Restaurant-level lo mein, but even tastier!

Beef Lo Mein (牛肉撈麵)

lb lo mein

beef

oz napa cabbage

oz mini sweet pepper

snow pea

green onion

oz carrot

garlic

tbsp light soy sauce

oyster sauce

0.25 tsp white pepper

cornstarch

sugar

water

tbsp oil

soy sauce

tbsp oyster sauce

tbsp dark soy sauce

tbsp sugar

0.5 tbsp light soy sauce

tsp sesame oil

Prepare vegetables

Take each piece of napa cabbage and cut the stem off with two angled cuts, like an upside-down V.

Prepare beef

Trim away any tough and stringy gristle from the beef. Cut it into smaller chunks. Then, cut perpendicular to the grain of the meat, into 1/8-inch thick slices.

Create sauce

Prepare the sauce for the stir-fry by mixing together light soy sauce, oyster sauce, dark soy sauce, white pepper, sugar, cornstarch, and water.

Parboil noodles

Stir-fry beef

Heat your wok on high. While the wok heats up, add oil to the marinated beef and give it a quick mix.

Plate & serve

Scoop everything out onto a large serving dish, and enjoy!

Boil the egg noodles:

Boil the egg noodles: Fill a large pot halfway full with water and then add about a tablespoon of salt. Now, bring the water to a boil, add the egg noodles, and cook them for about 5 minutes. 

Reserve cooking water and drain:

Reserve cooking water and drain: First reserve about 1 cup of the pasta water. Then drain the noodles using a colander and set them aside.

Melt the butter:

Melt the butter: Add the salted butter to the same pot you cooked the noodles in and melt it over medium heat. Then add about half of the reserved noodle water and stir to combine.

Add the noodles, cheese, and parsley:

Add the noodles, cheese, and parsley: Add the cooked noodles to the butter mixture along with the Parmesan cheese, and fresh chopped parsley. Then stir to combine. If the noodles are dry add more reserved noodle cooking water a little at a time as needed. Once you have reached your desired consistency, taste the buttered noodles and season with salt and freshly ground black pepper to taste.

Garnish and serve:

Garnish and serve: Transfer the buttered noodles to your favorite serving dish and then top with more grated Parmesan cheese and fresh chopped parsley. This dish is best served warm right after being cooked.  

Slumgullion (also known as American Goulash, American Chop-Suey, or Beefaroni) is a classic  -and incredibly cheap - comfort meal. In a large non-stick pot, add 1 tbsp olive oil. Once hot, add in onions and saute until fragrant.

Add the ground beef, onion powder, garlic powder, oregano, rosemary, salt, pepper, and red chili flakes. Stir up the ground beef with your spatula to break it into chunks, and stir until meat is fully cooked.

Mix in the tomato sauce and bouillon. Reduce the heat to low, and mix to combine. Allow the mixture to cook for 5-7 minutes. Turn off the heat.

Add in the cooked pasta and stir the mixture to combine.

You can serve the slumgullion as is at this point, or you can mix in the cheddar cheese.

Sprinkle some chopped parsley and the slumgullion is ready to serve. ENJOY!

Cook the ramen or other noodles according to package instructions.

Heat the peanut oil and sesame oil in a large skillet over medium heat. Add the ground beef and cook until slightly browned, breaking it apart.

Add the grated ginger, minced garlic, soy sauce and dark soy sauce to the skillet and stir fry for another 15 seconds.

Add the oyster sauce, rice vinegar, cooked noodles and green onions. Stir everything together, if too dry add ¼ cup of water.

Sprinkle with red pepper flakes and serve.

spring onions ((scallions) or 2 to 3 small to medium-sized spring onions)

french beans (- thinly sliced diagonally or finely chopped)

garlic (or 3 to 4 small to medium-sized)

ginger (or 1 inch ginger)

soy sauce (or as required)

rice vinegar (or mirin or white vinegar)

First boil water in a pan with salt and oil.

Add noodles to the boiling water and cook them till they are just cooked or al dente.

While noodles are cooking, rinse and chop the vegetables.

Once noodles are cooked al dente, drain them in a colander or sieve.

Then rinse noodles in fresh water by placing the colander or sieve under fresh tap water.

Drain all the water and set aside.

Cooking noodles

Heat oil in a wok or pan.

First add the garlic and ginger and stir fry or sauté on low to medium-low heat for some seconds.

Increase the heat to a high and add the chopped spring onions.

Keep on stirring continuously and stir fry the onions till they become translucent.

Add the veggies - carrots, capsicum and french beans.

Continue to toss and stir fry on a high flame till the veggies are almost cooked.

Use a pan with handles as its better to lift it while tossing.

You can also decrease the flame if the heat becomes too much too handle and then stir fry the veggies on a medium flame.

Some crunch should be there in the vegetables, so don't cook the vegetables till they become completely soft.

Add the soy sauce, celery, salt and pepper. Mix well.

Add cooked noodles. Keep on tossing and stirring till the veggies are mixed well with noodles for a minute or two. Switch off the heat.

Check the taste and add more salt, black pepper or soy sauce if required to the stir-fried veg noodles.

Making veg noodles

Serve the veg noodles hot or warm as it is or with some black bean sauce or tomato sauce.

You can also enjoy this Chinese style veggie noodles with Veg Manchurian, Gobi Manchurian, Chilli Paneer or Paneer Manchurian.

Serving suggestions

If there are any leftovers, store it in an airtight container in the fridge for 3 to 4 days and enjoy as a quick lunch.

Spicy Garlic Shiitake Noodles

tsp grated ginger

eggs (soft-boiled)

tbsp sesame seeds (for serving)

scallions (finely chopped, more for serving)

tbsp toasted sesame oil

tomato paste

mirin (or 2 tbsp rice vinegar)

tsp sambal oelek (more if you like it super hot)

Combine the ingredients for the sauce in a small bowl.

Add water to a small sauce pan, once boiling, add eggs, boil for 6 minutes. Run under cool water, set aside.

Cook the noodles according to package directions until just al dente. Drain, reserving 1/2 cup cooking water, and run the noodles under cool water to stop the cooking.

In the meantime prepare the shiitakes: In a large skillet, heat the oil until shimmering over high. Add shiitakes, cook for 4-5 minutes, stirring occasionally. Lower the heat, add garlic, ginger, chili flakes and Sichuan pepper. Cook for 2 minutes. Add butter, stir until it melts. Stir in scallions and season with black pepper.

Add the sauce, bring to a boil and simmer for 2 minutes. Stir in noodles and 1/4 cup water. Simmer, tossing occasionally, until sauce begins to cling to noodles, about 30 seconds.

serving

Divide noodles among plates, top with a soft-boiled egg, sesame seeds and chopped scallions. Add more sambal if you can handle the heat, enjoy!

Kinda too salty and we used low sodium soy sauce. Would probably add more ginger next time as well. But everyone ate it! And the eggs were spot on!!

This came out really good! I used coconut aminos instead of soy sauce as I wanted my dish to be gluten and soy free. I also used gluten free udon noodles. It tastes great and I have some left over for lunch during the week. Thanks for the recipe!

This is legit the first time I ever comment on a recipe and I'm only doing it cause the first review it's very unfair. The recipe is fantastic! unfortunately I cannot find Sichuan peppercorns here, but I add some kechap manis sauce and any veggies I have (round green beans pair very nicely ) and I usually fry the egg.
I jut think that the recipe is a good base and then you go on and make adjustments according to your taste and available ingredients. Keep up the good work!

This recipe was wonderful! We replaced oyster sauce with fish sauce because we didn't have oyster sauce and it worked really well! I'm really happy with the flavor - spicy enough to make your nose run a little (but you can of course make it less spicy if you want) - but not spicy enough to not taste the flavor. Great recipe!

Loved this!! Very flavorful and delicious recipe. I made this exactly as the recipe says and it was great. Not too salty in my opinion (as a previous reviewer said) I think it's helpful to make sure you're using dark soy sauce and not light soy sauce because light soy sauce tastes saltier (if you are using light soy sauce I'd probably half the amount). I will be stretching the leftovers out with some bok choy for lunch!

This was outstanding! Threw in some thinly sliced steak, and didn’t have any Sichuan peppercorns handy, but otherwise made it exactly as directed. Super flavorful sauce, especially with a little extra sambal (the fam likes it spicy). Definitely will be making again- often!

I've been looking for that take-out flavor and texture in a recipe that is easy, but doesn't skip what makes it good. This is that recipe. Given, I did use a different noodle (soba) that wasn't the best choice, but everything else was in place perfectly. The sauce was a little thicker, slightly spicy and had amazing flavor. Loved that I can make this meatless with the mushrooms and even added some green beans I needed to use. I love the versatility to it and appreciate the solid foundation that gives everything you need to build on. Will be making this over and over again and so thankful I found this recipe!
