chocolate sandwich cookies, crushed

1 Kozy Shack® Indulgent Recipe™ Pudding in chocolate truffle

An elegant layered cheesecake dessert with the flavors of white chocolate and Frangelico

raspberries (fresh are fine, too)

Sugar

lemon juice

cornstarch

water

heavy cream

Powdered Sugar

vanilla

Frangelico (hazelnut liqueur)

In a saucepan, combine raspberries, sugar and lemon...

In a saucepan, combine raspberries, sugar and lemon juice. Simmer and stir occasionally till berries break down. Mix together cornstarch with a tablespoon of water to make a slurry (you can add a little more water if needed). Mix into hot raspberry sauce and cook till mixture thickens. Strain with a mesh sieve to remove seeds and set aside to cool to room temperature.

Carefully melt the chocolate in the microwave, stopping at 30 second intervals to stir, till chocolate is smooth. Set aside.

Whip cream with whisk attachment of stand mixer...

Whip cream with whisk attachment of stand mixer till stiff peaks form. Place in another bowl and fit mixer with paddle attachment.

Whip the cream cheese with the paddle attachment...

Whip the cream cheese with the paddle attachment till light and fluffy. Add powdered sugar, vanilla and Frangelico and mix till combined. Add melted chocolate and mix till combined. Fold in whipped cream.

Divide cheesecake mixture between 4-6 glasses/serving dishes and...

Divide cheesecake mixture between 4-6 glasses/serving dishes and smooth tops. Reserve a few tablespoons if you'd like to pipe a star on top of each parfait.Pour some raspberry sauce over each parfait till it is evenly distributed. Spread to cover top of cheesecake. Pipe a star of filling over raspberry sauce and garnish with berries and mint if desired. Chill for an hour before serving.

These No-Bake Strawberry Cheesecake Parfaits are delicious layers of graham crackers, cheesecake and fruit that are so easy to make!

Strawberry Cheesecake Parfaits (No-Bake)

graham cracker crumbs

salted butter

cream cheese

Tablespoons plain or vanilla greek yogurt

sugar

vanilla extract

Store-bought strawberry fruit spread/jelly/jam (can use any other fruit of your choice)

In a bowl, combine the graham cracker crumbs and the melted butter. Mix well.

Add about 2 Tablespoon of this mixture to each of the glasses that you are using and set the glasses aside.

Using an electric mixer, whip up the heavy cream till you get stiff peaks.

In another bowl, take the cream cheese and add yogurt, vanilla extract, sugar, and beat it till it becomes smooth and creamy. Make sure there are no lumps.

Gently fold the whipped cream with the cream cheese and set it aside.

Fill this mixture in a piping bag, cut out a large opening and then fill your glasses almost till the top, leaving a little space for the topping. Note: you can just spoon the cheesecake mixture into the individual parfaits if you don’t have a piping bag.

Put it in the refrigerator  for at least an hour to set before you put the topping.

Top it up with the strawberry jelly, garnish with fresh strawberries and mint leaves if desired  and serve chilled.

Here is an easy and light sweet treat that you can enjoy for dessert. Simply take peaches and slice in half, fill with coconut yogurt, granola and drizzle with chocolate sauce.

Decadent Peach Parfaits

gluten-free granola (to sprinkle)

chocolate chips

tsp coconut oil

Cut your peaches in half and remove the pit. Fille with yogurt and granola.

In a small heat-proof glass bowl, add chocolate chips and coconut oil. Melt in microwave, or add water to a small pot (1-2 inches high), bring to simmer and place glass bowl on top to melt chocolate.

Drizzle peach parfaits with chocolate sauce and serve.
