Sauteed Asparagus with Garlic and Parmesan

olive oil

Parmesan cheese, shaved with a vegetable peeler

Heat a large skillet over high heat. Once it&#8217;s hot, add the oil and asparagus. Using tongs, toss the asparagus so that it cooks evenly. (Make sure the asparagus is completely dry before adding it to the pan to avoid any oil splatters)

After 3 minutes, add the garlic to the pan. Cook for 2 minutes more then remove the pan from the heat.

Add the parmesan to the pan and toss the asparagus so it&#8217;s coated in the cheese. Serve right away.

This IS absolutely what Spring looks like! How can anyone not LOVE these lovely green stalks of goodness? As always, your photos look awesome! Makes me hungry.

This is my new favorite asparagus recipe! Loved how easy it was to make and the whole family wanted more.

Add salt and ground black pepper, to taste, stir to combine well with the asparagus. Add the Parmesan cheese to the top of the asparagus and immediately cover the skillet with its lid, let cook for about 1 minute, or unil the cheese melts off a little bit. Dish out and serve immediately.

Lemon parmesan asparagus is a delicious way to serve a classic spring vegetable. This side dish is quick and easy to make in less than 20 minutes. 

Lemon Parmesan Asparagus

Place asparagus on a large half sheet baking pan and season with salt and pepper. Sprinkle minced garlic on top and drizzle with olive oil. Toss well to coat evenly.

Arrange the asparagus in a single layer on the baking sheet and bake for 12-15 minutes until tender yet crisp. Note that if you are using thinner asparagus, you will have to adjust the cook time by about 5 minutes. 

Drizzle with lemon juice and sprinkle parmesan cheese on top. Serve immediately.

Fresh asparagus spears are coated in a mixture of grated Parmesan and panko breadcrumbs and baked until crispy and golden brown for an addictive, healthy, "asparagus fries" side dish or snack.

Panko Parmesan Asparagus

all-purpose flour

eggs

garlic salt (divided)

black pepper

panko bread crumbs

asparagus (of medium thickness)

Arrange oven racks to that they are in the center and second-lowest positions. Preheat oven to 425°F. Line a 13- by 18-inch sheet pan with aluminum foil and top with a wire rack.

Place flour in a shallow dish. Season with 1/2 teaspoon garlic salt and a generous amount of black pepper; whisk to combine. In a second shallow dish, beat eggs and season with remaining 1/2 teaspoon garlic salt and more black pepper. Mix together panko and Parmesan in a third shallow dish.

Wash asparagus and trim off the tough ends. Working with a few pieces at a time, dredge in flour, then coat with eggs, and roll in panko/Parmesan mixture. Arrange asparagus on wire rack-topped baking sheet so that there's a little bit of space between each piece.

Place baking sheet on the middle rack in the oven and bake for 7 minutes. Move baking sheet to the 2nd lowest rack and bake for 3 to 5 minutes more, or until asparagus are crispy and golden. Serve immediately.
