Peach Crumb Bars are one of our favorite summer treats! They&#039;re made from a buttery crust layered with juicy peaches and a crumbly topping.

Peach Bars Recipe

all purpose flour

sugar

tsp baking powder

tsp salt

unsalted butter

oz peaches (drained and cut up)

cornstarch

Preheat oven to 375.

Combine flour, 1 cup of sugar, baking powder, and salt in a medium bowl. Add butter to flour mixture and toss. Using a fork or pastry cutter, blend in the butter to create a crumbly texture. Whisk the egg slightly, and stir it into the mixture. Press half of the dough into a greased 9x13 baking pan.

In a separate bowl, stir together your remaining ½ cup sugar and your cornstarch. Add the sliced peaches and gently mix. Spoon peaches over the pressed crust. Crumble your remaining dough over the peach mixture.

Bake at 375 for 45-55 minutes. Top should be slightly brown.

Let cool before cutting into squares. ENJOY!

These Peach Crumble Bars use the same buttery crumb mixture for the crust and topping and are filled with an easy peach filling!

Peach Crumble Bars

(375 grams) all-purpose flour

(100 grams) brown sugar

(100 grams) granulated sugar

baking powder

cinnamon

nutmeg

salt

(230 grams) cold butter (, cubed)

(800 grams) chopped peaches

(27 grams) cornstarch

lemon juice

Preheat oven to 350°F. Line a 9x13-inch pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.

In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt.

Add the cold cubed butter and cut it in with a pastry cutter until the mixture is crumbly and starts to come together.

Add the egg and stir it in until fully combined (you may also use the pastry cutter to help blend it in).

Press half of the mixture in the prepared baking pan and place the bowl with the other half in the refrigerator.

Bake the crust at 350°F for 15 minutes, then set aside to cool for 5 minutes before adding the peach filling.

For the crumb crust and topping:

Combine the chopped peaches, sugar, cornstarch, lemon juice, and cinnamon in a large bowl. Mix until the peaches are fully coated.

Spoon the peach filling on top of the baked crust, using a slotted spoon to leave as much excess juice as possible in the bowl. Spread it around into one even layer.

Remove the remaining crumb mixture from the refrigerator and sprinkle it on top of the peach filling.

Bake at 350°F for 40-50 minutes or until the top is set and lightly browned and the peach filling is bubbling around the edges.

Remove from the oven and transfer to a wire rack to cool completely. Once cooled, lift the bars out of the pan using the overhang from the parchment paper or foil, slice into bars, and enjoy!

Preheat oven to 375 degrees and grease a 9x13 inch pan.

Whisk together the flour, sugar, baking powder, salt, and cinnamon. Cut in the butter with a fork until mixture is crumbly. Mix in the egg and vanilla. *Note: If you&#x27;re using a food processor you can just add everything to the food processor and pulse until crumbly. Then add in the egg and vanilla and process until combined.

Reserve 2 cups of the crust mixture and press the remaining mixture into the prepared pan.

For the crust:

Toss peaches with lemon juice and almond extract. Whisk together the sugar, cornstarch, and cinnamon. Toss to coat.

Pour peaches over the bottom crust. Sprinkle reserved dough on top of peaches.

Bake for 35-45 minutes or until topping is lightly browned. Cool completely and cut into bars.
