This tasty and healthy light Chinese Chicken Salad comes together in less than twenty minutes using already cooked chicken. The six ingredient sweet ginger soy based vinaigrette can be prepared up to three days in advance.

Chinese Chicken Salad

soy sauce

rice vinegar

sesame oil

sugar

garlic

ginger

Napa cabbage

red cabbage

carrots

chicken breast

red bell pepper

onions

almonds

chow mein noodles or crispy rice noodles

Combine the soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and ginger in a mason jar or airtight container.  Shake to combine.

Combine both cabbages, carrots, chicken, red bell pepper, green onions, sliced almonds, and chow mein noodles in a large bowl.

Drizzle with the dressing and toss to coat.  For best results serve promptly.

Another winner! I loved the flavor and especially the crunch. Definitely a salad to eat the same day it's made so that the noodles stay crunchy. I admit  I did cheat a little and bought a bag of coleslaw mix that had green and purple cabbage, and carrots,  already shredded. Still added everything else you recommended. This Ramen Noodle Salad is a crunchy salad filled with rotisserie chicken, green cabbage, almonds, sesame seeds, crunchy Ramen noodles, and green onions.

Ramen Noodle Salad

butter

In a large skillet, melt the butter and add the ramen noodles, slivered almonds, and sesame seeds. Cook for a few minutes until everything is toasted.

In a large bowl, add the cabbage, chicken, green onions, and toasted ingredients.

In a small bowl, whisk together the oil, vinegar, sugar, flavor packets, soy sauce and sesame seed oil. Toss half of the dressing in right before serving so it doesn&#39;t get soggy. Add more as desired. Add salt and black pepper to taste.

Heat the grill to medium, or heat a cast-iron skillet or grill pan over medium heat.

Place the chicken breasts between two sheets of plastic wrap and gently pound them to 3/8-inch thick.

Brush chicken breasts with olive oil and season them with salt and pepper.

Grill chicken breasts for 5 to 7 minutes on each side, until cooked through. Transfer to a plate to rest for 4 to 5 minutes before slicing. 

Toast the almonds in a small dry skillet over medium heat. Watch them carefully—there is a fine line between toasted almonds and burnt almonds! Shake the pan gently. When you begin to smell the almonds, toast for a few seconds more, then immediately place the almonds on a paper towel. Allow them to cool for a moment or two.&nbsp;

Assemble salads by first putting the lettuce in bowls or on plates, 3 to 4 cups per serving.

Sprinkle each with 2 tablespoons of carrots, 1/4 cup crispy rice noodles, and 1/4 cup toasted almonds.

Arrange the chicken on top.

Serve with Applebee’s Oriental Salad Dressing.

I love to buy  broccoli slaw, (usually right next to the coleslaw. bagged mix), &amp; serve it with Marie's teriyaki dressing with toasted slivered almonds &amp; crunchy noodles. Yum!  It last about 3 days (if we don't eat it the same day! Try it, you'll love it ! Sometimes we eat it as lettuce wraps inside the romaine.... just an idea. Applebee's Oriental Chicken Salad Recipe

honey

rice wine vinegar

mayonnaise

dijon mustard

milk

all-purpose flour

panko

pepper

vegetable oil (for frying)

romaine lettuce (chopped)

red cabbage (chopped)

cabbage

carrot (shredded)

Blend together all dressing ingredients and refrigerate until ready to serve.

In a large saucepan, preheat oil over medium-high heat.

While that is warming up, cut your chicken breast into several long thin strips. Set aside.

Beat egg and milk together in a small bowl. In a separate bowl, combine the flour, panko, salt, and pepper. Dip the strips in the egg mixture, and then into the flour, coating completely.

When oil is hot, carefully add chicken strips and fry for 3-4 minutes or until cooked through or golden brown. Set on a paper towel to cool. Once cool, cut into bite-size pieces.

To prepare your salad, combine the romaine, red cabbage, napa cabbage, and carrots. Add chopped chicken pieces and sprinkle with almonds. Top with delicious honey oriental dressing and enjoy!

I love this salad.  I order it every time I go there (which isnt often enough).  I was thrilled when I found this, as I have enjoyed every other recipe of yours that I have tried.  I actually buzzed by and bought a cup of their dressing to do a side by side comparison.  I will admit, I doubled the sesame oil of the dressing for a bit more flavor and it comes out BETTER than theirs!

I made this for dinner tonight since it is hotter than blazes here in St. Louis today!  It was a nice refreshing meal. I did cheat a bit and bought a prepackaged salad mix that had all the cabbage, lettuce and carrots.
