or pickling liquid to taste.

Prep bread.

Cut the loaf in half and remove some of the crumb from both sides to make space for filling.

Spread olive salad.

Evenly spread olive salad on both bread halves.

Layer meats and cheese.

Start with mortadella, placing half on the bottom and half on the top half of the loaf. Repeat with coppa and salami, alternating mild and hot salami on each side. Finish by layering all the cheese on one side.

Wrap and rest.

Wrap the sandwich tightly and refrigerate overnight. Optionally, weigh it down to help the ingredients meld together.

Slice and serve.

Unwrap, slice, and enjoy cold, at room temperature, or wrap in foil and heat in a 350°F oven until the cheese melts (about 20-30 mins).
