Broccolini Pasta Salad

(16-ounce) box campanelle or other short pasta

Broccolini,

olive oil

tbsp. white balsamic vinegar

shallot,

garlic clove, finely grated

pt. cherry tomatoes, halved

I did a variation on this using pear-infused vinegar and added grated Parmesan cheese, and brought it to an event as a side.  I used the basil growing in my front garden which I plant to keep the deer from eating my annuals. (Deer avoid herbs.)  😀 It was a big hit!

It has great flavor with sweetness of berries, saltiness of feta, crunch from almond (used slivers) and spinach. However, it seems dry so added olive oil helped a little. After oil and balsamic absorbed, pasta still seems dry.

Bacon Ranch Pasta Salad

Tortellini Caprese Salad

oz cheese tortellini, uncooked (approximately 5 cups uncooked)

cherry tomatoes, halved

Mozzarella pearls

spinach

basil

Tablespoons balsamic vinegar

garlic cloves,

Italian seasoning

Balsamic glaze

Salt & pepper

Cook tortellini according to instructions. Prep and chop all other ingredients and set aside.

Once the tortellini is cooked, strain the water and then rinse with cool water briefly.

In a large bowl, combine tortellini, spinach, tomatoes, basil, mozzerella, and garlic. Pour in olive oil and balsamic vinegar before adding Italian seasoning, salt, and pepper. Toss the salad well to combine.

Chill until ready to serve. When ready to serve, toss well to redistribute the olive oil that is on the bottom of the bowl. Add more olive oil if it seems too dry. Add a drizzle of balsamic glaze just before serving.

Store in the refrigerator in an airtight container for up to 5 days.

Easy Italian Antipasto Pasta Salad

dry rotini pasta (or your favorite medium length pasta)

hard salami, chopped (or ¾ cup presliced)

pepperoni, chopped (or ½ cup presliced)

artichoke hearts, drained & quartered

olives, pitted & halved (kalamata, green or a mixture of the two)

½ cup pepperoncini, sliced

mozzarella pearls

red onion,

basil,

red wine vinegar

¼ tsp red pepper flakes

Salt & black pepper,

Whisk your vinaigrette ingredients together then set it aside while you prepare the rest of your salad.

To make the vinaigrette:

Cook your pasta according to the package&#39;s directions then set it aside to cool completely.

Once the pasta is cool, add it to a large bowl along with your salami, pepperoni, tomatoes, artichokes, pepperoncini, olives, mozzarella, onion and fresh basil. Pour your desired amount of dressing over the top and toss the salad until it&#39;s fully coated.

Serve immediately or let it chill in the fridge for 1-2 hours before serving.

To make the pasta salad:

This spring, make a vegan pasta salad full of vibrant spring vegetables dressed in a light, tangy, oil-free vinaigrette dressing. This spring pasta salad is so fresh and delicious that your guests will return for seconds.

Vegan Pasta Salad

vegetable pasta (or pasta of choice)

summer squash

zucchini

onions

purple cabbage chopped

red bell pepper (diced)

grape tomatoes (cut in half)

dill (chopped)

parsley (chopped)

asparagus

peas peas

champagne vinegar

Tablespoons dijon mustard

lemon

Tablespoons maple syrup

water

Cook pasta according to the package instructions (9 minutes)

Drain cooked pasta in a colander and then rinse with cold water to stop the pasta from cooking.

Be sure to toss the pasta in the colander and rinse again to ensure all the pasta is cooled.

Now, transfer cooled, drained pasta to a large bowl.

Set aside.

Preparing the Pasta

Fill a large pot 3/4 full of water and 1 teaspoon of salt.

Bring water to a boil.

Add asparagus and stir into the water.

Cook for 2 minutes.

Now, add the frozen or fresh peas and continue cooking for an additional 2 minutes.

Drain the asparagus and peas in a colander and immediately transfer them to a bowl of ice water to stop cooking.

Then drain the water and add to the bowl with the pasta.

Add the other cut vegetables and herbs.

Blanching the Asparagus and Cooing the Peas

Combine all the ingredients in a small ball jar or bowl; shake together to whisk.

Pour the dressing over the pasta and vegetables.

Stir to combine and refrigerate for a couple of hours for the flavors to enhance.

Season with salt and pepper to taste.
