Heat Instant Pot to “Sauté.” Add oil, sausage, and onion. Cook, breaking up sausage into small pieces, until sausage is no longer pink and onions are translucent. Add garlic and cook for 1-2 minutes or until garlic is fragrant.

Instant Pot Pasta with Sausage, Spinach, and Tomatoes

Pasta with sausage and peppers is an easy dinner idea that is filling, flavorful, and makes great leftovers for lunch the next day!

Pasta with Sausage and Peppers

Italian sausage links (about ½ lb.) (2.40)

Tbsp cooking oil (0.04)

red bell pepper (1.50)

24 ounces. jar pasta sauce (1.67)

basil (0.05)

tsp dried oregano (0.05)

tsp crushed red pepper (0.02)

penne pasta (0.67)

feta, crumbled (0.69)

Tbsp chopped parsley (optional) (0.10)

Heat a large skillet over medium. Add the cooking oil and sausage links to the skillet and cook the sausage for a few minutes on each side, or until well browned (it does not need to be cooked through at this point).

Remove the sausage to a clean cutting board and slice the sausage into medallions. Return the sausage to the skillet and continue to cook until the sausage is cooked through and browned on the cut sides. Remove the sausage to a clean plate.

Meanwhile, slice the bell pepper and onion into thin strips. Add the sliced onion and bell pepper to the skillet after removing the sausage. Stir and cook the vegetables over medium heat, just until they begin to soften slightly.

Add the sausage back to the skillet along with the pasta sauce, basil, oregano, and red pepper to the skillet. Stir everything to combine and heat through.

Bring a large pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until tender (about 7 minutes). Drain the pasta in a colander, then add it to the skillet and stir to combine with the sauce.

Top the skillet with crumbled feta and chopped parsley (if desired), then serve.

Pasta with Italian Chicken Sausage, Escarole and Beans made with lots of garlic, lean Italian chicken sausage, white cannellini beans, crushed red pepper and grated cheese.

Pasta with Italian Chicken Sausage, Escarole and Beans

oz pasta (wheat or gluten-free pasta)

garlic (chopped)

chicken

fat free (low sodium chicken broth)

cannellini beans (drained and rinsed (Eden))

grated Parmesan or Romano cheese

red pepper (or

salt and fresh pepper

Rinse escarole and tear into bite sized pieces.

Cook pasta according to package directions for al dente in a large pot of salted water. Reserve 1/2 cup water before draining.

While pasta water boils, heat a large non-stick skillet on medium heat.

Add olive oil; when hot add onions, garlic, salt and pepper until soft, about 4-5 minutes.

Add sausage, breaking up with a wooden spoon and cook until golden, about 6 to 8 minutes. Set aside in a dish.

Add chicken broth and beans to the skillet.

Add the escarole; stir and cook about 4 minutes or until wilted.

Gently stir in sausage, pasta, red pepper flakes, 1/2 cup of the reserved water or more if needed and grated Parmesan. Adjust salt and pepper if needed and toss well; transfer to a large serving bowl. Enjoy with some extra cheese on the side.

I have made this twice. Once with feta spinach chicken sausage and navy beans and once with hot Italian turkey sausage and chick peas. Both were amazing! I love that's so versatile. Hubby even likes it with the spinach!

After making this dish, my husband and I were not throughly convinced that we liked it. We took one bite then another. By the time we finished eating, we were laughing delightfully about how much we liked it. I will certainly make it again.

Made this but when done put in a baked spaghetti squash instead of using pasta. We loved it. I also had a green pepper wanted to use and added at same time as onion, and also steamed broccoli rabe that I added in instead of escarole. Liked the white beans added to this. This is a favorite. Loved it.

We really enjoyed this. I’ll probably try it with a little lemon zest to lighten it up a bit next time, as well as some mushrooms.

Looking for a delicious weeknight meal? Try this Italian spicy sausage cherry tomato pasta, tossed with basil and sun-dried tomatoes.

Spicy Sausage Cherry Tomato Pasta

Kosher salt

rigatoni (or short-cut pasta of choice)

sundried tomato oil (plus 1/4 cup finely chopped sun-dried tomatoes)

cherry tomatoes (about 1 pound)

garlic (thinly sliced)

black pepper

parmesan cheese (plus more for serving)

Toss in fresh basil leaves (plus more for serving)

In a large pot, bring water to a boil. Once boiling, salt generously, and cook your rigatoni according to the package instructions, just 1 to 2 minutes before al dente. Drain your pasta, and set aside about 1/2 cup of pasta water.

In the meantime, make your sauce. In another medium skillet, heat a drizzle of sundried tomato oil over medium to medium-high heat. Then add your sausage in large chunks. Allow the sausage to slightly brown before using a spatula to mash the sausage into smaller pieces. I like to keep them into smaller chunks, and not into fine crumbles. Brown for 4 to 5 minutes, tossing occasionally until a nice golden crust forms on the sausage.

Add in your tomatoes, garlic, pepper, and salt. Toss to combine and allow the tomatoes to burst to create your sauce. Use the back of a spatula to squish and burst them, if needed, about 8 to 10 minutes.

Transfer about 1/4 cup of pasta water into the sauce, along with your pasta. Stir to combine and add in your parmesan cheese. Finish with a toss of basil leaves, adjusting with salt, pepper, and pasta water, as needed to taste.

Serve in bowls, topping with more parmesan, and basil leaves.

An easy and authentic meal made with affordable ingredients like my Italian sausage pasta recipe is always a win to make for dinner. I load it with tomatoes, broccolini, and cheese for a quick comforting dish ready in less than an hour.

Italian Sausage Pasta

and small diced yellow onion

garlic clove

can of peeled whole tomatoes

dry linguine pasta

broccolini,

Add 2 tablespoons of olive oil to a medium-size pot over low heat and cook the onions until well browned, which takes about 15 to 20 minutes.

Next stir in the sliced garlic and cook for 3 to 4 minutes.

Puree the tomatoes in a blender and then pour it into the pot with onions and garlic and cook it over low to medium heat for 15 to 20 minutes. Season with salt and pepper and keep warm.

Add the remaining 2 tablespoons of olive oil to a large frying pan or rondeau and cook the sausage for 4 to 5 minutes per side or until well seared and cooked through. Slice and set aside.

Add the pasta to a large pot of boiling water and cook according to the package instructions or until al dente.

In the meantime, add the prepared broccolini and sauté for on low heat for 4 to 5 minutes, or until just cooked but still slightly crunchy.

Drain the pasta and add to the pan with the broccolini and then add in the sausage, pomodoro sauce, ¾ cup of shredded cheese, basil, salt, and pepper, and mix.

Serve the pasta with additional parmesan cheese and basil.

Quite an enjoyable dinner especially since it was scavenged from my refrigerator &amp; pantry as it was Thursday night &amp; I did not want to stop @ grocery on the way home.  Two small containers of leftover broccoli from earlier in the week - one roasted w/ EVOO, S&amp;P, and red pepper flakes and the other simply steamed w/ S&amp;P, both crisp-tender; a one very small head of raw broccoli.   A quarter box of fettuccine and a quarter box of linguine.  A large can of San Marzano crushed tomatoes. And 1 lb of Hot Italian Sausages that were not used for a meal earlier in the week.. I added chix broth &amp; water to thin the crushed tomatoes to resemble whole tomatoes pureed. Roasted the raw garlic in the skillet; then added the leftover broccoli.  My husband grilled the sausages.  Combined it all together in a large skillet to simmer for several minutes.  DELICIOUS!!  Served with toasted baguette w/ butter.  Best part of the whole dinner is that it held beautifully in the warmer until my 18 y.0. son was home from work @ 10:15PM.  He had 2 servings! 
I acknowledge that I did not follow the recipe exactly, but it work with what I had on hand.  Without your amazing recipe Chef, it would have been another night of grilled sausages with peppers &amp; onions and roasted potatoes.  Thank you and I look forward to preparing again exactly per recipe!

Going to make this tonight. I always love your recipes. On a budget this week myself and using what’s in the freezer etc. just wanted to add that one way to get wine in the recipe is to buy those single mini bottles of wine. I used one the other night and it was $2.50. That would have put you slightly over but you were shopping at Whole Foods 😉
