No-Bake Oatmeal Protein Bars

oats

almond butter

honey

protien powder

chocolate chips

Place the almond butter and honey in the microwave for about 10-15 seconds (or until softened). Mix together.&nbsp;

Mix the rolled oats and protein powder together in a mixing bowl. Add in the softened almond butter and honey. Mix thoroughly and evenly.

Mix in the chocolate chips. Place the entire mixture in an 8x8 cake pan covered with wax paper. Freeze for about 20-30 minutes.

Cut into small bars, package in sandwich bags, and take on-the-go!

No Bake Oatmeal Protein Bars

These vegan protein bars are a great post workout snack or great for a healthy energy boost. Made with no refined sugar, they are gluten-free and dairy-fee.

Vegan Protein Bars

peanut butter

dates

almond milk

vanilla extract

vegan protein powder

flaxseed

salt

Line an 8-inch square pan with parchment paper, leaving some overhanging paper on the sides. Set aside.

In the bowl of a food processor, add the peanut butter, dates, almond milk and vanilla extract. Blend until the mixture is smooth and consistent, about 1 minute.

Stop the food processor to scrape down the sides, then add the oats, protein powder, ground flaxseed and salt. Pulse a few times until the ingredients are well combined. The mixture should have a cookie dough-like texture. If it’s too dry, add a splash of milk. If it’s too wet, add more protein powder and pulse again.

Transfer the mixture to a mixing bowl and fold in the chocolate chips with a rubber spatula or your hands.

Press the mixture into the prepared pan and flatten out the top with your hands or the back of a spoon. It helps to spray your hands with oil when pressing down. Place in the freezer until it sets, about 15 minutes.

Use the overhanging parchment paper to lift from the baking pan, and slice into 8 bars. Enjoy immediately.

Soft and chewy cookie dough protein bites with a layer of gooey caramel, topped with a thin layer of dark chocolate! Each bite packs almost 3g of protein!

Oatmeal Chocolate Chip Caramel Protein Bars

oat flour

almond flour

tbsp pea protein (or use oat flour)

cinnamon

maple syrup

tsp vanilla extract

dark chocolate chips

tsp melted coconut oil (or cocoa butter)

Line a 4x7-inch pan or baking dish with parchment paper. Set aside.

In a small mixing bowl, whisk together the rolled oats, oat flour, almond flour, pea protein, and cinnamon. Stir in the maple syrup, almond butter, vanilla extract, and dark chocolate chips.

Mix until it forms a dough. It should hold together well but not be too sticky. If it&#39;s too sticky, add more oat flour, if it&#39;s too dry, add more almond butter.

Transfer the mixture to the prepared pan and press it firmly into an even layer. You may place parchment paper on top and flatten it with the bottom of a glass.

Prepare the caramel layer: Whisk together the almond butter, maple syrup, melted coconut oil, vanilla extract, and salt.

Spread the caramel on top of the cookie dough base into an even layer. Transfer the pan to the refrigerator for at least 1 hour.

Melt the chocolate chips and coconut oil over a double boiler. Once melted, pour the chocolate over the caramel layer and spread it evenly using a spatula. Refrigerate until the chocolate has hardened.

Remove from the pan and cut into about 15 small squares using a sharp knife.

Protein bars will keep for up to 2 weeks in the refrigerator or 1 week at room temperature.

Delicious recipe ! Love the caramel-ey taste. 
I downsized the amount of maple syrup and chocolate chips as I prefer desserts that are not too sweet. 
The first layer was  crumbly, I'll add coconut oil next time. I put the bars in the freezer so I could eat them before the 2 hours wait you suggested. ;)
