Pineapple Fried Rice (Thai)

day old jasmine rice (, cooked (Note 1))

pineapple pieces (, fresh or canned drained (~ 220 grams) (Note 2))

green onion (, sliced)

oyster sauce

tbsp fish sauce

tsp sugar

tbsp soy sauce (, light or all purpose (not dark soy))

soy sauce

tbsp Thai Seasoning (Gold Mountain)

Heat oil in a wok or large non stick skillet over high heat.

Add garlic and onion, cook for 1 minute.

Add capsicum, cook for 1 minute.

Add peas, stir for 30 seconds.

Add rice and Sauce ingredients of choice. Cook, stirring constantly, for 2 minutes or until rice grains goes from being wet with sauce to sort of caramelised.

Add pineapple, stir for just 30 seconds to warm through.

Stir through green onions then serve!

Pineapple fried rice is a quick stir-fry with Thai-inspired ingredients like jasmine rice, curry, fish sauce, red bell pepper, pineapple, peas, and shrimp.

In a 3-quart sized saucepan, add rice and water. Bring to a boil and then turn down heat to a simmer and cover with a lid.

Simmer rice for 10 to 12 minutes, or until all of the water is absorbed and rice is tender.

Remove rice from the heat and allow to sit covered for 5 to 10 minutes.

Fluff rice with a fork and allow to cool while preparing the pineapple fried rice ingredients.

Cut the pineapple in half&nbsp;lengthwise and carve out wedges from both sides of the core.

Carefully cut out the core, to create a hollow bowl. Scrape the inside flesh with a spoon if needed after removing the core.

Cut the removed pineapple flesh into ½-inch pieces, reserving about 1 cup (7 ounces, 200g).

In a small bowl mix together fish sauce, soy sauce, sugar, and curry powder.

Heat a wok or large saute pan over high heat.

Add the vegetable oil, once hot add the onions, ginger, and garlic, stir-fry for 30 seconds.

Add the shrimp and cook until it turns pink in color, about 2 minutes.

Add the bell pepper and peas, cook 1 minute.

Add the rice, constantly stir to combine and cook for 2 minutes.

Add the fish sauce mixture and stir to combine.

Add the diced pineapple and green onions, stir to combine.

Season rice with black pepper as desired.

Transfer rice into pineapple bowl and garnish with cilantro leaves.

Pineapple fried rice is a simple &amp; delicious lightly spiced fried rice made with fresh pineapple.

Rinse rice very well till the water runs clear of starch. Soak rice in water for 20 mins. Drain and keep aside.

In a pot, bring to a boil 4 to 4.5 cups of water with 1/2 tsp salt and 1/2 tsp oil.

Add the soaked and drained rice to the hot water.

On a low to medium flame cook the rice without the lid.

When the rice becomes al dente or just cooked, remove the pot from fire and drain the rice.

While straining, you can also gently rinse the rice in water so that they stop cooking and don't stick to each other. You can also fluff the rice with a fork and keep aside. Cover the rice and keep aside till the rice cools completely.

When the rice is soaking, prep the other ingredients. Peel and chop the pineapple in small cubes. Also chop the other ingredients like onion, green chilies &amp; garlic.

Heat 2 tbsp oil in a kadai or wok. Add 1/3 cup finely chopped onions. Spring onions can also be used instead of onions.

On a low to medium flame, saute for a minute.

Add 1 to 2 green chilies or red chilies (chopped or sliced), ½ tsp finely chopped garlic and ½ tsp finely chopped celery (optional). Stir and saute for a few seconds.

Then add ¼ cup cashews.

Saute for 3 to 4 minutes till the cashews become a light golden or golden.

Add the pineapple cubes.

Stir and saute the pineapple cubes for 4 to 5 minutes till the moisture dries up. You can also saute the pineapple cubes till they caramelize.

Add freshly crushed black pepper. Stir very well.

Add 1 tbsp naturally fermented soy sauce. You can add soy sauce as per taste preferences. Mix well.

Add ½ tbsp red chili sauce or sriracha sauce. You can add more or less as per your taste.

Mix the sauces very well with the rest of the ingredients.

Add the cooked rice. Season with salt.

Stir gently and mix the rice very well with the rest of the ingredients. Saute for 2 to 3 minutes with occasional stirrings.

Lastly add 3 tbsp chopped coriander leaves. You can also add 2 tbsp parsley leaves instead of coriander leaves. Stir well.

Serve pineapple fried rice plain or with stir fried veggies.

Heat oil in a wok in high flame. Add garlic &amp; ginger and fry for just a few seconds. Add the Onions, scallions, and saute for 1 minute.

Tip in the Mixed vegetables one by one and  saute in high heat, tossing for a couple of minutes ( 4 minutes ), just enough to leave them crunchy.

Add Soya sauce, Curry Powder, Sriracha Sauce, Pepper and mix them well.
