Pasta Fagioli (Pasta and Beans) is a great tasting, hearty, vegetarian Italian pasta and bean soup, perfect for the cold, super quick and freezer friendly.

Pasta Fagioli (Pasta and Beans)

15 oz can cannellini beans

tomato sauce tomatoes

bay leaf

tbsp basil

tbsp parsley

In a deep pot, saute onion and garlic in olive oil over medium heat.

Blend the cup of beans with one can water in electric blender until almost smooth.

Add blended beans to pan then add the can of tomato sauce, celery, carrots, chicken broth, basil, bay leaf, parsley, oregano, salt and pepper.

Add 1 cup water and bring to a boil. Simmer, covered for 20 minutes stirring occasionally.

Add pasta and cook uncovered until pasta is al dente, according to pasta directions.

Ladle soup into bowls and top with grated cheese (extra).

I like pureeing the beans to get my picky kid to eat this, but if you prefer your beans whole, you can skip that step.

Pasta Fagioli Soup Recipe (Pasta and Beans)

This Italian pasta e fagioli recipe, also known as pasta fazool or pasta with beans, is one of the best comforting 1-pot family meals. It&#039;s budget-friendly, nourishing, and totally delicious.

In a large pot or dutch oven over medium heat, warm the olive oil until shimmering. Add the diced onion, carrot, celery, and cook, stirring often, until the vegetables have softened and the onions are turning translucent. It takes about 10 minutes.

Add the garlic, the bay leaf, and the rosemary, and cook for about 30-40 seconds until fragrant.

Add the beans, the tomato paste, salt, and pepper, give a good stir. Then add only 3 cups of the broth (reserve the rest) and bring to the boil.

Reduce the heat to a gentle simmer and cook for 10 minutes, stirring occasionally.

Turn off the heat, remove the bay leaf and rosemary. Scoop out half of the soup, blitz in a blender until smooth, and return it to the pot (be careful, it&#039;s still hot). Alternatively, use an immersion blender and blitz some of the soup directly in the pot.

Bring to the simmer and add pasta. Cook gently, stirring frequently, and add the rest of the reserved broth gradually when needed. The soup should be creamy, thick, but not dry. Feel free to add a splash of water if you prefer a thinner consistency.

Cook until al dente, taste and adjust the seasoning. (See notes).

Ladle the pasta with beans into bowls and drizzle with extra virgin olive oil and top with black pepper and freshly grated parmesan cheese, if you wish. Fresh chopped Italian parsley is another delicious addition if you like. Enjoy!

In a large pot add the olive oil, minced garlic, chopped onion, celery and carrots, cook until transparent. 

Then add the vegetable broth, spices, puree and beans bring to a boil, cover with a slight opening and continue to simmer over low/medium heat for approximately 20-30 minutes or until the beans are tender and the soup has thickened. Stirring occasionally.

Once they are cooked and tender, then you can blend 1/3-1/2 the ingredients or leave as is. Add the water (taste for salt) and bring the soup to a boil then add the dry pasta. Cook until the pasta is al dente. If you find it too thick then add a little more water or broth, too thin then add less water before adding the pasta. Serve immediately sprinkled with some freshly grated parmesan cheese. Enjoy!

On medium heat, preheat a large pot or dutch oven with oil. Add ground beef and let it brown (3-5 minutes). As its cooking, be sure to break it apart into small pieces.

Remove cooked beef from the pot. Drain of excess fat and set aside. 

In the same pot, add diced carrots, onion, celery and pressed garlic. Saute until the vegetables are softened (about 4 minutes). 

Add canned diced tomatoes, tomato sauce, and beef back to the cooking vegetables in the pot. Stir to combine together. 

Add Great Northern and kidney beans to the mix. Pour chicken broth to the pot and let simmer for about 10 minutes. 

Add pasta, Italian seasoning, salt and pepper and let it cook for another 10 minutes. 

Serve right away with a sprinkle of basil or parmesan cheese.

Simple San Marzano Pasta e Fagioli

lb. chicken sausages

mirepoix – chopped celery, carrot, and onion*

Remove the chicken from its casing. In a large pot, brown the chicken sausage over medium high heat and drain the excess grease. Set aside.

Crush the San Marzano tomatoes and sauce in a food processor and set aside. Drain the cannellini beans. Place in a food processor. Refill the can with water, add to the food processor, and puree until very smooth.

In the same large pot as step one, saute the mirepoix, garlic, oregano, salt, and bay leaf (with a little olive oil if needed) until soft and fragrant. Add the tomatoes, pureed beans, and broth. Simmer for 20 minutes. Saucy.

Add the pasta and simmer for another 20 minutes until pasta is cooked through as sauce is reduced. Throw in the baby spinach and the chicken sausage from step one. If needed, add water or broth to adjust the consistency of the pasta before serving. Top with cheese.

Save some for lunch tomorrow. It makes awesome leftovers.

Your schedule sounds crazy.  Exciting times though.  Now chicken sausage is definitely something we don't have in the UK but I'm thinking that the recipe would still work well without it. Also if your ever up for some gardening San Marzano tomatoes are wonderful to grow.

Pasta e Fagioli aka &quot;Pasta Fazool&quot; is an Italian stew made from pasta and beans. It is a complete meal made in just one pot and is so incredibly delicious.

Mom's Homemade Pasta Fagioli

tbsp extra virgin olive oil

bacon, diced

onion, diced

garlic, minced

celery,

tsp black pepper

Heat olive oil in a large pot over medium heat. While the oil is heating, dice up the bacon, celery, onions, and garlic.

Once the oil is hot, add the diced bacon. Cook until the bacon is about 75% cooked. Then add celery and onions.

When the onions are translucent and soft, add all of the spices - salt, pepper, oregano, minced garlic, and red pepper flakes.

Cook for a few minutes, until garlic is fragrant, then add diced tomatoes and chicken broth. Bring this to a boil.

If you are going to add Italian sausage, begin cooking that now in a skillet. Once it is fully cooked, set it off to the side to drain on a towel while you finish cooking your soup.

Once the broth is boiling, add the ditalini pasta. Cook the pasta for 10 - 15 minutes, until the pasta is tender. Make sure to stir this pretty regularly throughout the cooking process to ensure that the pasta does not get stuck to the bottom of the pot. If you want to add a little more flavor, you can add the rind of a block of parmesan cheese. (I save the parmesan rinds in the freezer when we finish up a block.)

Once the pasta is tender, add the cannellini beans (and Italian sausage if you&#039;re using it.) Cook for about 5 more minutes, until the beans are nice and soft.

Remove from heat and serve with grated parmesan cheese on top.

(15 ounces) diced tomatoes

(8 ounces) tomato sauce

ditalini pasta, (or any other small shaped pasta)

Heat 1 tablespoon olive oil in a Dutch oven or a large deep pot set over medium heat.

Add sausage and cook, breaking up with a wooden spoon; cook for about 5 minutes, or until cooked through.

Transfer cooked sausage to a plate and set aside.

Heat remaining tablespoon of olive oil in the same pot.

Stir in the onions, celery, and carrots; cook for 5 minutes.

Add garlic and cook for 20 seconds, or until fragrant.

Stir in the tomato paste.

Season with salt and pepper.

Add in beans, diced tomatoes, tomato sauce, and chicken broth.

Stir in the sugar, rosemary, basil, oregano, thyme, and previously cooked sausage; increase heat and bring to a boil.

Once boiling, stir in the pasta and reduce heat to medium.

Cook for 8 minutes, or until pasta is al dente.

Taste soup for seasonings and adjust accordingly.

Remove from heat.

Ladle into soup bowls and garnish with freshly grated parmesan and parsley.

Chop the bacon into smaller pieces and place them in a large pot with 1 Tbsp of olive oil. Fry on medium heat until the bacon is brown and crispy (around 10 minutes).

While the bacon is frying, finely dice the onion, carrots, and celery; and mince the garlic.

Remove half of the cooked bacon from the pot with a slotted spoon and set aside, leaving behind the rest of the meat and any rendered fat in the pot.

Add the finely diced onions, carrots, celery, minced garlic, oregano, red pepper flakes, and a pinch of salt and pepper to the pot. Saute the vegetables on medium-high heat until they are softened (around 6 minutes).

Add the white beans, canned tomatoes (with juices), water, and vegetable broth to the pot. Stir everything to combine, then bring the soup up to a boil. Once boiling, let it cook for another 5 minutes or until the vegetables have softened.

Add the pasta to the soup and cook, uncovered, according to the package directions, stirring frequently to prevent the pasta from sticking to the bottom of the pot.

Remove the pot from the heat and stir in the grated Parmesan cheese and chopped parsley. If the broth has reduced too much (the pasta will absorb a lot of the flavorful broth as it cooks), add another ½ cup of water, taste it, and adjust the seasonings again if needed.

Serve Pasta e Fagioli in bowls topped with the reserved bacon, chopped parsley, grated parmesa cheese, fresh-cracked black pepper, , and a side of warm, crusty bread.
