Persimmon Salad with shaved fennel, butter lettuce, pomegranate seeds, and a bright citrus dressing. Perfect for the holiday table! Vegan and Gluten-free.

Persimmon Salad With Citrus Dressing 

fennel bulb, thinly sliced

Fuyu persimmons, thinly sliced

¼ cup very thinly sliced red onion

oz butter lettuce

pomegranate seeds

pistachios (optional)

⅛ C crumbled goat cheese

orange- zest and its juice- about ½ C

lime – zest and its juice- about ¼ C

honey

olive oil

¼ tsp kosher salt

¼ tsp pepper

shallot very finely chopped

Persimmon Salad with Citrus Dressing 

Mix all the dressing ingredients together in a small bowl or jar. Set aside.

Toss butter lettuce, fennel and onion with some of the dressing ( you may not need all).

To platter the salad&#8211;  lay a bed of dressed greens on a platter. Scatter slices of persimmon over the dressed lettuce. Garnish with pomegranate seeds ( and pistachio and goat cheese if using), and spoon a little more dressing on the persimmons. Crack some pepper over top.

To plate the salad -layer slices of persimmon with dressed lettuce fennel mixture, top with pomegranate.

Delicious! This was my go-to lunch salad in the midst of all the holiday eating. Thank you for this!

Prosciutto Persimmons

Fuyu persimmons

salt and pepper

prosciutto (about 2 1/2 ounces), cut in half crosswise

basil leaves

provolone,

Extra-virgin olive oil, for drizzling

White balsamic vinegar, for drizzling

Trim the stem end of the persimmons, then slice each into 8 wedges. Season with salt and pepper.

Lay out a piece of prosciutto. Top with a persimmon wedge, basil leaf and piece of provolone; roll up. Repeat with the remaining ingredients. Arrange on a platter; drizzle with olive oil and vinegar and season with pepper.

Persimmon Muffins

all-purpose flour

whole-wheat flour

sugar

baking powder

baking soda

salt

ginger

cinnamon

lemon zest

eggs egg

unsalted butter, melted, or vegetable oil

yogurt

Turbinado sugar,

Preheat the oven to 350 degrees F. Line a 12-cup muffin pan or two 24-cup mini-muffin pans with paper liners. Cut the persimmons in half and scoop out the pulp into a food processor; pulse until smooth.

Combine the all-purpose flour, whole-wheat flour, granulated sugar, baking powder, baking soda, salt, ginger, cinnamon and lemon zest in a large bowl. Whisk 1 1/4 cups of the persimmon puree (or the applesauce and carrot baby food), the eggs, egg white, melted butter and yogurt in a small bowl. Add the wet ingredients to the dry ingredients and stir until just combined (it's fine if the batter is lumpy).

Divide the batter among the muffin cups, filling each three-quarters of the way. Sprinkle with turbinado sugar and bake until a toothpick comes out clean, 20 to 24 minutes for regular muffins or 14 to 18 minutes for mini muffins. Cool slightly in the pan, then transfer the muffins to a rack.

Super moist, pudding-like and buttery yummy!  Too much batter for 12 full muffins.  (More like 14).  After 24 min at 325 convection, Centers sunk upon cooling so next time I would prob bake a little longer, add more spices for extra kick and walnuts for texture. 

Very good recipe for the muffins turned out tender and delicious with great consistency!. I would 11/10 make this again. This would also be a great base recipient to try with flavorful accents - using dried cranberry slices, crystallized ginger pieces as a fantastic holiday add-in. Or generously spicing the batch and topping with roasted walnut pieces or candied pecan pieces for a excellent and very attractive holiday offering.  

Did not cook in the aloted amount of time. Normaly i bake muffins at 400 and they would be done by now. 

We didn’t have yogurt so I substituted coconut milk.  They were delicious!  

These were wonderful!  I did change it a bit, I added crystallized ginger, and walnuts, ground cloves, and used just one stick of butter.  Thank you for a lovely breakfast treat!

YUM! I didn't have ginger, so I used ground cloves instead. I also added a couple of tablespoons of bran flakes. The recipe turned out moist muffins that all the boys loved!<br />

I used cardamon and skipped on the ginger and lemon. I also used coconut milk instead of the sour cream and used 3 persimmons and I think they turned out great!
