Pineapple Casserole

Preheat the oven to 350 degrees F. Coat a 9 inch square pan or 2 quart baking dish with cooking spray.

Place the pineapple, 1/4 cup pineapple juice, granulated sugar, brown sugar, flour and cheese in a large bowl. Stir to combine.

Pour the pineapple mixture into the pan and spread into an even layer.

In a small bowl, mix together the crackers and butter.

Sprinkle the crackers over the pineapple mixture.

Bake for 25 to 30 minutes or until topping is golden brown. Add parsley if desired, then serve.

Pineapple Cheese Casserole

(20 oz pineapple chunks in light juice)

white sugar

cornstarch

cheddar cheese (grated by hand)

sleeve buttery round crackers (crushed)

salted butter (melted)

Preheat oven to 350 degrees.

Drain juice from the cans of pineapple into a bowl.

Reserve juice and place pineapple in a 13 x 9 inch baking dish.

In a saucepan over medium heat, mix 1 cup of the pineapple juice with sugar until it melts.

Mix cornstarch with water and add to the saucepan. Whisk until thickened.

Pour juice mixture over pineapple in the baking dish. 

Grate cheese and sprinkle 1 cup of it over pineapple.

Crush crackers by putting them in a plastic bag and hitting with the back of a spoon. Mix with melted butter and sprinkle over casserole.

Sprinkle the rest of the cheese over the cracker crumbs.

Bake casserole at 350 degrees for 30 minutes until golden brown and bubbly.

Preheat oven to 350°F and spray a square baking dish with non-stick cooking spray.

Spread drained pineapple on bottom of dish.

Mix sugar and flour and sprinkle over pineapple.

Sprinkle grated cheese over pineapple.

Melt butter and stir in crushed crackers. Sprinkle over the top.

Top with chopped pecans and bake for 20 - 25 minutes until lightly browned.

Preheat oven to 350°F.  Grease an 8x12 or medium-sized baking dish. Set aside.

In a large mixing bowl, mix together all purpose flour and sugar. 

Stir in the cheese, a little at a time. 

Drain the pineapple (save a few Tablespoons of juice) and add to the flour mixture. 

Transfer mixture to prepared casserole dish.

In a separate medium-sized mixing bowl, combine the crumbled Ritz crackers with  melted butter, and 1 Tablespoon reserved pineapple juice, stirring until evenly blended.

Sprinkle the crumb mixture on top of pineapple mixture.

Bake in 350°F oven for 25 to 30 minutes, or until light golden brown.

The creamy, fruity filling and buttery, crumbly topping compliment each other so well, and it&#x27;s a fantastic Southern side dish or dessert to serve with ham, turkey, ribs, or beef tenderloin for any holiday dinner!

Preheat the oven to 350 degrees F. Butter or spray a medium-sized casserole dish (about 9x11) with cooking spray. Drain pineapple, reserving some of the juice for the topping.

Whisk together the flour and sugar in a large bowl. Add the cheese and stir.

Add the drained pineapple, stirring until everything is evenly combined. Pour into the prepared casserole dish.

In a separate bowl, combine the crumbled crackers, 6 tablespoons of the reserved pineapple juice, and the melted butter. Sprinkle evenly over the pineapple mixture.
