Sprinkle ¼ cup sugar on your counter in about a 9-inch square. Lay the puff pastry sheet on top. Sprinkle pastry with remaining ¼ cup sugar.

Roll pastry into a 12-inch square. Tightly roll up one edge to the center of the pastry. Tightly roll the opposite edge until they meet in the center.

Freeze for 30 minutes.

Preheat oven to 425F while dough freezes. Line a baking sheet with parchment paper or a silicone mat.

Slice frozen log crosswise into ¼-inch thick pieces. Place on the baking sheet 2 inches apart.

Bake for 8 to 10 minutes or until sugar starts to caramelize and bubble on the bottom. Flip cookies over and bake for another 4 to 5 minutes or until golden brown. Transfer to a wire rack and cool completely. Store in an airtight container for up to 1 week.

How to make Palmiers | Only TWO Ingredients!!

Utilisation des parures (chutes) de feuilletage pour réaliser des biscuits &quot;palmitos&quot; en forme de coeurs.

Petits palmiers

Pâte feuilletée maison

dorure (1 jaune d'oeuf et un peu d'eau).

Avec les parures de feuilletage retravaillées, abaissez un rectangle de pâte régulier. N'hésitez pas à couper les bords.

Passer de la dorure (jaune d'oeuf + eau) sur toute la surface de l'abaisse.

Saupoudrer ensuite la surface de sucre fin ou cristal plus ou moins généreusement selon vos goûts.

Replier ensuite le plus régulièrement possible les deux bords comme montré sur la photo jusqu'à ce qu'ils se rejoignent.

A chaque repli on ajoute sur le bord un peu de dorure et de sucre.

Lorsque l'enroulement est terminé placer le rouleau au congélateur une dizaine de minutes pour raffermir la pâte.

A la sortie du congélateur la pâte est bien ferme et peut être coupée sans s'affaisser.

Déposer les palmiers sur plaque silicone ou sur papier sulfurisé.

Sortir les palmiers feuilletés du four, les retourner délicatement et enfourner à nouveau pour 15 minutes à 150°C.

On obtient une belle caramélisation régulière.

D&amp;eacute;roulez la p&amp;acirc;te sur une surface de travail puis donnez un l&amp;eacute;ger tour de rouleau sur la p&amp;acirc;te pour la rendre un peu plus grande. Ajoutez le confit de tomates s&amp;eacute;ch&amp;eacute;es sur la p&amp;acirc;te.

Etalez le confit avec le dos d&#039;une grande cuill&amp;egrave;re ou d&#039;une spatule, en laissant un pourtour libre de 1 cm.

Commencez par rouler la p&amp;acirc;te en partant du haut, en serrant bien, jusqu&#039;&amp;agrave; la moiti&amp;eacute; du cercle.

Roulez ensuite en partant du bas.&amp;nbsp;

C&#039;est termin&amp;eacute; quand les deux boudins se rejoignent et c&#039;est ce qui va donner une forme de palmier &amp;agrave; la cuisson.

Badigeonnez la p&amp;acirc;te des deux c&amp;ocirc;t&amp;eacute;s avec le m&amp;eacute;lange jaune et lait en vous servant d&#039;un pinceau.

Faites durcir le rouleau au cong&amp;eacute;lateur pendant 30 minutes, afin de pouvoir couper facilement des tranches. Ne laissez pas durcir plus, sous peine de ne pas pouvoir couper la p&amp;acirc;te.

Pr&amp;eacute;chauffez votre four &amp;agrave; 180&amp;deg;C. Retirez les extr&amp;eacute;mit&amp;eacute;s du boudin puis d&amp;eacute;taillez des tranches d&#039;1 cm d&#039;&amp;eacute;paisseur puis d&amp;eacute;posez-les sur une plaque de cuisson recouverte de papier cuisson. &amp;nbsp;

Enfournez pour 8 minutes &amp;agrave; 10 minutes, jusqu&#039;&amp;agrave; ce que les palmiers soient dor&amp;eacute;s.

Laissez l&amp;eacute;g&amp;egrave;rement ti&amp;eacute;dir sur une grille avant de servir, histoire de ne pas vous br&amp;ucirc;ler la bouche. Vous pouvez faire la m&amp;ecirc;me chose avec de la tapenade noire ou verte. &amp;nbsp;

Preheat the oven to 425F. Prepare 2 baking sheets with parchment paper and set aside.

On a clean work surface, sprinkle about ½ cup sugar across the work surface, then unfold your puff pastry onto the work surface. Using a rolling pin, roll the puff pastry out to be about a 14x14-inch rectangle.

Generously sprinkle the top of the rolled out puff pastry with the remaining sugar, lightly press the sugar into the puff pastry.

Fold the sides in about halfway towards the middle, then fold again until the two sides meet each other. Then finally, fold the one side on top of the other side.

Using a sharp knife, slice into ¾-inch slices and divide the cookies evenly onto the two baking sheets, placing them cut side up. Place the baking sheets into the freezer for 15 minutes.

After 15 minutes, remove the sheets from the freezer, then place into the oven to bake for 14-16 minutes, flipping the cookies over halfway through.

Remove the cookies from the oven, transfer to a cooling rack and allow the cookies to fully cool before enjoying.
