Roasted Patty Pan Squash

lb. patty pan squash, stems trimmed and halved

olive oil

Kosher salt

black pepper

garlic,

thyme leaves

red pepper flakes

tbsp. parsley

What's your favorite way to cook patty pan squash?

Preheat oven to 425°. Toss squash with oil on a large rimmed baking sheet. Season with salt and pepper.&nbsp;

Roast until tender and golden, about 20 minutes.&nbsp;Add garlic and thyme to baking sheet with squash and toss to coat. Roast until garlic is golden and fragrant, about 5 minutes more.&nbsp;

Sprinkle a large pinch of red pepper flakes and parsley over squash and toss to coat.

This a brilliant although simple recipe. Very good for beginners, can learn a lot by experience with the fresh herbs. You can up your game by buying a thick aluminum baking sheet with edges. Pay attention to the cutting up, cut through middle of the stem, this will leave the seeds in the right place. Another way to up your game is to put the squash into a glass mixing bowl to really get the everything mixed well. This time around as shown in picture, I used yellow summer squash, and hungarian paprika instead of red pepper flakes, because I decided to go a little heavy with the black pepper.

First time I have cooked Pattypan, since it was given to me, had to try.  Very tasty and easy!  I didn’t have thyme, so I used Summer a Savory.  Just wonderful!

Roasting veggies is by far our favorite way to make them and patty pan squash is no exception. These cute little discs of veggies are similar to a yellow squash and mild in flavor. We tossed ours in a little olive oil, garlic, and thyme for a classic approach, but feel free to add any of your favorite seasonings.

Heat the olive oil in a large skillet over medium heat. Add the squash, salt, and several grinds of pepper and sauté for 7 to 10 minutes, stirring occasionally, or until the squash is tender but still has a firm bite.

Turn off the heat and stir in the lemon juice, garlic, and parsley. Transfer to a serving dish and top with fresh basil and red pepper flakes, if desired.
