Vegetarian Singapore fried noodles

100 grams/3½oz dried rice vermicelli noodles

½ medium red onion,

carrot,

Chinese leaf, green cabbage or spring greens, trimmed and thinly shredded

1–1½ tbsp sunflower or vegetable oil

chives onions

tsp medium curry powder

powder,

tbsp light soy sauce

½ tsp dark soy sauce

½ tsp sesame oil

Fancy something quick and comforting – and vegan? This flavour-packed noodle dish will do the trick, even if your cupboard is looking a bit bare. Add some stir-fried vegetables or tofu to the drained noodles for a more colourful and nutritious meal.

Quick peanut and chilli noodles

100 grams/3½oz dried wholewheat noodles

salt

peanut butter (around 3 tbsp)

tbsp grated fresh root ginger

tbsp sweet chilli sauce

tbsp tamari or soy sauce

lime, juice only

spring onions, finely chopped

tbsp roasted salted peanuts, finely chopped (optional)

A great chicken noodle soup recipe for using up leftover cooked chicken. Combine with broccoli, peas or any other vegetables that need eating. Good stock is the key to this recipe, so use the best you can get your hands on.


Easy chicken noodle soup

500 milliliters/18fl oz good-quality chicken stock

garlic clove, sliced

ginger,

chicken breast

grams/3½oz egg noodles

broccoli peas

2–3 tsp reduced salt soy sauce

spring onions, trimmed

chilli or sesame oil (optional)

A traditional Chinese noodle favourite that combines sweet, salty and spicy flavours for a power-house of a meal.

Spicy Sichuan (dan dan) noodles 

pork mince

soy sauce

225 milliliters/8fl oz groundnut or vegetable oil

tbsp finely chopped garlic

tbsp finely chopped root ginger

tbsp finely chopped spring onions

tbsp sesame paste, tahini or peanut butter

tbsp chilli oil

225 milliliters/8fl oz chicken stock

red hot chilli, seeds removed, finely chopped, for garnish (optional)
