peppermint brownies

Topped with a layer of peppermint frosting and a layer of chocolate frosting, these dense and fudgy Mint Brownies are downright heavenly! They&#39;re easy to make from scratch with the perfect ratio of peppermint to chocolate.

Mint Brownies

butter

chocolate

brown sugar

eggs (at room temperature)

vanilla

salt

all-purpose flour

cocoa powder

milk

peppermint extract

green food coloring

Melt the butter and chopped chocolate together in a large microwave-safe bowl by heating in 30 second increments, stirring between each burst of heat, until melted and smooth.  Allow the mixture to cool slightly for 10 minutes.

Heat oven to 350 degrees.  Line a 9x13 baking pan with a parchment paper sling.  

Whisk both sugars into the cooled chocolate and butter mixture.  Add the eggs, one at a time, whisking after each addition until smooth.  Add the vanilla, then add the salt, flour, and cocoa powder at the same time and gently fold them in using a rubber spatula or wooden spoon, until no streaks of flour or cocoa powder remain.

Pour the brownie batter into the prepared baking pan and bake for 32-36 minutes, just until the brownies start to pull away from the edges of the pan and a toothpick inserted into the center of the brownies comes out with only a few moist crumbs clinging to it.  

Remove from oven and cool completely in the pan before transferring them to a baking sheet using the parchment paper sling for easy removal.  

Make the Brownies

In a medium bowl using a handheld mixer, beat the butter until smooth and creamy.  Add the salt, powdered sugar, and milk and beat for 2 minutes on low speed, then add peppermint extract and food coloring and beat on high for 1 minute.  Taste and add more peppermint extract or green food coloring, if desired.  

Frost the completely cooled brownies and transfer them to the freezer while you make the chocolate frosting to help the mint frosting "set" on top of the brownies.  

Make the Mint Frosting

In a medium bowl using a handheld mixer, beat the butter until smooth and creamy.  Add the salt, powdered sugar, cocoa powder, milk, and vanilla, then beat for 2 minutes on low speed.  Increase the speed to high and beat for 1 minute more. 

Gently spread the chocolate frosting over the chilled layer of mint frosting.  Cut into squares and serve.  

Make the Chocolate Frosting

Kofta Kebabs are a popular Middle Eastern dish made with beef, veal, lamb or combination and filled with mint, garlic and spices.  A simple weeknight meal that is deliciously exotic!

Preheat the barbecue to medium-high heat.

Place skewers in a water bath for 10 minutes to avoid skewers from burning.  This step is not necessary if using metal skewers.

Add all of the ingredients to a large bowl and mix by hand.  Form into meat balls and then roll into long skinny tubes.  Thread the skewer through the centre of each and set aside.

Grill over medium-high heat for 5 minutes per side or until the internal temperature has reached 160F.  Serve.

Layered peppermint brownies are a delicious treat with a brownie base, creamy center, and chocolate &amp; peppermint topping!

Peppermint Brownies Recipe

(18.3-ounce) box fudge brownie mix (plus the ingredeints on the back)

unsalted butter (softened, divided)

heavy whipping cream

chocolate chips

candy canes

Preheat oven to 350°F. Line a 9x13 baking pan.

Prepare brownies as directed on box. Pour into the prepared pan. Bake 20-25 minutes.

While brownies are cooling, beat powdered sugar, ½ cup butter (softened), cream, and peppermint in a large bowl. Spread evenly over cooled brownies.

Refrigerate for 30 minutes.

In a small pot melt mini chocolate chips and ½ cup butter on low heat, stirring constantly. Spread over chilled brownies.

Sprinkle with candy cane pieces and chill again for 30 - 60 minutes to help set up quicker, if desired.

Peppermint Brownies (Christmas Brownies)

butter ((2 sticks))

vanilla extract

baking powder

Tablespoons butter (, softened)

Tablespoon milk

red food coloring ((optional, to make it pink))

4-5 candy canes (, crushed)

Preheat oven to 350 degrees F. Line a 9x13 pan with parchment, or spray with nonstick cooking spray.

Melt chocolate: Roughly chop the chocolate baking squares and place them in a microwave-safe bowl. Cut the butter into tablespoon pieces and place in the bowl with the chopped baking chocolate. Melt the chocolate and butter in 30 second intervals, stirring in between, until melted and smooth. Set aside.

Wet ingredients: In another bowl, beat eggs for about 3 minutes until frothy. Add the sugar and vanilla and beat. Add melted chocolate mixture that you set aside.

Combine flour and baking powder and gently stir into the brownie batter just until combined. Pour batter into prepared 9×13 pan.

Bake for 23-27 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and cool completely before frosting.

Peppermint Frosting: Combine all frosting ingredients and beat until light and fluffy. Add a little bit more milk to thin the frosting if needed. Gently spread the frosting over the cooled brownies.

Chocolate Glaze: Place chocolate chips in a microwave-safe bowl and cook in 30 second intervals, stirring after each time, until smooth. Drizzle the chocolate over the brownies and sprinkle crushed candy canes on top.
