Full of hearty oats and tangy craisins, these soft and chewy oatmeal craisin cookies are a fun twist on the traditional oatmeal raisin cookie!

Soft &amp; Chewy Oatmeal Craisin Cookies

All Purpose Flour

Old Fashioned Oats

tsp Baking Soda

Cinnamon

Butter (Room Temperature)

Brown Sugar

Sugar

Eggs

tbsp Vanilla Extract

Craisins

Preheat

In a large bowl, mix together the flour, baking soda, cinnamon, and oats together.  Set that aside.

Beat

In the bowl of a stand mixer fitted with the paddle attachment, add the butter and sugars. Mix for 2 minutes until light and fluffy.

Add the eggs, one at a time, beating in between each addition.

Vanilla

Add the vanilla extract and beat again.  Scrape down the sides of the bowl and beat again.

Slowly, add the flour and oat mixture to the bowl of the stand mixer.  Mix until all the ingredients are combined.

Add the craisins to the stand mixer and mix one more time.

Scoop

With an ice cream scoop, or a spoon, scoop the cookies out and place them on a silicone or parchment lined baking sheet.  Flatten the cookies if you prefer a thinner cookie.

Bake

Place the baking sheet in the oven for 10-12 minutes or until the cookies are lightly browned and cooked through.

Cool

Place the baked cookies on a wire rack and allow them to cool before serving.

These oatmeal cookies are chewy and yummy. They include old fashioned oats, craisins, and cinnamon.

Oatmeal Craisin Cookies

unsalted butter (browned)

all purpose flour

tsp baking soda

cinnamon

salt

sugar

brown sugar

eggs

tsp vanilla extract

½ cup quick oats

cranberry raisins

First brown your butter. Heat butter over medium high heat until it melts completely. Lower the heat to low and cook until it is a golden color and brown solids start to appear. Remove from heat and set aside.

Stir together flour, baking soda, cinnamon, and salt. Set aside.

In a large bowl, cream together the brown butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until thick and creamy.

Use a spatula to combine the wet ingredients with the dry ingredients from step 2.

Add the oats and cranberry raisins and stir until well incorporated.

Let the dough sit for 30 minutes in the fridge.

Preheat oven to 375 degrees F (190 degrees C).

Cover 2 baking sheets with parchment paper. Use a 3 (1.5 oz) tablespoon ice cream scoop to scoop cookie dough onto the baking sheets. Cookies should be 2-3 inches apart. Sprinkle flaky sea salt on each cookie (optional).
