paleo pancakes

These are the best gluten free, paleo, fluffy almond pancakes. They are high protein and will keep you fuller  a lot longer than any other regular pancake recipe.

Super fluffy almond flour pancakes

almond flour

tsp baking powder

coconut sugar

tsp salt

eggs (at room temperature)

tsp vanilla extract

almond milk (at room temperature)

apple cider vinegar

tbsp coconut oil (melted)

First, start by mixing the dry ingredients together in a bowl. Starting with the almond flour, baking powder, coconut sugar and salt.

Then, in a separate bowl mix the whisk ingredients together. starting with the eggs, vanilla extract, almond milk, apple cider vinegar, and coconut oil.

Then pour the wet ingredients over the dry ingredients and mix just until everything is well incorporated.

Preheat an oiled pan on the stove at medium-low heat and pour about 1/4 cup of batter onto the center of the pan and let it cook for about 2-3 minutes. You will know when it&#x27;s ready to flip when little bubbles start to form on top of it.  Flip it and let it cook for another minute of so.

Everything you love about classic pancakes, made better. No gluten or grains, full of fluff.

Paleo Cassava Flour Pancakes

Cassava flour

baking powder

salt

milk, dairy

eggs

butter coconut oil

Maple syrup

In a large bowl, sift cassava flour, baking powder, and salt.

Add milk, eggs, and melted butter and mix until there are no visible lumps. Let mixture sit for 5 minutes.

In a large griddle over medium heat, melt some butter or oil. Pour 1/4 cup of batter and once it starts to bubble, flip and cook an additional minute on the other side.

Repeat process with remaining batter and serve.

I made these and they were great! I used cassava flour that I bought from nuts dot com

Again, thank you! I used coconut oil instead of butter (adds nice light coconut flavor) and  about 1 teaspoon of cinnamon and dash of vanilla.
Still experimenting --such a great recipe to play with and have an alternative other than white flour.

These turned out pretty well. I added cinnamon and vanilla and used a different cassava flour. Not as fluffy as yours looked, but still good. I tried adding blueberries during the cooking, but it worked better to just eat with. It made it hard to get fully cooked without too much browning. I suggest adding fruit as a topping instead. I loved this recipe as it is. However, one day I didn't have enough cassava flour and only one egg. So used 1 cup of cassava and a 1/2 cup of tigernut and one egg. And I actually liked it better! And that's saying a lot because I love Laura's recipe. Great fluffy, non-gluten pancakes, thank you!

These Paleo Pancakes are light &amp; fluffy, and they&#039;re made NO flour or sugar. They are the perfect recipe for a gluten-free weekend brunch, especially when you bake them!

Best Paleo Pancakes (Flourless!)

almond butter ((125 grams))

applesauce banana ((122 grams))

eggs ((100 grams))

baking soda ((2 grams))

vanilla extract ((2 grams))

Preheat your oven to 350ºF and line a baking sheet with parchment paper (not wax paper!), if you plan on baking these. In a medium bowl, combine all of the ingredients and use a whisk to mix until a smooth.

To pan fry the pancakes, grease a skillet and heat it over medium-low heat. When a drop of water sizzles on the pan, it&#039;s ready to cook the pancakes. Scoop the batter using a 1/4 cup and pour it in the center of the pan. When bubbles form in the center of the pancake, flip it and cook the other side. The pancakes are done when they are golden on both sides. Repeat with the remaining batter. You may want to lower the heat as you cook these, since the pan wil retain its heat as it cooks each pancake.

To bake the pancakes, scoop the batter using a 1/4 cup onto the lined baking sheet, to form roughly 6 pancakes. You may need two lined baking sheets, if you&#039;d like to bake these all at once. Bake for 10-12 minutes at 350ºF, until the pancakes are fluffy and golden.

Serve the pancakes warm, with your favorite toppings.

Really good! I did add a dash of salt as my almond butter was unsalted &amp; everything imho needs a little salt. Also added blueberries to the cooking pancakes as the first side was cooking to some of them &amp; those were much better to me. Added some nice sweetness. These are less heavy/thick tasting than the ones I have made in the past with almond &amp; coconut flour!

I have made these many many times!  I love them so much.  I make a batch in the oven then reheat in the toaster.  So easy!!!
