These savoury parmesan cookies require minimum baking skills and 3 basic ingredients - Perfect with wine, they&#039;re sure to wow your guests!

3-Ingredient Parmesan Cookies

unsalted butter

g organic all-purpose flour

100 g Parmesan cheese (finely grated)

rosemary & thyme leaves, finely minced ((optional))

black pepper ((optional))

tbsp warm water (or a small beaten egg)

In a stand mixer over medium-low speed, mix together the butter, flour and Parmesan cheese, until finely crumbly.

Add optional fresh chopped herbs and black pepper to taste, and knead until you form a dough.

Divide the dough in half. Roll each half into an uniform log, about 3 cm (1¼ inches) in diameter.

Wrap the 2 cylinders into cling film, and refrigerate for 15 minutes.

Preheat the oven to 180°C ( 350°F) without the fan mode. When using the fan-assisted option, set the oven to 20°C less than conventional oven.

Cut each log into 1 cm thick rounds, then you can use a cookie cutter to give them a specific cookie form.

Arrange the cookies on a baking tray lined with parchment paper.

Brush the surface of each cookie with a bit of warm water or a beaten egg, and sprinkle a tiny amount of extra grated Parmesan or chopped fresh herbs on top.

Bake for 10 minutes, or until the cookies are golden on top.

Remove the cookies from the oven, they will still be quite soft. Allow them to cool completely on a baking rack, then serve.

Store leftovers in an airtight container, and refrigerate for up to 4 days.

Savory Parmesan Cookies

all purpose flour ((100 gram))

parmesan cheese ((75 grams))

salt

pepper

butter ((cold cubed/ 70 grams))

water

rosemary

thyme / oregano

various seeds

herbs

Pre-heat oven to 350F (180C), line a cookie sheet with parchment paper.

In the food processor add the flour, parmesan, salt and pepper and whisk (small whisk or fork) together.  Then add cubed butter and pulse to form coarse crumbs, add the water a tablespoon at a time until dough is almost combined.

Move the dough to a lightly floured flat surface and knead a few times until you have a soft smooth dough.

Lightly flour the dough and roll out with a lightly floured rolling pin, to about 1 cm thickness. Cut out with a small round cookie cutter, place on prepared cookie sheet, brush with egg wash sprinkle with your favourite topping (I used fresh rosemary and thyme). Bake for approximately 10-12 minutes or until lightly golden.

In a small bowl beat together the egg and water.

Savory Parmesan Cheese Cookies With Spicy Seed Crust

all purpose flour (/plain flour)

parmesan cheese

garlic powder

½ tsp chili powder

¼ tsp baking powder

tbsp Nigella seeds (/black onion seeds)

tbsp Dried chili flakes

salt and pepper

Egg ((beaten, for wash))

Soften the butter and mix it with the grated parmesan cheese in one bowl. Mix the flour, baking powder, chili, and garlic powders together in a separate bowl.

Add the flour mixture to the butter mixture and work it into a dough, adding small amounts of egg to help it come together. Do not add all the egg at once, and stop before it gets wet and sticky. A little bit sticky is fine.

Turn the dough onto a piece of plastic food wrap and use that to form it into a long sausage (around 9 inches). Wrap it in the plastic cling film and roll it to even out the sides. Chill in the freezer for 15 minutes whilst the oven preheats. 

How to make the parmesan cookie dough

Preheat the oven to 175 C / 350 F 

Take the dough out of the freezer and brush it with an egg wash before rolling it in the seed mix to form a crust. 

Slice the parmesan cookie dough into thin disks 0.5cm thick and place them on a lined baking tray. 

Bake the spicy parmesan cookies in the oven for 10-15 minutes until they have risen slighty and are golden brown in color.

Remove them from the oven and leave them to harden up for 10 minutes before serving them still warm.
