Parmesan-Crusted Pork Chops

Parmesan cheese

panko bread crumbs

kosher salt, divided,

(1/2-inch thick) center-cut boneless pork loin chops (about 1 pound total)

black pepper

olive oil, divided

Finely grate 2 ounces Parmesan cheese (about 1 1/2 packed cups). Transfer 1/2 cup to a shallow bowl. Add 1 cup panko and stir to combine. Place the remaining Parmesan in a second shallow bowl. In a third shallow bowl, whisk together 2 large eggs and 1/4 teaspoon of the kosher salt until broken up with no streaks of egg whites.

Pat 4 boneless pork chops dry with paper towels. Working with 1 pork chop at a time, place in between two sheets of plastic wrap or large zip-top bag and pound with a rolling pin or the flat side of a meat mallet until 1/4-inch thick. Season the pork with the remaining 1 1/2 teaspoons kosher salt and 1/2 teaspoon black pepper.

Working with 1 pork chop at a time, dredge to completely coat in the Parmesan, then the eggs, and finally the bread crumb mixture, gently pressing the bread crumbs into the pork to adhere. Place on a large plate or baking sheet.

Heat 1/2 cup of the olive oil in a large skillet over medium-high heat until shimmering. Add 2 of the breaded pork cutlets and fry until cooked through and lightly browned on both sides, 4 to 5 minutes per side. Transfer to a paper towel-lined plate or wire rack. Season with kosher salt. Add the remaining 2 tablespoons olive oil to the pan and fry the remaining pork chops.

Parmesan Pork Chops with Pesto

Place the flour and Parmesan cheese in separate bowls. Place the egg into a third bowl and beat.

Add the garlic powder, pepper,&nbsp;and salt to the Parmesan cheese and mix well.

Coat one pork chop in flour.&nbsp;

Completely dip the pork chop in the egg and then coat all sides with the Parmesan cheese mixture. Place onto a plate while preparing the remaining pork chops.

Heat a large skillet just under medium-high heat, and add the canola oil.

Place the pork chops into the skillet. Cook for 4-5 minutes before turning over to cook an additional 4-5 minutes on the other side. Add more canola oil, if necessary. The center of each pork chop should read 145°F when measured with a meat thermometer.

Remove pork chops from pan and place onto a serving plate. Let rest for 3 minutes before serving.&nbsp;

Serve, topped with pesto.

Heat a large skillet over medium heat. Add butter and allow to melt, stirring to coat the pan.

Sprinkle each pork chop with salt and pepper to taste on both sides.

Add pork to skillet and cook each side for 4-5 minutes or until both sides are golden brown. Turn off heat and cover with a tight lid. Let the chops sit for 8-10 minutes until fully cooked through. Set aside on a foil tented plate to keep warm.

Scrape the pan to release all that yumminess, no need to clean the pan.

Heat pan to medium high heat. Toss garlic in the pan and allow to caramelize for 1-2 minutes until fragrant. Add in the flour and cream and stir quickly to combine. Bring to a boil, and then reduce to a simmer. Allow to simmer for 2 minutes.

Stir in the grated parmesan and fresh parsley, stirring until fully combined and heated through.

Return pork to the sauce and serve.
