An easy dip bursting with olive flavor. This olive dip is the perfect combination of creamy and salty.

Olive Dip

oz block cream cheese, (softened)

sour cream

green olives

green onions, (chopped)

garlic, (minced)

olive juice

hot sauce

tsp smoked paprika

Mix together the cream cheese and sour cream using a mixer on medium speed.

Stir in the remaining ingredients until well combined.

Chill covered in the refrigerator for at least an hour, but preferably several.

This cream cheese olive dip is absolutely fantastic served up as a snack or easy appetizer with crackers, pretzels, veggie slices, or chips!

Chop olives finely.

In a mixing bowl, combine together chopped olives, cream cheese, mayonnaise, sour cream, shredded cheese, minced garlic, Italian seasoning, and olive brine.

Using a hand whisk, food processor or spoon, mix together the dip ingredients until they are well combined.

Refrigerate Olive Dip in an airtight container (or covered tightly with plastic wrap) until ready to serve. When ready, pull out of the refrigerator and serve with your favorite crackers, pretzels, or vegetable sticks.

Optional: Garnish with additional sliced olives, fresh herbs or green onions!

Process until the desired smoothness is achieved, scraping down the sides as needed. Taste test the dip and add the salt if needed. The dip can be perfectly smooth or a little chunkier, depending on your preference.

Transfer the olive dip to a serving bowl, cover and refrigerate for at least 4 hours or overnight.

Serve with crackers, chips, or fresh veggies. Optional garnish with whole or sliced olives, green onions, and parsley.

Chopped and whole olives are marinated in olive oil with onions, garlic, lemon, and herbs, then baked until warm and blistered. This savory mix is topped with fresh burrata cheese and served with toasted bread.

Herb Roasted Olives with Burrata

garlic (peeled and smashed)

rosemary

thyme

lemon (peels only)

red pepper flakes

extra virgin olive oil

2-3 balls burrata cheese (room temperature)

Fresh dill and basil (for garnish)

Preheat the oven to 450℉ and remove the burrata from the liquid and place onto a paper towel to dry.

Drain the olives from any oil or brine.

Slice or chunk up half of the olives, leaving the other half whole for a variety of shapes and sizes.

Add the olives, garlic, onion, rosemary, thyme, lemon peels, and red pepper flakes to an oven safe dish then pour the olive oil over top.

Bake for 30 minutes until very fragrant, the oil is sizzling, and the garlic is golden. Stir the olives at the 15 minute mark.

Nestle the burrata into the olives, then gently break it open to expose the center (careful not to get your fingers in the hot oil).

Top with pieces of fresh dill and basil. Serve with a spoon and toasted slices of focaccia bread, ciabatta, or a baguette.

This was SO delicious and easy! Guests absolutely loved it. I was delighted with how the olives mellowed out after baking. And the oil at the end for dipping? Phenomenal.

Made as our vacation meal appetizer. It was devoured in no time.  So easy &amp; quick - all i had to do was chop some olives and assemble. This will be my go to appetizer in future.
