Easy, American-style, fluffy pancakes are great for feeding a crowd at breakfast or brunch. Top with something sweet like fruit, jam or syrup, or rashers of crispy bacon.

self-raising flour

½ tsp baking powder

golden caster sugar

eggs

melted butter,plus extra for cooking

milk

vegetable oil,for cooking

maple syrup

Mix 200g self-raising flour, 1 ½ tsp baking powder, 1 tbsp golden caster sugar and a pinch of salt together in a large bowl.

Create a well in the centre with the back of your spoon then add 3 large eggs, 25g melted butter and 200ml milk.

Whisk together either with a balloon whisk or electric hand beaters until smooth then pour into a jug.

(1 1/3 cups) self-raising flour

tsp baking powder

(1/4 cup) caster sugar

mashed banana

buttermilk

butter, melted

Olive oil spray

500 milliliters (2 cups) thickened cream

My Fluffy Pancake recipe is perfect — because it&#039;s single-serving! Just whip up a pancake stack that&#039;s just for you, whenever you want it.

Single-Serving Fluffy Pancakes Recipe

(5 ounces 142 grams) all-purpose flour

sugar

baking powder

baking soda

salt

(8floz/240 milliliters) buttermilk

vanilla extract (, optional)

(1 ounces 28 grams) butter (, melted)

In a small bowl mix together the flour, baking powder, baking soda, sugar, and salt.

In a jug mix together the buttermilk, egg, vanilla extract (if using), and melted butter.

Add the wet ingredients into the dry and mix briefly with a fork until just combined. Take care not to overmix so you end up with fluffy, soft pancakes.

Heat a pan over medium/low heat for a few minutes

Scoop ½ the batter into the pan and allow to cook for roughly 3-4 minutes.

Once bubbles have formed on the top and it has browned underneath, flip it over to cook another 2-3 minutes on the other side. Repeat with the rest of the batter to give you 2 pancakes.

Enjoy hot straight from the pan with maple syrup, butter, and whatever else you like on your pancakes.

So I set out to find a solution — and it comes in the form of this homemade fluffy pancake recipe for one! It's everything you get from a traditional American buttermilk pancake recipe, except it's the perfect amount of batter to make two pancakes. To me, that's the ideal stack for one!
