Easy one-pan Pancit Bihon recipe made with rice vermicelli noodles, succulent chicken, and mixed vegetables. Packed with flavour and so simple to make at home with basic pantry-friendly ingredients.

Pancit Bihon

Chicken thigh (About 10.5 ounces, Chicken thigh

Rice vermicelli (About 7 ounces, Bihon or thin rice sticks)

½ Onion (Cut thin slices)

Garlic (Finely chopped)

Carrot (Julienne, cut thin slices)

Cabbage (About 3.5 oz, Cut thin slices)

10-12 Mangetout (Snow peas/ sugar snap peas)

Red bell pepper (Cut thin slices)

2-3 Spring onion (Cut thin slices)

vegetable oil

tsp Soy sauce

Black pepper

tbsp Soy Sauce (Regular all-purpose soy sauce

tsp Dark soy sauce (Optional)

Water (Add more water if needed)

Sugar

Chicken bouillon (Or chicken/vegetable stock cubes)

First prepare and gather the chicken and vegetables. Season the chicken pieces with soy sauce and black pepper. Mix it well and set it aside.

Heat the large pan or wok over medium high heat. Drizzle 2-3 tbsp of oil and stir fry the chicken pieces for 2-3 minutes.

Push the chicken pieces to one side of the pan and add the chopped garlic. Stir for few seconds and add the onions. Follow with the carrot, bell pepper, mangetout, and cabbage.

Once the vegetables are just cooked through, remove everything from the pan and set them aside.

In the remaining pan, pour the water in. Season it with regular soy sauce, dark soy sauce, sugar, and chicken stock cubes. Stir it well and bring it to simmer.

Add the rice vermicelli noodles and stir it gently occasionally. Once the noodles soaked all the sauce, place the cooked chicken and vegetables back in the pan.

Combine everything evenly and make a taste test. Adjust salt or pepper to your taste.

Finish with spring onions, remove from heat and transfer to serving plate.

Pancit Guisado Recipe

lb pancit bihon

Knorr Shrimp Cube

chicken

shrimp (shell and head removed)

cabbage

carrot (julienne)

celery (chopped)

green beans

onion

soy sauce

Chinese sausage (chopped)

garlic (crushed)

parsley

black pepper

cooking oil

water

Soak pancit bihon in water for 8 to 10 minutes. Drain water and set noodles aside.

Heat oil in a pot. Pan-fry shrimp for 1 minute per side. Remove and set aside.

Saute onion and garlic using remaining cooking oil. Add Chinese sausage. Cook for 1 minute.

Add shredded chicken and celery. Cook for 1 to 2 minutes.

Add Knorr Shrimp Cube. Crush the cube and continue to saute for 30 seconds.

Pour-in soy sauce.  Add parsley, carrot, green beans, and cabbage. Stir. Cover and cook for 3 minutes using medium heat.

Add pancit. Toss ingredients using a kitchen tong.

Season with ground black pepper and add the shrimp back. Toss until well blended. Cover the pot and continue to cook for 2 to 5 minutes between low to medium heat.

Transfer to a serving plate. Serve. Share and enjoy!

Pansit/Pancit Philippine Noodle Stir-fry

(8 oz) packs of Pansit Bihon (rice noodle stick)

tbsp soy sauce, (regular

1½ tbsp oyster sauce, (regular

tsp sugar

salt, (to taste)

pepper, (to taste)

Boil the chicken (1 large breast or 2 thighs) in over 3 cups of water (or enough water to cover the meat). Cook until tender. Reserve about 3 cups of the liquid remaining. When the chicken is cool enough to handle, shred them or slice into small pieces. Set aside.

Heat oil in a big wok. Saute garlic and onion for a minute. Add the cooked chicken and season with a little salt and pepper. Stir in the veggies and cook for another 3-4 minutes or until a little tender.

Pour about 2 1/2 cups of the reserved liquid into the wok. Season with the soy and oyster sauces and sugar. Bring to a boil.

When it begins to boil add the egg noodles (pancit canton, if using this as combo with rice stick noodles). Press and fold the noodles a few times to ensure it gets soaked in the sauce. When it starts to soften stir in the rice stick noodles/pancit bihon. Continue to stir and fold the noodles while trying to soak them in the sauce until all the liquid has dried up and the noodles are tender.

Add some more stock or water if the sauce dries up before the noodles are tender. Taste and adjust seasoning with a little salt and pepper, if desired. Serve with calamansi (or lemon/lime) – squeeze a few drops on your noodles before eating for some extra flavor and tang! Enjoy!

lb. Rice noodles (pancit bihon)

salt and pepper

Rinse pancit bihon (rice noodles) with tap water.  Drain.  Set aside.

Heat oil in a large skillet.  Stir-fry pork slices until cooked through.

Add garlic and onion.  Sauté for a few minutes until soft.

Season with fish sauce, soy sauce and&nbsp; salt, pepper to taste.

Add julienne carrots and red bell peppers.  Stir-fry for a few minutes.

Add chicken broth.

Heat until boiling and add the drained pancit bihon.

Let it simmer and stir to loosen the noodles (separate noodles using forks)

Add a little more broth or water if you notice that the pan is getting too dry and noodles (“pancit”) are not yet cooked well.  You may also add more soy sauce and/or fish sauce to taste

Add cabbage leaves and then turn off the heat.  Mix well.

Serve with lemon wedges or calamansi.  Enjoy!

This recipe hits all the right spots! I use cabbage and carrots because that’s what I remember growing up. I also sometimes add some pork and shrimp to the chicken.

This was a light and tasty dish. I will make it again but will double the vegetables in it. I used cabbage, carrots and green beans.

I love the noodles used and the flavorful sauce. Definitely, this pancit is must-make noodle stir fry meal.

Served this pancit for dinner last night and it didn't disappoint! So easy and quick; perfect for busy weeknights!

I made this noodle stir-fry alternating with already known in our family rice stir-fry. Well, it is pure deliciousness!! And I highly recommend making it!
