Paccheri with Sausage in creamy tomato sauce is an easy yet elegant Italian pasta dish to make at home!&nbsp; Ready in 30 minutes. Great recipe to make for a family night. Large tubular pasta is smothered in a tomato cream sauce with bell peppers, garlic,&nbsp;and sausage.&nbsp;&nbsp;Paccheri has its origins in Campania, Italy, and is traditionally used in Neapolitan cuisine.&nbsp;

Paccheri Pasta with Sausage

lb Italian sausage (spicy)

tomato sauce (canned)

bell pepper (diced)

garlic (, minced)

basil (dried)

heavy cream

oz paccheri pasta

salt and pepper

In a large skillet, cook sausage on medium heat, until the meat is cooked through. Drain off fat.

Add tomato sauce, diced bell peppers, minced garlic, and basil, bring to a brief boil. Reduce to simmer and add heavy cream.

Cook paccheri pasta al dente. Drain.

Add cooked paccheri to the skillet with the sausage and tomato cream sauce.  Increase the heat, until the sauce simmers.  Season with salt and pepper.

This super simple Neapolitan recipe has only 5 main ingredients and can be made in the time it takes to boil the water and cook your pasta! A perfect vegetarian pasta recipe for week nights that all the family will love!

Mezzi Paccheri with Mushrooms and Cream

400 g mezzi paccheri ((14 ounces)

300 g mushrooms ((10 ounces)

g Parmigiano Reggiano ((2 oz) grated

g butter ((2 oz))

eggs

lt fresh cream ((8.5 floz))

parsley (as required (optional))

Clean the mushrooms and cut them into small slices or quarters. If using dried mushrooms, soak in warm water for 20-30 mins then drain and cut into small pieces.

Melt the butter in a deep frying pan or skillet on a very low flame, so that it does not burn. Add the cut mushrooms and cook for 15 minutes or so.

While the mushrooms are cooking, put one egg and one egg yolk into a bowl, with the Parmigiano and the cream beat together gently until you have a smooth mixture.

Put a pot of water on to boil for the pasta. when it starts to boil add salt and bring to the boil again. Cook the pasta al dente according to the instructions on the packet.&nbsp;

Just before the pasta is ready, add the mixture of eggs, cheese and cream to the mushrooms cooked in butter and mix ( but don’t cook it further). Add salt and pepper to taste.&nbsp;

When the pasta is cooked, drain it and add it to the sauce. Immediately, mix the sauce and the pasta together well over a low heat. You want the sauce to heat through and coat the pasta without the eggs becoming scrambled.&nbsp;

Serve immediately with a sprinkling of parsley (optional) and some more grated parmigiano.

Pasta, tomatoes and ricotta are the main ingredients in this simple but delicious Southern Italian filled paccheri recipe.&nbsp;

Ricotta and basil filled paccheri pasta with homemade tomato sauce

12-16 paccheri (ridged

500 g tomatoes ((17 ounces) San Marzano

garlic

g tomato passata ((10 oz) I prefer Cirio'rustico' which is chunkier)

extra virgin olive oil

peperoncino flakes (as required)

400 g fresh ricotta ((14 ounces))

basil leaves

Parmigiano Reggiano

Put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again.

Peel the garlic.&nbsp;Blanch the tomatoes in boiling water and peel them. Cut into smaller pieces.

Heat the olive oil in a frying pan or skillet. Add the garlic cloves. When they start to soften add the chopped tomatoes. Cook for about 10 minutes until the tomatoes soften then add the passata and peperoncino (if using).&nbsp;

Stir and simmer on a medium heat for about 15 minutes. Add salt and pepper to taste and remove the garlic when the sauce is ready.

Make tomato sauce

While the sauce is cooking, make the filling. Put the ricotta in a bowl with most of the basil torn into pieces (don’t use a metal knife on basil as it will turn brown) Mash the ricotta with a fork or use a hand held blender until the ricotta is quite creamy. Add salt and pepper to taste.&nbsp;

If your ricotta seems to have a lot of liquid, drain it through a muslin or cotton cloth before making the filling.

Make the filling

Cook the paccheri al dente and drain. Run some cold water over the pasta to stop it cooking further and to make it easier to fill. Spread some of the tomato sauce over the bottom of an oven dish.&nbsp;

Use a teaspoon or piping bag to fill each pasta tube. Then place the paccheri side by side in the oven dish on the tomato sauce.&nbsp;

Once you have filled all the paccheri, sprinkle with some grated parmigiano and bake for 10 minutes in a preheated oven at 180 until the ricotta and parmigiano start to melt. Remove from the oven and serve immediately with more of the tomato sauce.
