Easy Gimbap (or Kimbap) recipe for a fast meal on a busy day or weeknight. Kids love it too!

Gimbap Recipe

nori

brown rice

standard sausage ((you can use a hot dog too!))

Lay down the nori, spread the rice on and add the meat.

Roll it up like a carpet and serve sliced or whole.

Make these easy nori wraps for a light lunch or snack! They&#x27;re just as good as sushi, but they take half the effort.

Nori Wraps

white rice (or brown rice)

rice vinegar

cane sugar

tamari

lime juice

cucumber

mango

avocado

pickled ginger

sesame seeds (for sprinkling)

mayo

sriracha

umeboshi paste

tofu

basil leaves

microgreens

Fold the rice vinegar, sugar, and salt into the hot cooked rice. Cover until ready to use.

In a very small bowl, combine the tamari and the lime juice and set aside to use as a dipping sauce.

Make the spicy mayo: In a small bowl, stir together the mayonnaise and the sriracha.

Serve the nori squares, rice, cucumber, mango, avocado, pickled ginger, sesame seeds, and desired extras, on a platter to assemble as you eat, mixing and matching fillings as you like. Serve with the tamari-lime dipping sauce and spicy mayo.

Nori Wraps with Canned Tuna

nori sheets

canned tuna

mini cucumbers (or English cucumber, thinly sliced to rounds)

eggs

avocado (thinly sliced)

Sriracha (or Frank's original hot sauce

Mayo (optional)

Furikake (or toasted sesame seeds, optional)

Prep

Prepare all your ingredients before taking out the nori sheets. Use 2 sheets per wrap.  Gently fold them twice to make 4 square marks. Cut a slit to the middle of the nori sheets.

Add the food, starting from the bottom left corner and clockwise, with avocado, cucumber, canned tuna, and boiled eggs. Place the food in an even layer and try not to overload. Add the sriracha, mayo and furikake, if using, on top of the tuna.

Fold

Carefully lift the bottom left corner to fold the avocado over the cucumber and press gently to help them adhere.

Fold the top left corner to top right corner.

Then fold again to get one square shape wrap.

Eat them right away & here’s how - with a tray under, carefully lift the wrap up with two hands and take a big bite! It might get a bit messy as some items might fall out ...just like when you eat tacos but it won’t affect the taste! Have fun and enjoy! :)
