This cake is also called “Pig Pickin’ Cake or Pig Lickin’ Cake” in the South. An easy  summertime dessert to serve family and guests.  My family loves this cake and it is one you will make over and over again.  This is a great cake to make for Mom for Mother’s Day, too.

Mandarin Orange Cake

cooking oil (I use Canola oil)

eggs

Frosting

vanilla pudding

8 ounce cans crushed pineapple, undrained

Cool

In a large mixing bowl mix all the cake ingredients listed above until well blended.  Spray 3 (9 inch) round cake pans with cooking spray. Fill each cake pan with about 2 cups of cake mix.  Bake in preheated 350 degree oven for 20 to 25 minutes checking for doneness as ovens vary.  Your layers will be thin. Remove from oven and let cool.

Combine all the frosting ingredients and mix together with a spoon.  I don’t use a mixer for the frosting.  Frost cake adding frosting between the layers.

Orange Pineapple Cake is an easy cake recipe that starts with a boxed cake mix and canned mandarin oranges. Topped with a delicious and fluffy whipped pineapple vanilla pudding frosting. So moist, light, and refreshing.

Orange Pineapple Cake

box (15.25 oz) yellow cake mix

(11 oz) mandarin oranges (do not drain)

vegetable oil or canola oil

sour cream

heavy whipping cream

sugar

(8 oz) crushed pineapple (do not drain)

box (3.4 oz) instant vanilla pudding

Heat oven to 350°. Prepare a 9x13 baking dish by spraying with cooking spray. Set aside.*If wanted, you can make this recipe in 3 (8&quot; or 9&quot;) round cake pans for a layered cake. I prefer it in the 9x13 baking dish so that&#039;s what I do. The cake is so moist that sometimes it&#039;s hard to get the layers to stay together and form. The frosting is also a looser frosting (aka - not stiff like a buttercream frosting) so it&#039;s easier to frost the 9x13 cake.

In a large bowl with a handheld mixer, or bowl of a stand mixer, combine the cake mix (do not prepare just add the dry cake mix), mandarin oranges (juice and all), oil, sour cream, and eggs. Beat together for 1-2 minutes until completely combined and oranges are broken up.

Pour into the prepared pan. Bake for 25-30 minutes or until sides start to pull away from the pan and a toothpick inserted into the middle of the cake comes out with moist crumbs only.

Let the cake cool completely before frosting.

Prepare the frosting. Add the heavy whipping cream, powdered sugar, crushed pineapple (juice and all), and instant pudding mix into a mixing bowl (or bowl of a stand mixer) and beat until stiff peaks form. This will take about 5 minutes.

Spread whipped frosting onto the cake. Cake can be served right away or for best taste/texture cover it with plastic and let the frosted cake refrigerate overnight or for 4-6 hours before serving. It&#039;s best served cold but still delicious served right away.

Preheat oven to 350°F.

In a large bowl, combine the yellow cake mix, eggs, butter, flour, vegetable oil, and drained mandarin oranges.

Pour the cake batter into a 9x13-inch baking pan, and bake for about 20 to 25 minutes. The cake may not appear done but should be brown on top. Let cool, and cover with frosting.

To make the frosting: Thoroughly combine the pineapple, instant pudding, and powdered sugar, and set aside until it begins to thicken. Mix in the whipped topping and coconut. Frosting must be refrigerated.

(20 ounce) crushed pineapple (DO NOT DRAIN)

Southern Pig Pickin Cake

box yellow cake mix

unsalted butter, softened

can mandarin oranges,

vanilla extract

can crushed pineapple, drained thoroughly

extra mandarin oranges

Preheat oven to 350 degrees Fahrenheit. Spray three 9 by 13 inch baking pans.

Mix together cake mix, butter, eggs, juice from oranges, and vanilla in a stand mixer or with an electric mixer for 3 minutes on medium speed, scraping the sides as needed.

Pour batter equally in the three prepared pans.

Bake 15-20 minutes or until golden brown and toothpick inserted in the middle comes out clean.

Cool cakes completely on a wire rack, then transfer to refrigerator until ready to frost.

Once cakes are cold, stir together whipped cream, crushed pineapple, and pudding mix until blended.

Spread one third of the frosting on first layer of cake. Top with the second layer and repeat an additional layer of frosting. Add last layer of cake and top with the remaining frosting.

Refrigerate at least 3 hours before serving. Garnish with additional slices of mandarin oranges if desired.

As a seasoned Southerner, allow ,me to tell you that this cake has become a favorite dessert or 'anytime' snack, with my family and friends. It's  very easy to make and soooo delicious! Make it,  you won't be disappointed!

I made this cake for an actual pig pickin and it was a huge hit. Now 2 weeks later....I've been invited to another one and the only thing they requested me to bring was this cake again. They said it was the best thing at the party. Thanks for sharing the recipe. It is phenomenal!!

Preheat the oven to 350 degrees Fahrenheit. Grease and flour three 8-inch round cake pans.

Make the cakes: In a large mixing bowl, combine the yellow cake mix, the entire can of mandarin oranges (including the juice), eggs, vegetable oil, and sour cream with an electric mixer until well combined. The oranges will break down into small pieces.

Divide the batter evenly between the prepared pans. Tap the pan lightly on the counter to settle the batter.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Set aside to cool.

Make the frosting: In a large bowl, whisk half of the thawed whipped topping with the dry pudding mix until smooth. Fold in the rest of the whipped topping and crushed pineapple.

When the cake layers are cool, spread a generous amount of the frosting between each layer as you stack them. Then, frost the top and sides of the assembled cake.
